The film shows the newsroom, and how news stories were reported via wire telegraph, cable and radio. Here, the drama of reporting on the grounding of the liner SS Morro Castle serves a fodder. The film also discusses the International News Service (INS) a newswire formed by Hearst Communications in 1909. In this era, Hearst was beginning to distribute films under the newly formed MGM and Hearst/MGM would co-produce Hearst Metrotone Newsreels. The Sun-Telegraph ceased operations in 1960 when it was purchased by the rival Post-Gazette. 00:00 Film opens on the street corner with a paper boy (:10). The title screen follows (:14). The Pittsburgh Sun Telegraph (:22) was an evening paper established in 1927. Continental maps (1:09) note locations Hearst served. This system, built by Western Electric and Bell System units, stretches from Alaska across Canada to Baffin Bay. Establishing bases in the Arctic required aircraft to supply and maintain personnel initially. Early camps were supplied by air until larger equipment and facilities could be established. USAF C-124 Globe Masters delivered heavy equipment for constructing permanent airfields. A sea lift was prepared to transport materials. Landing craft delivered materials to Arctic shores for DEW line construction. The Mackenzie River used to transport materials. Additional transportation routes were established, including a land cargo train called "The Monster." Road construction faced challenges from thawing ground. Building modules were assembled in tents and transported to sites on sleds. Pilings were set in the frozen tundra for building foundations. Bulk fuel storage tanks were built during summer months. Construction camps were well-established, with supplies sorted and stored for winter. French Onion Soup French Dip Ingredients 1kg brown onions, thinly sliced 25ml olive oil 50g unsalted butter sea salt, to season 50ml brandy 1 tbsp plain flour 2 bay leaves 6 dashes Worcestershire sauce 4 dashes Maggi seasoning 500ml (2 cups) beef stock 2 baguettes 150g Gruyère cheese, grated 30g beef tallow 800g ribeye off the bone (or sirloin or rump), thinly sliced 150g Swiss cheese slices Method Step 1: Make the soup Place the butter and the oil in a large saucepan over medium-high heat. When the butter is melted, add the onions and season with a pinch of salt. Stir well and reduce the heat to medium. Cook the onions for 15 minutes, stirring often, until a deep golden colour. Pour in the brandy and cook for 1 minute, to cook off the alcohol. Sprinkle over the flour and stir through, then add the bay leaves, Worcestershire and Maggi seasoning. Pour in the stock and bring to a simmer. Cook for 10 minutes, then remove from the heat. Step 2: Divide soup and baguette Pass the soup through a sieve and set the onions aside (for the sandwich), remove the bay leaves. Preheat the oven to 220°C (430°F). Ladle the soup into 4 oven-proof bowls. Sprinkle the soups with the gruyere cheese and place on an oven tray. Place the soups in the oven for 2-3 minutes, until the cheese has melted and is bubbling. Slice the baguette into 4 and halve horizontally without slicing the whole way through. Step 3: Cook beef and assemble Heat the tallow on a cast iron flat plate over high heat. Place 1 portion of the beef on the plate and season with some salt. Cook the beef for 1-2 minutes, turning to brown on both sides. Push the beef into a mound the length and width of a baguette portion opened up. Top with ¼ of the onions then ¼ of the cheese slices. Place the baguette, cut side open, down on top of the cheese. Using 2 metal spatulas or bench scrapers, lift under the beef invert baguette into your hand then straight onto a serving plate and press to close. Repeat with the remaining beef and baguette. Serve the baguettes with the soup and dip the sandwich into the soup and enjoy! Recipe notes Recipe origins and authenticity: Origins of the French dip sandwich are debated, none of which hail from France, but in fact Los Angeles. One story has the roll accidentally falling in beef drippings, whilst the other was dipping the bread in jus for a customer needing softer bread. Either way…our version is a step up from the original by incorporating the classic French onion soup for the grilled beef sandwich to be dipped into. Cook support: You can grill the beef on a BBQ flat plate if you don’t have a cast iron pan for the stovetop. Leftover Ham & Cheese Christmas Pie Ingredients 2 sheets frozen shortcrust pastry, thawed 1 tbsp olive oil 30g butter 1 leek, chopped sea salt and freshly cracked white pepper, to season 300g leg ham, diced 4 sprigs thyme, leaves chopped 30g leftover quince/fruit paste or ham glaze 150g leftover cheese (swiss, brie, cheddar), chopped or grated freshly grated nutmeg 4 eggs 250ml (1 cup) cream Method Step 1: Make the pastry shell Preheat the oven to 180°C fan forced (355°F). Lightly grease a 30cm (12in) fluted tart tin with a removable base. Halve 1 of the pastry sheets and join the 2 halves onto the top and one side of the other sheet to make a larger square. Lay the pastry over the tin, pressing it firmly into the edges. Trim the excess pastry, leaving a slight overhang around the edges.Prick the base of the pastry with a fork to prevent it from puffing up. Line the pastry with baking paper and fill it with pie weights or dried beans. Blind bake the pastry for 25 minutes. Remove the pie weights and baking paper, then bake for an additional 8–10 minutes, or until the pastry is lightly golden. Set the shell aside to cool for 20 minutes. Step 2: Cook the base Heat the oil in a deep frying pan over medium heat and add the butter. Add the leek, season with salt and white pepper and cook for 4-5 minutes, stirring occasionally, until softened. Stir in the ham, half of the thyme and the quince/fruit paste and cook for another 2-3 minutes, stirring to combine. Remove from the heat. Step 3: Fill the pie Whisk together the eggs, cream and nutmeg until well combined. Spoon the ham filling into the pie shell and spread to an even layer. Sprinkle over the cheese, reserving some grated for the top, then pour over the egg mixture. Sprinkle over the remaining cheese and thyme. Step 4: Bake Place the pie on a tray and bake for 35-40 minutes, until cooked and golden. Place the pie on a wire rack for 15-20 minutes, until cool enough to remove from the pie tin. Slice into portions and serve! Recipe notes Recipe origins and authenticity: This pie is inspired by the classic quiche Lorraine, but with some obvious twists and tweaks on technique, combined with the common ingredients leftover from Christmas Day…and you have Leftover Christmas Pie! Cook support: You can purchase cooked shortcrust pastry shells from major supermarkets or quality grocers, or you can make one yourself reasonably quickly. Substitutions: The beauty of this recipe is you can use whatever cheeses you have leftover from the Christmas cheese plate, and this will also work with red onion, brown onion or shallots if you don’t have a leek on hand. Storage: Refrigerate any pie leftovers in an airtight container for up to 5 days, and reheat in the oven for the pastry to go crisp again. Serving ideas: This pie pairs well with a simple green salad or just on its own. #recipe #Christmas #pie
