Een erotische massagesalon op de Rijnstraat moet de vlaggen binnenhalen, een Surinaamse eettent aan de overkant, of die grote discountketen iets verderop in de straat niet. Het gaat om zogeheten beachvlaggen, die op de stoep worden gezet om mensen naar binnen te krijgen. Eigenlijk mogen die vlaggen er niet staan, maar het heeft volgens stadsdeel Zuid geen handhavingsprioriteit. Toch stonden die handhavers bij de 'stoute massagesalon' Paradise Touch Club voor de deur. "Ik denk dat het iets te juicy is voor de gemeente." Naast juridisch adviseur is Carlo Liefting sinds januari ook exploitant van de Paradise Touch Club, een erotische (Liefting noemt het liever 'stoute') massagesalon waar zes dames werken. "Met vergunning." Hij kon de boel overnemen, gaf er een lik verf aan, en zette twee beachvlaggen op de stoep. Net als de eettent aan de overkant, de ijssalon iets verderop, en nog iets verder die grote discountketen in het geel en rood. De Rijnstraat, en in het verlengde daarvan de Van Woustraat, staat vol met dit soort vlaggen. Maar alleen Liefting kreeg te horen dat die vlaggen weg moeten: "Die vlaggen zijn klaarblijkelijk niet toegestaan. Maar in deze straten staan er wel 25 bij andere winkels. En nu heb ik de boa's in mijn nek omdat die vlaggen weg moeten van de gemeente. Maar nergens anders wordt gehandhaafd." Er staat iemand voor een gebouw met het opschrift ‘Paradise Touch Club’. Op de stoep liggen twee zwarte vlaggen met gouden letters waarop ‘Paradise Touch Club’ staat. Het gebouw heeft grote ramen, potplanten en een donkere buitengevel. "Ik kreeg te horen dat dit soort vlaggen überhaupt niet zijn toegestaan. Het mag gewoon niet. Maar ik denk dat het ook komt door het soort bedrijf, dat het toch een beetje te juicy is voor de gemeente." Carlo kreeg van de handhavers te horen dat hij een dikke boete kan verwachten als de vlaggen niet worden verwijderd, en tekende meteen bezwaar aan. Maar dat lijkt niet meer nodig. Achter de poortjes van spoor 2 op Centraal Station zit sinds kort een wel heel bijzonder restaurant. Na drie weken van renovatie is reizend restaurant De Maaltuin neergestreken in het restaurant van de eersteklas en de daar naastgelegen voormalige eersteklas wachtruimte. Het restaurant blijft er voor twee maanden, NS zoekt nog naar een permanente opvolger. Het restaurant stond ruim een jaar leeg, nadat de vorige eigenaar het pand na faillissement moest verlaten. Die zat er al sinds eind jaren 80, maar had een behoorlijke huurachterstand. Ook was er al langere tijd discussie met de NS over de incheckpoortjes waar de gasten eerst doorheen moeten, voordat ze bij het restaurant kunnen komen. Na al die tijd kan er nu dus tóch weer gedineerd worden. De Maaltuin is een reizend restaurant dat steeds neerstrijkt op bijzondere locaties. Op basis van verhalen over de steeds veranderende plek wordt een 5 gangenmenu georganiseerd. Kaartjes voor de beleving zijn wel flink aan de prijs; maar liefst 135,95 euro per persoon. Hoewel leuk voor tijdelijk, zoekt het station voor de langere termijn een andere invulling van de locatie. "Het restaurant waar we uiteindelijk naar op zoek zijn, moet er een restaurant van maken dat voor een breed publiek toegankelijk is", vertelt stationsmanager René Wubs. "Het is niet de bedoeling dat dit een sterrenrestaurant gaat worden." Voordat er bij spoor 2 überhaupt weer een restaurant geopend kon worden, moest er nog wel flink geklust worden aan de ruimtes. "We hebben in deze ruimte heel veel restauraties moeten doen. We zien muurschilderingen die door Georg Sturm zijn ontworpen", vertelt Wubs. "Dat was de schilder waar Cuyper het meest mee samenwerkte." Hij doelt daarmee op architect Pierre Cuypers, die de zowel het restaurant en de wachtkamer als de rest van het Centraal Station ontwierp. "Je ziet hier allemaal bladmotieven, alsof je in de natuur zit. Het blijkt uiterst lastig om minder vlees te gaan eten: veel mensen vinden vlees gewoon lekker en de mondiale vraag ernaar neemt nog steeds toe. Dat was voor ondernemer en kweekvleespionier Willem van Eelen de reden om ‘in vitro vlees’ te bedenken. Na zijn overlijden kreeg dochter Ira vorig jaar een telefoontje uit Silicon Valley. CEO Josh Tetrick van het jonge bedrijf Just nodigde haar uit om kweekvlees te komen eten in de keuken van hun laboratorium in San Francisco. Het bedrijf kocht de patenten van haar vader en staat nu in de startblokken om daadwerkelijk kweekvlees te gaan produceren en verkopen. Maar het Ministerie van Volksgezondheid, Welzijn en Sport beschouwt kweekvlees als een zogenoemd ‘novelfood’ en vertraagt hiermee de introductie van kweekvlees. Met deze weerstand wordt het veranderen van onze mondiale vleesproductie- en consumptie een race tegen de klimaatklok. Daar staat tegenover dat vlees uit opgekweekte stamcellen ultiem duurzaam is, en dat er voor de productie minder grond, water en energie nodig is. Truth be told this recipe isn't quite right yet. If you smoke the beef shin all the way from the start to the end, I think the meat generally is too dry by the time you've broken down all the connective tissue.This method of smoking until it reaches an internal temperature of 90°C, and then finishing by cooking it in beef tallow is the winner. I haven't quite figured out the ideal amount of time and temperature in the beef fat. 24 hours at 80° just feels like too much of an ask for most home cooks. We did this one at 95°C for about 12 hours and while it came away nicely, truth be told, it was still a little bit too dry for my liking. Back to the drawing board. As soon as we nail it we'll let you know and share the recipe.

But from the start, there has been tension between democracy as the will of the majority, and liberalism as the protection of minority rights and free speech. Now we are seeing the rise of so-called 'illiberal democracies', sceptical of checks on executive power and liberal institutions. Illiberal democracies are now the most common form of government, according to The Economist. Victor Orbán, the former President of Hungary, listed his own country along with Singapore, Russia, Turkey and China among them, with 3% higher growth on average over the last 30 years than the liberal democracies of the West. Does illiberal democracy threaten the rise of autocratic or even fascist regimes? Is democracy meaningless if government constrains freedom of speech or seeks to influence the media and the judiciary?
