Verschillende ondernemers zien weinig in een verbod op wegwerpverpakkingen. De gemeente heeft uitgezocht dat zo'n verbod op to-go-bekers en bakjes juridisch mogelijk is en wil nu kijken naar alternatieven, zoals een nieuwe statiegeldregeling. De 70-jarige Khalid verkoopt al sinds 2013 koffie en thee bij de ingang van het Vondelpark aan de Amstelveenseweg. Hij moet er niet aan denken dat er verbod komt op wegwerpbekers. "Dan heb ik geen werk meer. Dan moet ik thuisblijven." Uit onderzoek blijkt dat 30 procent van het afval dat op straat ligt, bestaat uit verpakkingen die één keer worden gebruikt. Met het verbod op wegwerpverpakkingen wil de gemeente het probleem met zwerfafval aan de voorkant aanpakken.  Fred, samen met zijn zoon eigenaar van een koffiezaak in West, maakt altijd zijn eigen stoep en een deel van de straat schoon. Hij zegt zelden wegwerpbekers tegen te komen: "Terwijl hier acht zaken zitten binnen 200 meter. Dus daar heb ik vraagtekens bij. Wat ik wel veel tegenkom, is afval van de fastfoodketens." Zoals de bakjes waarin snackbareigenaar Oscar zijn patat doet. Ook die mag hij bij een verbod op wegwerpverpakkingen niet meer gebruiken. Dat het alleen al wordt overwogen maakt Oscar een beetje boos. "Ik vind het weer een verschuiving van het probleem. Zo van 'wij hebben een probleem, en we schuiven het door naar de ondernemers'. In plaats van het probleem aan te pakken. Ze halen vuilnisbakken weg, ze klagen erover dat het zo'n rotzooi is bij de vuilnisbak, en dan kan je je afvragen of het dan realistisch is om het weer bij de ondernemer neer te leggen." In Kopenhagen loopt sinds oktober 2025 een proef met een retoursysteem voor herbruikbare to-go-verpakkingen, en in Lissabon en betalen klanten 50 cent statiegeld per beker en krijgen dat bij inlevering terug op hun pas of telefoon. Opties die ook in Amsterdam worden onderzocht. Fred heeft zo zijn twijfels over het gebruik van herbruikbare statiegeldbekers. "Dan creëer je een extra stapel bekers, die je schoon moet houden. En waar ga ik die bekers laten? Bovendien denk ik dat de gemiddelde passant die 50 cent meer wel betaald, Amsterdam is een toeristenstad, om het bekertje vervolgens gewoon weg te gooien. De Hollandse Eenheidsprijzen Maatschappij Amsterdam, de HEMA, viert binnenkort een groot jubileum. De winkel die ooit begon op de Kalverstraat blaast op 4 november 100 kaarsjes uit. "Dat kunnen niet veel mensen of bedrijven zeggen." Het waren Leo Meyer en Arthur Isaac die begin twintigste eeuw op het idee kwamen om een warenhuis te openen voor de 'gewone' mensen. Op 4 november 1926 openden de heren de eerste winkel in de Kalverstraat. Voor huishoudelijke producten betaalden klanten 'eenheidsprijzen', artikelen kostten 10, 20 of 50 cent. Kort na de opening van het eerste filiaal kwam op de Oude Hoogstraat een tweede vestiging. Die groeide uiteindelijk uit zijn voegen, waarop in 1936 op de Nieuwendijk een nieuwe winkel kwam. De omzet van de keten, die in dat jaar 22 vestigingen had door het hele land, was zo'n 12 miljoen gulden. "Het was natuurlijk wel een kleiner assortiment dan dat we nu hebben", benadrukt woordvoerder Claudia Metz. "Toen hadden we bijvoorbeeld één pan, maar dat was dan ook meteen een hele goede pan." De eerste twee vestigingen bestaan tegenwoordig niet meer, de winkel op de Nieuwendijk is nog altijd in bedrijf. De zaak, die gevestigd is in het pand waar vroeger de Winkel van Sinkel en het Belgische warenhuis Grand Bazar de la Bourse zaten, is daarmee de oudste vestiging van de keten in de stad. "Bijna de hele geschiedenis van Hema dus", legt huidig teamleider Robin Vrijhoeven uit. Oorsprong van broodje rookworst De vestiging is bovendien de plek waar het eerste broodje rookworst over de toonbank ging. "Er was een restaurant in dit filiaal en daar kon je stamppot met worst eten", vertelt Vrijhoeven. "Alleen de filiaalmanager die er toen zat had iets te veel rookworsten ingekocht. Dus hij dacht wat nu als ik ze opwarm en ze ga verkopen aan de deur." Het idee bleek