Tirami-goo - serve 10-12 Ingredients Finger Biscuits 3 eggs, yolks and whites separated 110g (½ cup) caster sugar 150g (1 cup) plain flour 1 tbsp cornflour 1 tsp vanilla extract pinch of sea salt Icing sugar for dusting Or 30 pre-made finger biscuits Salted Caramel 220g (1 cup) caster sugar 2 tbsp water 100g unsalted butter, cubed, at room temperature 150ml (½ cup) thickened cream Seeds of 1 vanilla bean 2 tsp sea salt flakes Mascarpone Cream: 4 eggs, yolks and whites separated 165g (¾ cup) caster sugar Seeds of 2 vanilla beans 1kg mascarpone 400ml room temperature coffee (stove top or plunger) 50g dark chocolate 100g roasted hazelnuts, crushed (with skins) Cocoa for dusting Method Step 1: Prep the biscuits Preheat oven to 180°C and line two large baking sheets with baking paper Place the egg yolks, ¼ cup of the sugar, vanilla, and salt into a stand mixer bowl, whisk on medium speed until pale and fluffy Place the egg whites in a separate bowl and using a clean whisk attachment beat on high speed until soft peaks form the add in the remaining ¼ cup of sugar a spoonful at a time, beat until the egg whites are thick and glossy and sugar has dissolved Using a spatula gently fold the egg whites into the egg yolk mix in batches until well combined Sift the flour and cornstarch into the egg mixture and fold until no dry streaks remain, do not over-mix the batter. Transfer batter to a large piping bag and secure end Cut tip to form a 1.5cm opening, pipe the batter into 8cm long logs (about 2cm wide) on the baking sheet leaving a 2cm gap between each Dust logs generously with powdered sugar then bake for 20 minutes or until golden all over and firm to the touch (they should be quite hard/dry once cooled). Once cooked, remove from the oven and set aside to cool completely. Step 2: Prep the salted caramel Place cream, vanilla and salt into a small pot and warm up over a low heat, stirring occasionally. Do not allow to boil. In a medium sized saucepan add the sugar and melt down over medium heat until it caramelises and reaches a dark amber colour. Immediately take the pot off the heat and quickly whisk in the butter, until completely melted. Pour in the cream and whisk again until smooth. Pour the caramel into a small baking tray and place in the fridge to cool. Step 3: Prep the mascarpone Whisk together egg yolks, sugar and vanilla until smooth, then add the mascarpone and gently whisk to soft peaks. In a separate bowl whisk the egg whites until soft peaks form, then gently fold into the mascarpone mix. Set aside in the fridge. Step 4: Assemble and serve Choose a serving dish that is 20-30cm wide and 6-8cm deep. Spread a 1cm layer of the mascarpone mixture on the bottom, grate over some dark chocolate and scatter over half of the hazelnuts. Dip the biscuits into the coffee 2 at a time for 5 seconds, then place on top to completely cover the mascarpone layer. Spread a 2cm layer of mascarpone and scatter over remaining hazelnuts and grated dark chocolate. Pour all the salted caramel into the dish and gently level out. Repeat soaked biscuit layer then top dish with another layer of the mascarpone mixture, level out with a pellet knife so it is completely flush with the top of the dish, dust top with cocoa powder then chill in the fridge for at least 1 hour before serving. Best left overnight. Serve and enjoy!

America at 250: A History. Class 3 “Declaring Independence” Professor Joanne Freeman continues her exploration of the American Experiment with an inside view of the deliberations leading to the Declaration of Independence.   Recorded in Yale’s Battell Chapel. This one-time-only course examines U.S. history from 1776 to the present, in advance of the nation’s semiquincentennial (or 250th birthday) in 2026. Taught jointly by Professors Joanne Freeman, David Blight, and Beverly Gage, the course emphasizes the history of the nation-state and the contested nature of American national identity. All three scholars will deliver the course’s first and final lectures together, as an introduction and a wrap-up. In between, they will each deliver eight lectures individually based on their areas of expertise.   Joanne Freeman, the Alan Boles, Class of 1929 Professor of History and American Studies, and an expert in the revolutionary and early national periods of American history, will cover the period from the Revolution up through the 1830s, touching on such topics as the birth of party politics, the nature of “Jacksonian democracy,” and the rise of the reform and protest movements. David Blight, Sterling Professor of History and African American Studies and one of the country’s foremost authorities on the history of slavery and the Civil War, will cover the Civil War era up through Reconstruction and the emergence of the Jim Crow laws. Beverly Gage, John Lewis Gaddis Professor of History, who is currently writing a book on the nation’s past to mark the 250th anniversary of the signing of the Declaration of Independence, will pick up in the 1890s and continue through the end of the 20th century, addressing debates around immigration, wealth inequality, and the creation of the social welfare state.  The course explores U.S. political history broadly conceived–not just as a realm of presidents and elections and wars (though there will be plenty of those) but as a conversation across time between citizens about what the United States is, was, and was meant to be. Ze gingen ervoor en toverden het om tot kleurrijk en licht paleisje vol kunst, waar ze op zonnige dagen het open raam en hun groene straat gebruiken als verlengde van hun woonkamer.
