Tuna Melt Ingredients 1 stick celery, finely chopped 2 tsp baby capers, drained, chopped 2 tsp dijon mustard ¼ cup mayonnaise few dashes tabasco sauce sea salt and pepper, to season zest and juice of ½ lemon 200g canned tuna, drained 2 thick slices sourdough bread 1 cup grated mozzarella cheese pickled red onion 30g butter baby cornichons or dill pickles, to serve Method Combine celery, capers, mustard, mayonnaise, tabasco, lemon juice and zest in a medium bowl. Stir well then fold in tuna. Season with salt and pepper to taste. Place the tuna mix on 1 slice of the bread, then top with cheese and red onion. Sandwich together with another slice. Heat a large frying pan over medium heat and add half the butter to melt. Transfer sandwich to pan and press down top with a protein press. Cook for 10 mins, until deep golden brown on the first side. Add remaining butter to the pan and turn the sandwich over, press down again with a protein press or heavy cast iron pan. Increase heat to medium-high and cook until the cheese has melted. Slice the sandwich in half and serve with cornichons or pickles.

"Canned" fish Ingredients 3 sprigs thyme 3 Bay leaves 2 lemons 3 cloves garlic 1 tsp peppercorns 1kg whole bonito, gutted, cleaned Sea salt and black pepper, to season Olive oil Method Step 1: Flavour the water Place enough water in a large saucepan to cover the tuna when it is added. Add the thyme, bay leaves, the rind of 1 lemon, garlic and peppercorns (place a small wire rack on the bottom of the saucepan to prevent the fish from sticking to the pot). Bring to a boil, then reduce to a simmer. Simmer gently for 10 minutes to infuse the flavours. Step 3: Poach the fish Turn the stove off and gently lower the fish into the liquid. Maintain the water temperature between 60 - 65°C (140 - 150°F), by turning stove on to low heat when needed and using a kitchen thermometer to check the water every 5 minutes. Poach the fish until the thickest part of the flesh reaches an internal temperature of 55-60°C (131-140°F), approximately 30 minutes. Remove the fish from the liquid and place on a large tray. Remove the flesh from the bones and flake gently when cool enough to handle. Season with salt, pepper and the zest of remaining lemon. Step 4: Finish Transfer fish to a sterilised jar. Pour over enough olive oil to submerge the fish, then seal closed. This can be refrigerated, for up to 5 days (this is not shelf-stable like commercially canned tuna).

Samen met collega’s bepalen ze hoe een ruwe diamant geslepen moet worden: zo zuiver mogelijk, zo groot mogelijk – en soms mét een klein spoor van moeder natuur erin. Want het is en blijft een natuurlijk product waarmee ze werken hier. CEO Benno Leeser gelooft dat dit Amsterdamse ambacht niet verloren mag gaan. Daarom bracht GASSAN de interne opleiding tot diamantslijper terug. Nieuwe leerlingen, zoals Raymond en Edwin, volgen nu hetzelfde pad. Raymond was ooit stratenmaker, nu slijpt hij de kleinste stenen. Edwin kwam ooit binnen als klant om een cadeautje te kopen voor zijn moeder, werd gegrepen door het vak, en zat een maand later zelf achter de slijptafel. Wat je nodig hebt? How is it that someone can back a genocide and then be rewarded with a top job at the United Nations? Let me tell you about this delightful person, Annalena Baerbock. Shortly, she’s planning on taking up a new job as President of the UN General Assembly.  Who is she and why should we care? Well, she was Germany's foreign minister from 2021 to 2025, and she’s also an extraordinarily good friend to Israel,  defending their government’s atrocities against Palestinians at every instance. Here’s what I mean. While Israel was bombing hospitals, refugee camps, and schools in Gaza,  Baerbock called it “self-defense”. And said that “Israel’s security is non-negotiable”.  She blocked efforts for a ceasefire that would have saved lives. And she refused to enforce arrest warrants for Israeli officials, wanted for crimes against humanity. And on her watch, Germany’s position as Israel’s second largest arms supplier, only grew stronger. Arms approvals jumped to about 326 million euros in 2023. And from October 2023 to May 2025,  Berlin licensed another 485 million Euros in exports. And now, Baerbock is about to take that record to the UN’s top stage.   Why does this matter?  Because the President of the General Assembly runs the meetings, sets the agenda, decides who speaks when. They become the public face of that hall. In short, Annalena Baerbock, genocide enabler would be shaping what the world hears. So can her appointment still be stopped? Yes.  The Assembly could pass a resolution calling for her resignation. Member states could refuse to work with her. Public mobilisation could make her role untenable. So here’s what we're asking you to do now. It’s simple: Sign our petition to block Baerbock, and share it with five people. Even if it doesn’t work, it’ll still send a message to those in power. That Baerbock’s appointment is contested, and that the cost of looking the other way is rising. A genocide enabler should not be fronting the world’s main forum. Thank you.
