Speed, tone quality, and control can suffer. Good technique gets stronger and more instinctive with every practice. It forms the bedrock foundation for your music. And you may want to understand music so you learn it more easily and it makes more sense. This can help you avoid the excess frustration and dismay that comes with shoddy practice and prolonged confusion. But playing the notes is not enough. Like an actor bring words to life, we breathe life into our pieces. And we can do this in an organized way, day in and day out, reliably. Great musicians can play wonderfully in any mood. They do not rely on emotions. Instead, they create music that affects our emotions. This is a trained skill, not an inborn talent. Playing classical guitar is a long-term study. It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. Sri Lankan Rolls Ingredients Crepes 300g (2 cups) plain flour large pinch sea salt, to season 80g (4 tbsp) butter, melted 3 eggs, beaten 125ml (½ cup milk) 300ml water Filling 3 medium potatoes, cubed 1 brown onion, finely diced 1 tbsp neutral oil 1 cinnamon stick 2 sprigs curry leaves thumb-sized piece fresh ginger, finely grated 2 cloves garlic, finely grated ½ tsp turmeric 1 tsp each chilli powder, ground coriander, ground cumin 500g green prawns, peeled, chopped into bite size pieces 40ml (2 tbsp) tomato ketchup 1 tsp brown sugar lemon juice, to taste sea salt, to season lemon wedges and spicy tomato chutney, to serve Crumb coat 3 egg whites, lightly whisked 1 cup breadcrumbs neutral oil for deep frying Method Step 1: Make the crepe batter Combine the flour and salt in a large bowl. Whisk the butter, eggs, milk and water together in a jug or bowl, then gradually whisk into the flour to make a thin batter (add more water if needed so it spreads easily in the pan). Rest batter for 1 hour. Step 2: Prep the filling Boil the potatoes in salted water for about 8 minutes until just tender. Drain and set aside. Heat the oil in a large frying pan over medium heat. Saute the onion until softened. Add cinnamon stick, curry leaves, ginger and garlic. Cook for 1 minute until fragrant. Add the potatoes, crush lightly in the pan with a spoon, cook for 1 minute. Pour in 30ml water to deglaze frond (browned bits) from the base of the pan. Stir in turmeric, chilli powder, ground coriander, ground cumin, tomato ketchup, and sugar. Cook for 1–2 minutes until well combined. Add prawns and stir until just cooked. Stir in lemon juice and sea salt to taste, then remove from the heat. Step 3: Cook and fill crepes Heat a crepe pan over medium. Pour 60ml of the batter into the pan and swirl to make a thin circle. Cook for 30 seconds, flip, cook for 15 seconds more. Transfer to a tray lined with baking paper and repeat with remaining batter. Divide the filling into 8 portions, then place down the centre of each crepe in a log shape, leaving a border on the sides to fold in. Fold over the edge closest to you to enclose the filling, then fold in each side and continue to roll up to enclose. Place the egg whites in a shallow bowl and the breadcrumbs in a shallow tray. Dip each crepe roll in the egg whites, then roll in the breadcrumbs to completely coat. Step 4: Finish and serve Heat enough oil in a deep frying pan to 180°C (355°F). Deep fry the rolls in batches for 1-2 minutes, until dark golden and crisp. Drain on a wire rack over a tray, then serve with lemon wedges and spicy tomato chutney.

De twee leerden elkaar kennen op de Hotelschool en toen tijdens een schoolproject bleek dat ze naast samen lachen, ook goed samen konden werken, werd er een zaadje geplant. Ze werkten beiden als zzp’ers in de horeca en dachten op een gegeven moment: waarom nog tien jaar wachten om onze droom na te jagen, als we het ook gewoon nu al kunnen proberen? En zodoende. Ze wilden iets toegankelijks waarin ze ook konden experimenteren. Het werden broodjes, maar dan wel speciále broodjes. Laagdrempelig product, maar iets waar ze toch veel culinaire kennis in kwijt kunnen. Al snel liepen ze deze oude garage in de Spuistraat tegen ‘t lijf, die ze volledig naar eigen smaak verbouwden. En alhoewel het nog altijd keihard werken is, gaat het goed met de zaak. Zo zijn ze tegenwoordig 7 dagen per week geopend en het is een komen en gaan van locals, dagjesmensen, toeristen en bezorgers die bestellingen komen halen. Ook leuk: voor buurtbewoners hebben ze een stempelkaart waarmee ze hun 10e koffie gratis krijgen. Wat betreft de (wisselende) kaart, houden ze het klein. Er staan momenteel 4 broodjes op, en in het weekend hebben ze daar bovenop nog specials. Zo kunnen Bram en Walt garanderen dat alles altijd vers is en hebben ze nauwelijks foodwaste. Daarnaast maken ze bijna alles (op het brood, dat van Euro Pizza komt) zelf: van sauzen tot de geroosterde kip en zelfs koekjes. Benieuwd geworden naar Rosèl? The two met at the Hotelschool, and during a school project, they discovered that not only did they have a great time together, they also made a solid team. A seed was planted. They both worked as freelancers in the hospitality industry and eventually thought: why wait another ten years to chase our dream, when we can just try now? And so they did. They wanted something accessible, but with room to experiment. They landed on sandwiches - but not just ‘simple’ sandwiches. An accessible product, yet one that allowed them to pour in plenty of culinary knowledge. They stumbled upon this old garage on the Spuistraat, which they rebuild to what Rosèl is today. And while it’s still a lot of hard work, the business is doing well. They’re now open seven days a week, and there’s a steady flow of locals, day-trippers, tourists, and delivery drivers picking up orders. A fun extra: local residents get a stamp card that they can get their 10th coffee for free with. As for the (rotating) menu, they keep it small. There are currently four sandwiches, with weekend specials on top. This way, Bram and Walt can ensure everything is always fresh, and they keep food waste to a minimum.
