Elawalu Roti Ingredients Dough 450g (3 cups) bread flour 300ml water 2 tsp fine salt 1 tbsp neutral oil (vegetable, canola, grapeseed) + extra for coating Filling 4 medium potatoes (300-350g), peeled and chopped 1 tbsp coconut oil ½ tsp ground turmeric ½ tsp curry powder ½ tsp chilli powder 5 cardamom pods, bruised ½ tsp black mustard seeds 8 curry leaves chopped 1 leek, washed, finely chopped 1 carrot, grated 3 cloves garlic, finely grated 1 thumb-sized piece ginger, finely grated 1 small green chilli, finely chopped sea salt and black pepper, to season Method Step 1: Prep the dough For the dough, combine flour, water, salt and 2 teaspoons vegetable oil in the bowl of an electric mixer with the dough hook attachment. Mix on low speed with dough hook until combined, then increase speed to medium low for about 6 minutes to knead until smooth and elastic. Shape into a ball and transfer to an oiled bowl, turning to coat in the oil. Set aside, covered, to rest for 30 minutes. Step 2: Divide the dough Turn dough out onto a lightly oiled surface and divide into 12 equal portions. Roll into tight balls and place on a well oiled tray, turning to coat completely in extra oil. Cover and set aside for 1 hour to rest at room temperature, or overnight in the fridge. Step 3: Cook the filling Place potatoes in a saucepan of cold salted water and bring to a boil over high heat. Cook for 8-10 minutes, until fork tender, then drain and set aside. Heat coconut oil in a large frying pan over medium high heat. Add spices and toast for 1 minute. Stir in the garlic, ginger, chilli and curry leaves, and cook for a further minute. Stir in carrot and cook briefly, then add leek and cook for 2 minutes until softened. Add potatoes to the pan and crush lightly, then mix well and cook for a further minute. Season to taste then set aside to cool. Step 4: Fill and cook Take 1 portion of dough and place on an oiled bench. Flatten out then start stretching out to a large round from the sides to as thin as possible and almost translucent. Place a portion of the filling in the centre top of the dough, then fold in the two sides to enclose into the shape of a long rectangle. Begin to fold from one end to the other in a triangle shape to completely enclose. Heat a large frying pan or tawa pan over medium heat. Cook roti for 2-3 minutes on each side until nicely charred, then stand upright to cook the sides. Serve immediately with yoghurt or spiced chutney if you like.

After a failed expedition in 1920, he secured funding through a deal with a newspaper alliance for a new expedition in 1925 with his son and a friend. The three men vanished without a trace, and their fate remains a mystery to this day. This can help you avoid the excess frustration and dismay that comes with shoddy practice and prolonged confusion. But playing the notes is not enough. Like an actor bring words to life, we breathe life into our pieces. And we can do this in an organized way, day in and day out, reliably. Great musicians can play wonderfully in any mood. They do not rely on emotions. Instead, they create music that affects our emotions. This is a trained skill, not an inborn talent. Playing classical guitar is a long-term study. It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. Self-saucing Sausage Rolls Ingredients 250ml (1 cup) tomato ketchup 500g beef mince 1 brown onion, finely chopped 1 carrot, grated 3 cloves garlic, finely grated 35g (½ cup) panko breadcrumbs 2 eggs 20ml (1 tbsp) Worcestershire sauce ½ tsp dried mixed herbs ⅓ cup chopped parsley Sea salt and pepper, to season 375g sheet frozen puff pastry, thawed Method Step 1: Freeze the sauce Pour tomato ketchup into a silicone water bottle ice mould and freeze for at least four hours or until solid. Step 2: Prep the filling Combine mince, onion, carrot, garlic, breadcrumbs, 1 egg, worcestershire, mixed herbs and parsley in a large bowl and mix until very well combined. Season with salt and pepper. Divide mixture into 4 portions. Wrap each portion of mince evenly around a frozen stick of tomato sauce, shaping into a sealed log the length of the pastry sheet. Transfer to a tray lined with baking paper and place in the freezer for 30 minutes to 1 hour to firm up. Step 3: Assemble the rolls Preheat the oven to 210°C fan forced (410°F). Place a heavy based baking tray in the oven to preheat. Cut the pastry into 4 rectangles. Check each one will fully wrap around a mince log, with a little extra to seal. I make them quite long and then half them once they are cooked. Clean your bench and then beat the remaining egg. Place each mince log along the long edge of each of the pastry sheets. Brush the other side with some of the egg wash and then roll up to enclose pastry. You want to have a little gap between the meat and the end of the pastry to help it enclose. Transfer sausage rolls, seam side down to the baking tray, placing on a piece of baking paper. Brush the tops with the remaining egg wash. Step 4: Finish and serve Bake for 20-25 minutes, until the pastry is puffed and golden and the mince has reached an internal temperature of 70°C (160°F). Allow the sausage rolls to cool for 10 minutes, before cutting them up into halves or your desired portions and serve. *These can be purchased at Kitchen stores or online and come in a 5-hole mould.
