Pain Perdu Serves: 4 Prep time: 10 mins + soaking Cook time: 30 mins Ingredients 3 eggs 1 cup (250ml) milk 1 cup (250ml) cream 1 vanilla bean, halved, seeds scraped ¼ cup (55g) caster sugar + 2 tbsp extra 1 tsp ground cinnamon fresh nutmeg, grated sea salt, to season 1 french bread stick, day old 50g butter maple syrup, icing sugar, fresh berries to serve Method Whisk the eggs, milk, cream, vanilla seeds, sugar, cinnamon and nutmeg in a large bowl until well combined and sugar dissolves. Season with sea salt. Pour custard into a shallow tray. Slice baguette into 4 portions, then halve horizontally. Place bread slices in batter, turning to completely coat, and allow to soak for 5-10 minutes, until bread has fully soaked up the liquid. Preheat the oven to 180°C fan force (355°F). Heat half the butter in a large oven-proof frying pan over medium-high heat. Cook half the soaked bread, cut side down for 2 minutes, until golden brown. Turn bread over, then sprinkle half of the extra sugar over the top. Transfer pan to oven and bake for 10-12 minutes, until caramelised and puffed. Repeat with remaining bread and butter. Serve pain perdu drizzled in syrup, with some berries and dusted with icing sugar. #recipe #breakfast #shorts

Waarom stoppen er steeds meer huisartsen en is er een crisis in de Nederlandse huisartsenzorg? De druk op huisartsen in Nederland blijft toenemen. Al meer dan twintig jaar waarschuwen zij voor de groeiende werkdruk, de stijgende administratieve lasten en de beperkte tijd die overblijft voor hun patiënten. In deze Zembla-video vertellen drie huisartsen hoe hun vak is veranderd en wat de gevolgen daarvan zijn voor de zorg. Huisarts Bart Bruijn merkt dat werk dat vroeger in het ziekenhuis werd uitgevoerd, steeds vaker bij de huisarts terechtkomt. Hij werkt langer, maakt vaker fouten door vermoeidheid, en vrije middagen zijn inmiddels verleden tijd. Collega Daisy Pors beschrijft hoe moeilijk het is om ernstig zieke patiënten toegang te geven tot de juiste middelen en zorg. Robert Collignon besloot uiteindelijk na negentien jaar te stoppen als huisarts. Hij wilde dokter zijn, maar zag zich steeds vaker gedwongen te reageren op problemen binnen het bredere zorgstelsel. Inmiddels is hij alweer twee jaar werkzaam als zzp-huisarts. De huisartsenzorg staat onder druk. Praktijken zitten vol en steeds meer huisartsen hanteren een patiëntenstop. Volgens onderzoek heeft zestig procent van de huisartsenpraktijken geen ruimte meer voor nieuwe patiënten. Consulten duren gemiddeld elf minuten, terwijl de zorgvraag toeneemt. Die stijgende vraag komt mede door vergrijzing en door het feit dat patiënten vaak meerdere, complexere klachten tegelijk hebben. Tegelijkertijd vergrijst ook de beroepsgroep zelf: van de ongeveer 15.000 huisartsen in Nederland is ruim 16 procent zestig jaar of ouder. De komende jaren zal een groot deel van hen met pensioen gaan. De instroom van nieuwe huisartsen kan die uitstroom niet volledig opvangen, wat leidt tot grotere druk op de overgebleven praktijken. Marktwerking heeft invloed gehad op de ontwikkeling van de huisartsenzorg. Huisartsen maken zich zorgen over de opkomst van commerciële partijen die praktijken overnemen, en over het toenemende aandeel van digitale zorg. Ook signaleren zij dat het lastiger is geworden om patiënten door te verwijzen naar ziekenhuizen of andere zorginstellingen, waardoor de druk verder toeneemt. In deze video onderzoekt Zembla hoe het huisartsentekort in Nederland heeft kunnen ontstaan. Wat is de invloed geweest van beleidskeuzes? Welke rol speelt marktwerking? En waarom blijven de waarschuwingen van huisartsen al zo lang zonder structurele reactie? In de video stellen we dat Jan-Peter Balkenende (CDA) en Wouter Bos (PvdA) in 2003 tijdens de formatiebesprekingen de basis legden voor het nieuwe zorgverzekeringssysteem. We vermelden daarbij ten onrechte niet dat de kabinetsformatie later mislukte. Het CDA vormde uiteindelijk met D66 en VVD een kabinet. De PvdA ging de oppositie in en stemde, onder leiding van Wouter Bos in 2005 en 2006, juist tegen de zorgverzekeringswet. De PvdA vond de wet te privaat en te weinig publiek. FutureCanoe Chocolate Chip Cookies: https://www.youtube.com/watch?v=3pW3Lr7vZ3o Makes: 12 Prep time: mins + freezing and 24 hours resting Cook time: 15 mins Ingredients 170g (6oz) chocolate hazelnut spread 225g unsalted butter 150g caster sugar 250g brown sugar 2 eggs 3 vanilla beans, halved, seeds scraped 380g plain flour 1 tsp baking powder ½ tsp bicarbonate of soda pinch sea salt 85g (3oz) 70% dark chocolate, chopped 85g (3oz) milk chocolate, chopped 200g dark chocolate chips sea salt flakes Method Divide hazelnut spread between a 12 hole silicone mini muffin tray and freeze until firm. Melt butter in a medium saucepan and cook until browned and starting to smell nutty. Transfer to a bowl and place in a bowl of iced water. Whisk in an ice cube, then allow to cool, stirring occasionally. When cooled, whip the butter over the ice until light, then discard ice. Beat the sugars into butter until creamed. Beat in eggs 1 at a time, beating well between each addition until light and fluffy, then beat in vanilla seeds. Sift flour, baking powder and bicarb together, then mix into butter mixture until a soft dough forms. Fold in chocolate chips. Cover dough tightly with plastic wrap and refrigerate overnight. Remove dough from fridge and hazelnut butter from freezer. Divide the dough into 12 equal portions. Take a portion of dough and shape it into 2 discs slightly wilder than the frozen hazelnut spread. Press a disc of hazelnut spread in the centre, then cover with the other piece of dough to encase and shape into a round. Place cookies on a tray or in an airtight container and refrigerate until ready to bake. Preheat the oven to 190°C fan forced (375°F) and line 2 large baking trays with baking paper. Place cookies on trays, with at least 5cm gap between each for spreading (you may need to bake in 2 batches). Bake for 15 minutes, without opening the oven door. Sprinkle with a little sea salt as soon as they are out of the oven, then allow to cool for at least 15 minutes on the trays. #cookie #recipe #food #biscuit #chocolate
