Allegro vivo A NOTE FROM THE PERFORMER As for many Spanish composers of his generation, Paris represented a decisive crossroads for Joaquín Turina, first for his education and later for the beginning of his musical career. The fascination of the French intellectual world with Spanish culture, from Manet to Debussy and Ravel, provided the ideal backdrop for the wave of Spanish music that spread through Paris in the early twentieth century. Starting in 1920, with the publication of Manuel de Falla's "Homenaje pour le Tombeau de Debussy", the guitar began to identify itself more and more with this new "Spanish-French" musical language. It is no coincidence that on April 7th, 1924, at his recital at the Salle du Conservatoire, Segovia chose to play in the central part of the program works composed by de Falla, Moreno Torroba, and Turina in the early Twenties. Among these authors, Turina is undoubtedly the one in whom the dialogue between Spain and France takes on the most distinctive features. Especially in the 1931 "Sonata", it seems like his two expressive worlds - the Andalusian musical tradition and Parisian impressionism - repeatedly approach, juxtapose, and touch each other, in a fast succession of gestures and musical archetypes that constantly dialogue without ever merging. In this recording, I chose to emphasize, with every resource available on the guitar, the contrast between the two "duendes" that animate this masterpiece of our repertoire, rather than chasing a synthesis that, in my opinion, remains distant from the musical text. Finally, I decided to alternate the performance footage with images of an etching by Anselmo Bucci, an Italian artist who lived in Paris at the same time as Turina, depicting Place Blanche in Montmartre. Beef Kushiyaki Ingredients 750g beef fillet, silverskin trimmed, 3cm dice 110g (½ cup) caster sugar 160ml (⅔ cup) soy sauce 40ml (2 tbsp) sake thumb sized piece fresh ginger, grated 2 cloves garlic, crushed zest and juice of 1 lemon 20ml (1tbsp) oyster sauce 4 green onions, sliced 3cm lengths steamed short grain rice, pickled baby cucumbers, finely shredded wombok, to serve toasted sesame seeds, to garnish Method Step 1: Prep the beef Place the beef in a large bowl. Mix the sugar, soy, sake, ginger, garlic, lemon zest and juice and oyster sauce in a bowl and stir until well combined. Stir the marinade through the beef to evenly coat, then set aside for at least 30 minutes, or refrigerate for up to 2 hours. Step 2: Prep the skewers Thread 3 pieces of meat onto pairs of skewers, spaced 2cm apart, finishing with 2 pieces of green onion on the end. Repeat with the remaining meat and onions. Pour the remaining marinade through a sieve into a medium saucepan. Place over a medium heat and bring to a boil. Reduce the heat and simmer until reduced by one third and thickens slightly to make a glaze. Set aside. Step 3: Cook the skewers Preheat a charcoal BBQ or Hibachi to high heat. Suspend the skewers directly over the coals. Cook skewers, turning every 2-3 minutes, brushing with the glaze when they are halfway through cooking time. This will take between 6-8 minutes, for medium-rare. Step 4: Finish and serve Place a pile of steamed rice onto serving plates, then top with the skewers, pickled cucumbers, some wombok on the side and garnished with sesame seeds. #cooking #beef #grill #meat
