Na ruim vijf jaar is de restauratie van het aquarium in Artis bijna afgerond. De aquaria worden langzaam maar zeker gevuld met vissen. Ook deze week kwam er weer een grote lading van nieuwe vissen vanuit een dierentuin in Emmen. Via een speciaal dierentransport werden de gevlekte haai, krabben en zeesterren hun nieuwe verblijf binnengebracht. Vol spanning staat Alex Huiberse te wachten bij de poort van Artis. Er komt weer een bus vol met vissen voor in het gloednieuwe aquarium. Alex is de curator en bepaalt dus welke vissen waar komen. Het komt nauwelijks voor dat je als aquariaan carte blanche krijgt om een nieuw aquarium te ontwerpen. Het monumentale aquarium komt uit 1882 en is het oudste nog functionerende aquarium ter wereld. De renovatie was nodig omdat de oude betonnen aquaria in de grote hal lekten vanwege het zoute water. Het heeft wat mogen kosten: bijna 50 miljoen euro, de grootste en duurste renovatie in de geschiedenis van Artis. Huiberse begint samen met drie andere medewerkers snel de tonnen met vissen uit het busje te laden. Deze specifieke lading komt uit Emmen, ze zaten in het aquarium van dierentuin Wildlands. De kleinere vissen zitten in tonnen, de grote gevlekte haai – ongeveer een meter lang en daarmee een van de grootste dieren in het aquarium – zit in een grote kuip. In deze kuip moet de haai drie weken in quarantaine - Foto: AT5 Van de autoreis hebben de vissen weinig door, zegt Huiberse. "Het is een vrij grote kuip met veel water. Het is er ook donker en dat geeft rust. De haai zwemt rondjes, zoals normaal." Sommigen mogen niet direct de aquaria in, maar moeten eerst in quarantaine vanwege mogelijk virussen. De gevlekte gladde haai moet drie weken in quarantaine en kan dan ook even ontprikkelen van de verhuizing, stelt Huiberse. Daarna mag de haai naar zijn vaste verblijf in de grote hal van het aquarium. De komende weken worden de aquaria steeds verder gevuld met vissen en planten. Chile Colorado Ingredients Chilli sauce 3 ancho chillies 2 pasilla chillies 3 guajillo chillies 800ml water ½ brown onion 3 garlic cloves 2 tsp Mexican oregano 1kg (2.2 lbs) beef chuck Sea salt 2 tbsp lard or beef tallow 2 fresh bay leaves Thinly sliced radish, coriander leaves, toasted corn tortillas, to serve Mexican rice 30g butter 3 cloves garlic, finely grated 200g (1 cup) longrain rice 1 tbsp tomato paste (tomato puree) 440ml chicken stock Method Step 1: Prep the chilli sauce Remove the stems and deseed the chillies (reserving the seeds if you want some extra heat). Heat a saucepan over medium-high heat and add the chillies. Dry fry them for 1-2 minutes, until they start to soften and become aromatic. Pour in the water and add the onion, garlic and Mexican oregano. Bring to a simmer and cook for 10 minutes. Remove from the heat and transfer to a blender. Process until smooth, adjusting the heat with reserved seeds if you like. Step 2: Brown the beef Trim any excess fat from the beef (reserve this to render down and make your lard if you like). Cut the beef into 5cm x 5cm (2in x 2in) chunks. Heat the lard or tallow in a large heavy-based saucepan or Dutch oven over medium-high heat. Season the beef with salt and cook, in batches for 8-10 minutes, turning, until well browned all over. Step 3: Slow cook the beef Return all the beef to the pan then pour in the chilli sauce. Add the bay leaves, season with some salt and bring to a simmer. Reduce the heat to low, cover and cook for 4 - 4 ½ hours (start checking after 3 hours), until fork tender. Step 4: Cook the rice Melt the butter in a medium saucepan over medium heat. Add the garlic and cook for 2 minutes, stirring, until fragrant. Add the rice and toast for 1 minute, stirring to coat in the butter. Stir through the tomato paste until incorporated, then pour in the stock. Mix well and bring to a simmer. Reduce the heat to low, cover and cook for 10-12 minutes, until rice is fully cooked. Serve the beef with its sauce, with some rice on the side and radish, coriander and tortillas to serve. #cooking #recipe #food #beef

