Chicken Adobo Pie Ingredients 6 chicken thigh fillets 2 tbsp peanut oil Sea salt, to season 20 black peppercorns 1 head garlic 2 star anise 3 bay leaves 100ml (3.5 fl oz) coconut vinegar 80ml (2.7 fl oz)) Filipino soy sauce 1 tbsp cornflour (cornstarch) 2 cups cooked rice 2 hard boiled eggs 375g shortcrust pastry 375g puff pastry 1 egg, beaten Method Step 1: Trim the chicken thighs and chop into bite-sized pieces. Heat the oil in a large heavy-based frying pan or saucepan over medium heat. Add the chicken, season with salt and the peppercorns and cook for 5-6 minutes, until starting to brown. Peel and finely chop the garlic, then add to the pan with the star anise and bay leaves. Pour in the vinegar and allow to simmer until reduced by half. Add the soy sauce and bring to a simmer. Make a slurry with the cornflour and 20ml water. Add to the pan and stir through. Simmer for 5 minutes until the sauce thickens slightly. Transfer the mixture to a tray to allow to cool, then add the rice to the pan and stir and scrape through the fond on the base of the pan. Set aside. Step 2: Assemble the pies Preheat the oven to 180°C fan forced (355°F). Lightly grease 4 x 200ml capacity (12cm/4.7in) individual pie tins. Cut 4 circles from the shortcrust pastry large enough to line the base of your tins and come up the sides. Press the pastry into the shells and over the edges, then prick the base with a fork. Spoon the rice into the bases. Peel and halve the eggs and nestle a half in the center of the rice. Top with the cooled Adobo filling. Cut 4 circles from the puff pastry large enough to cover the mounded filling (about 13cm). Lightly beat the egg in a small bowl, then brush around the pastry edges. Cover the pie with a pastry top and press the edges together to enclose and crimp them sealed. Carve a curved pattern in the top, without cutting through the pastry, and make a steam hole in the centre on top. Brush with the egg wash and season generously with cracked black pepper. Place the pies on a tray and bake for 35-40 minutes, until dark golden and puffed. Set aside to cool for at least 5 minutes before enjoying

Nog een paar nachten slapen en dan is het zover: Koningsdag. Voor veel Amsterdammers een feest om naar uit te kijken, al houden anderen hun hart vast. Honderdduizenden bezoekers trekken naar de stad. In de Jordaan zijn de meningen verdeeld over de aankomende Koningsdag. De gemeente heeft meerdere nieuwe maatregelen genomen rondom Koningsdag. Zo wordt de handhaving van illegale alcoholverkoop aangescherpt. Ook worden illegale (straat)feesten niet meer gedoogd. De gemeente hoopt hierdoor het 'alles-kan-en-alles-mag-imago' te doorbreken. Het is zelfs zo druk de afgelopen jaren dat tante Corrie, groot fan van Koningsdag, haar café sluit. "We vinden het eigenlijk gewoon te druk", zegt de eigenaar van café Sonneveld. "Mijn hart huilt. Ik vind het verschrikkelijk", zegt ze over de situatie. Sceptisch Buurtbewoner Lia Vonk denkt dat de extra maatregelen niet heel veel gaan veranderen, alhoewel ze het natuurlijk wel hoopt. Ze woont in een van de straten die worden ondergeplast. "Eerlijk gezegd probeer ik Koningsdag altijd te vermijden", vertelt ze in de deuropening. "Je kan natuurlijk niet achter elke feestvierder een agent plaatsen", zegt ze iets later. En natuurlijk snapt ze dat een feestje erbij hoort, maar volgens haar gaat dat dan zesendertig uur lang door. "Ik ben natuurlijk een dame van een zekere leeftijd, er komt een moment dat ik wil gaan slapen", concludeert ze. Excessen Jort Vos, een van de eigenaren van de Blaffende Vis, is eigenlijk wel te spreken over de extra maatregelen. "Ik denk dat het wel moeilijk te handhaven is. Ik denk dat ze een poging wagen", vertelt de café-eigenaar. Elk jaar is het bij zijn café, de