een succesformule, negentig jaar na dato gaat het broodje rookworst nog altijd over de toonbank bij de winkelketen. "Op een goede zaterdag worden hier zeker honderd tot honderdvijftig worsten verkocht", lacht Vrijhoeven. De teamleider van de vestiging op de Nieuwendijk is zelf overigens geen groot fan van het cultbroodje. Naar eigen zeggen valt het soms zwaar op de maag. Breder publiek trekken De winkel van de tompoezen en sokken is een eeuw later allang niet meer alleen de zaak voor de 'gewone man', legt woordvoerder Metz uit. "Iedereen is nu klant van ons." De laatste jaren richt de winkelketen zich bovendien meer op de internationale toerist in de vestiging aan de Nieuwendijk. "We hebben nu een grote afdeling voor alles omtrent Nijntje", vertelt teamleider Vrijhoeven. "Toeristen zijn er gek op, dus die zie je hier dan ook veel." Om ook de binnenlandse toerist de winkel in te lokken heeft de compleet vernieuwde vestiging sinds gisteren ook een eigen tompouce-lounge en een groot assortiment aan Takkie en Siepie producten. Of al die artikelen gaan helpen om de winkelketen die al vaker in zwaar weer zat de volgende eeuw door ge krijgen is de grote vraag. Het personeel heeft er in ieder geval vertrouwen. Bitterballen Ingredients 1kg beef chuck 1 tsp salt, divided 1 tbsp tallow 1 brown onion 1 carrot 1 cinnamon stick 2 star anise 3 bay leaves 1 tsp whole black peppercorns 7 cloves garlic 1L beef stock 0.5 tsp grated nutmeg 1 tsp cracked black pepper 120g unsalted butter 120g flour (for roux) small handful of parsley 400g flour (for coating and dusting) 400g breadcrumbs 5 eggs, beaten tallow or oil, for frying dijon mustard to serve Method Step 1: Cook the beef Set the oven to 180ºC. Slice the beef into 4cm (1 ½ inch) cubes. Lightly season with salt on all sides. Peel the onion and slice into quarters. Slice the carrot into ½ cm thick pieces and set aside. Place a large Dutch oven on high heat and add the beef tallow. Once the tallow is hot, add the beef in a single layer and sear for 6-7 minutes or until golden brown on one side. Turn the beef to sear the other side for 2 minutes. Add the cinnamon, star anise, bay leaves, black peppercorns, garlic cloves, onion and carrot. Add the stock and bring to a simmer before fitting the Dutch oven with a lid and transferring to the preheated oven for 1 ½ - 2 hours. The beef is ready when you can easily crush the cubes against the side of the pot. If they are still tough, pop them back in the oven for a further 20-30 minutes. Once cooked, remove from the oven and rest the meat in the pot for 1 hour. Remove the beef from the pot and set aside. Pass the sauce through a sieve and weigh out 700ml of the braising liquid. Use a fork to pull the meat into fine strands. Step 2: The filling Finely slice the parsley and set aside. Clean the Dutch oven then place over a low heat. Melt the butter in the pot then whisk in the flour to cook the roux for 2-3 minutes. Gradually add the 700ml of braising liquid in 2 to 3 additions, whisking continuously until the sauce is thick and smooth. Continue to cook for an additional 4-5 minutes, then pour over the shredded beef. Add the chopped parsley, cracked pepper and nutmeg. Stir though, taste and adjust the seasoning with salt as needed. Transfer the mixture to a deep oven dish to cool down in the fridge until set. Step 3: Roll and fry Lightly flour a chopping board. Remove the set mixture from the tray and turn out onto the floured board. Slice the filling into 36 even sized cubes. Use clean hands to roll each cube into a ball. Set up three trays, one for flour, one for whisked eggs and one for breadcrumbs. Season each tray with a pinch of salt and whisk through. Roll each ball in the flour and dust off. Coat in the egg then roll each ball in the breadcrumbs. Half fill a saucepan with oil and place over a medium heat until the oil reaches 180ºC. Add the crumbed balls, 5 or 6 at a time until golden brown and hot in the centre. Drain on a paper towel and season with salt.