Omdat de Amsterdamse politiek lastig in elkaar zit en stemmen in het land van herkomst vaak gevaarlijk of onmogelijk was, ziet de organisatie dat minder mensen met een vluchtelingenverleden gaan stemmen. In buurtcentrum Boost in Oost is projectleider Milena Mulders donderdagmiddag druk bezig met het voorbereiden van de zaal waar straks de presentatie plaatsvindt. Op verschillende ronde tafeltjes legt ze rode potloodjes, stembiljetten en informatiefolders neer. Ze verwacht zo'n vijftig mensen op de eerste verkiezingsbijeenkomst voor nieuwkomers, die onderdeel is van de campagne Stem voor Amsterdam. Het zijn er uiteindelijk wat minder. Iets meer dan een handjevol geïnteresseerden meldt zich voor de presentatie die ongeveer anderhalf uur duurt. Gevaarlijk De reden dat er wat minder mensen zijn dan verwacht, kan enerzijds te maken hebben met de ramadan. Maar ook omdat veel mensen een moeilijke relatie hebben met stemmen, vertelt Mulders. "Sommige mensen komen uit landen, waar verkiezingen niet vrij waren. Zelfs gevaarlijk. Dus mensen hebben angstgevoelens als het gaat om verkiezingen. Daarom is het belangrijk om uit te leggen dat het hier anders gaat." Dat herkent Abdul Rahman uit Jemen. Hij heeft daar nog nooit gestemd. Dat was niet veilig, zegt hij. For more than two decades, Bob Crawford has toured the country as the bassist for the Avett Brothers. But long before he began his career as a musician, he was obsessed with American history. In de Herculesstraat in Zuid is vannacht na een zware explosie brand uitgebroken. Zeven bewoners moesten voor controle naar het ziekenhuis. Vier woningen zijn onbewoonbaar verklaard. De politie onderzoekt nog wat de precieze oorzaak is, maar gaat uit van een misdrijf. Het incident gebeurde rond 2.00 uur vannacht. De knal was zo hard dat ook bewoners aan de uiteindes in de straat wakker werden van de impact, zegt een woordvoerder van de brandweer. 'Chaotische situatie' Toegesnelde agenten troffen een 'chaotische situatie' aan, meldt een politiewoordvoerder. Met een in brand staande en deels ingestorte portiek. "De portiek van meerdere woningen stond in brand waardoor mensen hun huis niet konden verlaten." De brand werd uiteindelijk door de brandweer geblust. "Dit had echt veel slechter kunnen aflopen", aldus de woordvoerder. Een aantal bewoners - onder wie meerdere kinderen - is door de politieagenten aan de achterzijde van het pand geëvacueerd. De ladder die de politie daarbij gebruikte, was van een omwonende geleend. Alle bewoners van het pand moesten van de brandweer naar buiten. Vier woningen zijn onbewoonbaar verklaard. Vermoedelijk misdrijf De politie gaat er op dit moment van uit dat de explosie door een misdrijf tot stand is gekomen. Volgens de politie zagen getuigen twee jongens wegrennen in de richting van de Marathonweg In totaal zijn er dus zeven bewoners naar het ziekenhuis gebracht omdat ze rook hadden ingeademd. Het gaat onder meer om een gezin met kinderen. Er zijn ook twee katten uit woningen gered. Met het organiseren van de Warmoes Biënnale, een kunsttentoonstelling verdeeld over 19 plekken in het Wallengebied, wil organisator Bonne Reijn de bijzondere kanten van zijn buurt belichten. De komende maanden kun je op de meest verrassende plekken naar kunstwerken kijken, zoals bij café Old Sailer, de Febo en de fetisjshop. Het is nog even spannend of het allemaal lukt om de kunstwerken op tijd op de juiste plaats krijgen. Bij de Oude Kerk legt kunstenaar Tild Greene nog de laatste hand aan haar kunstwerk, in de festisjshop is alles al in kannen en kruiken, en ook het keramieken onderwaterwerk hangt al in het café Old Sailor. De Warmoes Biënnale is een project van Bonne Reijn, waar hij samen met Justus Cohen Tervaert ruim drie jaar aan werkte. Ze vroegen 19 kunstenaars om een werk te maken en koppelden hen aan een opvallende plek in hun buurt. Zo is er vanaf zaterdag kunst te zien bij Patta, de Febo en het Leger Des Heils. Bij die laatst is majoor Bob heel blij met het initiatief. "Door het kunstwerk hangt Majoor Boszhard er even niet, maar ze komt over twee maanden weer terug. Ze kijkt toe vanuit de hemel." De Warmoesstraat is een buurt waar volgens Reijn ‘een hoop mensen een mening over hebben’. Hij vindt het een belediging als anderen zeggen dat ze nog niet dood gevonden willen worden in het centrum. "Ik wil de Amsterdammer laten zien: ga wel deze buurt in, want er zijn zoveel mooie plekken." Voor de biënnale werkt hij samen met vooral jonge kunstenaars uit de stad. Morgen begint het festival, met een processie van de Nieuwmarkt naar de Warmoesstraat onder leiding van kunstenaar Jan Hoek. Naast de plekken waar je kunt kijken is er nog veel meer te doen. Er zijn 'artist talks' bij San Francisco Bar, met aansluitend livemuziek. Op de intensive care van het Erasmus Medisch Centrum, onder leiding van Diederik Gommers, heerst al jaren een vertrouwenscrisis tussen een deel van de medewerkers en de leiding van de afdeling. Documenten laten zien dat meerdere IC-medewerkers de afgelopen vijf jaar hun zorgen met de ombudsman van het ziekenhuis en de raad van bestuur deelden. Ze spreken van een verziekte werkcultuur en vrezen voor de effecten daarvan op de patiëntenzorg. Dit blijkt uit onderzoek van de NOS en Nieuwsuur, op basis van honderden interne mails en documenten, een melding van een klokkenluider en meldingen bij de Inspectie. Voor het onderzoek spraken we 21 huidige en vijf voormalige medewerkers van de afdeling.