Blaffende Vis, enorm druk. "Ik denk dat het vooral gaat om excessen. Kijk, als mensen een gezellig muziekje op hebben, zul je mij niet horen. Hetzelfde geldt dat voor een sixpackje, helemaal prima", vertelt hij. " Maar dan grote jongens die er echt een slaatje uit proberen te slaan en die verder niks toevoegen. Als zij worden aangepakt, dan ben ik allang blij", vertelt hij. Beveiliger tante Corrie Maar niet iedereen vindt het te druk in de Jordaan. Een buurtbewoner van de Westerstraat vindt het allemaal een beetje onzin. "Het is twee dagen in het jaar. Ik woon hier al zesendertig jaar en heb nog nooit een onveilige situatie gezien", vertelt hij. Maar mocht het dan toch onverhoopt gevaarlijk worden, dan zal tante Corrie er hoogstpersoonlijk op toezien dat het allemaal goed verloopt. "Ik ben niet bang, ik zet die pet wel op mijn kop", zegt ze lachend. Door emotionele onrust, door angst of door psychische problemen. “Ik zou heel graag terug naar een gewone school kunnen gaan. Gewoon om terug een beetje ‘normaler’ te kunnen zijn,” getuigt Nikolas. Het gevoel van machteloosheid groeit. Ook bij ouders. Die komen onder zware druk te staan, zowel emotioneel als financieel. Intussen groeien kinderen op zonder onderwijs. “Elk kind heeft recht op onderwijs,” zegt Elles mama. “Maar in de praktijk lijkt het alsof elk kind alleen recht heeft op een stoel in een klas. En veel van die stoelen blijven leeg.” Het onderzoeksmagazine Pano van VRT NWS probeert deze complexe problematiek in kaart te brengen. Uit een eigen bevraging bij 500 Vlaamse scholen blijkt dat de helft van de scholen de afgelopen vijf jaar een stijging ziet in het aantal leerlingen dat uitvalt. In het secundair onderwijs loopt dat cijfer zelfs op tot zeven op de tien scholen. In het ziekenhuis besloten Will en Hugo het roer om te gooien: van kantoor naar muziekstudio's. Nadat muziekvrienden Hugo en Will tegelijkertijd in het ziekenhuis belandden - de een voor een hartoperatie, de ander omdat hij van vijf hoog naar beneden viel - zeiden ze gelijk hun kantoorbaan op. Door die problemen met hun gezondheid kwamen ze erachter wat ze echt wilden: muziek maken. Daarom gaan zij nu vijftien betaalbare muziekstudio's bouwen in het Amstelkwartier. Zowel Hugo als Will zeggen dat ze hun ongeluk niet hadden willen missen. "Als het ons daardoor hier heeft gebracht, vond ik het de 'health scare' waard", vertelt Hugo. En hier is een nu nog leeg pand in Overamstel. Op deze plek bouwen de vrienden vanaf mei vijftien betaalbare muziekstudio's, waarvan een gratis voor studenten. Vijf jaar geleden moest Hugo een hartoperatie ondergaan. Rond diezelfde tijd kwam Will neer op de stoep, na een val vanaf de vijfde verdieping van een grachtenpand. "Ik ben op de een of andere manier redelijk goed geland. Maar daarna had ik een behoorlijk zware periode van herstel. Ik zat ongeveer een jaar in een rolstoel. Het duurde een hele tijd voordat mijn lichaam weer hersteld was. En toen begon alles weer een beetje terug te komen, dankzij veel doorzettingsvermogen en fysiotherapie." Toen besloten ze allebei hun 'saaie maar comfortabele' kantoorbaan op te zeggen. Steeds minder Will en Hugo maken vanaf jonge leeftijd muziek, maar een plek vinden waar ze kunnen spelen zonder hun buren te storen, was moeilijk te vinden. "Het was behoorlijk frustrerend", vertelt Will "Ik wilde een muziekstudio huren en na wat belletjes kreeg ik steeds hetzelfde te horen: we zitten vol. En de wachtlijst trouwens ook." De laatste jaren sloten achttien muziekstudio's hun deuren, onder meer in de Banne en in het Hamerkwartier in Noord. De gemeente Amsterdam herkent het probleem van een tekort aan betaalbare muziekstudio’s in de stad. "Vooral betaalbare ruimtes voor grotere samenstellingen, zoals bands en zangkoren, zijn schaars.
