In this interview, I’m joined by Nova Cadamatre MW to explore the evolution of the Finger Lakes as a wine region — from its importance before Prohibition to its modern identity as one of the world’s leading cool-climate regions. We discuss the Finger Lakes’ early role as the “Champagne of the United States,” driven by native grape varieties and large sparkling wine houses, and how Prohibition disrupted the region far more severely than California. Nova explains why the industry took longer to recover in New York, and how pivotal moments shaped its rebirth. A major focus is the arrival of Dr. Konstantin Frank in the 1960s and 70s, whose insistence that Vitis vinifera could be grown successfully in the Finger Lakes transformed the region’s future. We also cover the impact of the New York State Farm Winery Act, which allowed growers to become winemakers and fundamentally changed the structure of the region. We then move into the modern era, looking at Cornell’s viticulture and enology programme, the relationship between Cornell and UC Davis in grape research, and how trained winemakers helped elevate the Finger Lakes’ global reputation. Finally, we examine the geography and climate that make the region possible — including the crucial role of Seneca, Keuka, and the Finger Lakes themselves, as well as the wider influence of Lake Ontario and Lake Erie on frost risk, snowfall, and growing conditions. This is a deep dive into why the Finger Lakes matter — historically, scientifically, and culturally — and why they deserve their place in the global wine conversation.

Southern Style Black Eyed Peas Ingredients 300g (1½ cups) black eye peas 1 tbsp olive oil 200g smoked bacon (beef bacon), diced 1 smoked chorizo sausage (or kielbasa), diced 1 red capsicum (bell pepper), diced 1 green capsicum (bell pepper), diced 1 celery stick, diced 2 spring onions, sliced, white and green parts separated 1 brown onion, diced 5 cloves garlic, diced 3 fresh bay leaves 1 tsp dried oregano 1½ tsp smoked paprika 1 tsp cayenne pepper 1 tsp garlic powder 1 tsp onion powder 1 L chicken stock ⅓ cup flat leaf parsley, finely chopped Method Step 1: Soak the peas Rinse the black eye peas under cold water and discard any broken ones. Place the peas in a large container and cover with plenty of water. Cover and set aside to soak for 3-4 hours, but ideally overnight. Step 2: Cook the base Dice the bacon, chorizo, capsicums, celery, brown onion and garlic. Slice the spring onions and separate the green and white parts. Heat the oil in a large heavy based saucepan over medium high heat. Cook the bacon for 2-3 minutes, until the fat has rendered and it starts to brown. Add the sausage and cook, stirring occasionally, for a further few minutes. Add the capsicums, celery, brown onion, garlic and spring onion whites to the pan. Cook for 8-10 minutes until starting to soften, stirring often. Add the bay leaves, dried oregano, smoked paprika, cayenne, garlic powder and onion powder. Stir well to combine and cook until the spices are fragrant. Mix in the drained peas and the stock. Bring to a simmer, then cover with a lid and reduce the heat to medium low. Simmer for 15 minutes, then uncover and cook for a further 10 minutes. Step 3: Finish and serve Turn the heat off and remove the bay leaves. Using a stick blender(immersion blender), pulse the soup a little to puree one third of the beans. Stir through the spring onion greens and fresh parsley, and serve! #cooking #recipe

This short film "Comes the Revolution" dates to 1941. Here, an Eastern European immigrant and soapbox rabble-rouser (Willie Howard) contends with an unruly audience of one (Al Kelly). In a faux accent, Willie exhorts "the workers" to "throw off the yoke of oppression" while his heckler interrupts him. It's essentially a brief vaudeville routine captured for posterity. The star of this was "Borscht-Belt" actor Willie Howard, a noted "dialect" comic whose accent would have been familiar to a generation of Americans who came from Poland, Germany, Russia or Eastern Europe. In short, the routine was targeted primarily at urban Jewish audiences. Howard was fairly well known in Hollywood, appearing in The Smart Way (1937), How to Go to a French Restaurant (1941) and Playboy Number One (1937). At 2:32 one of the photos is unloaded and set up on stage. At 4:09, what appears to be a performance of the play Julius Caesar culminates in the Ides of March. At 5:03, a group of acoustic guitarists entertains a small audience. At 5:55, a Black Pride group plays drums and performs dances on the stage. At 6:27, the stage is seen in full -- the photographs seen earlier are now gone. The dancing continues, as well as some on-stage gymnastics. At 6:57, a brief shot of a VU meter recording the music. In this video, I’m in a traditional ageing cellar in Montalcino, visiting Fattoi to look at how Brunello di Montalcino is matured before release. You’ll see the large oak casks known as botti, often made from Slavonian oak from Croatia. These are used to gently age Brunello without overwhelming the wine with oak flavour, allowing the character of Sangiovese to remain at the forefront. I explain why some producers prefer large-format casks over small barrels, how surface area affects flavour impact, and how this careful, controlled approach fits within the mandated ageing rules of Brunello di Montalcino.
