Critics argue though that this is a dangerous approach and what is normal is unknown. Cultures have often used mental illness to describe behaviour deemed unacceptable, which now strikes us as patently prejudiced and absurd. In 1851, American physician Samuel Cartwright coined the term 'drapetomania', a supposed mental illness causing enslaved African people to try to escape captivity. More widely for centuries women were diagnosed with hysteria. While today, studies from UCL and elsewhere suggest behaviours are being medicalised as depression or ADHD when they were previously part of a normal range of response. Should we give up on the idea of normal, and see mental disorders not as illnesses, but as different ways of being in the world? Is normality a means to control the behaviour of others and should we change society to stop demonising the different? SZ Sugar) Unlike Rossini, Donizetti or Verdi, Giacomo Puccini never included the guitar in his operas. Still, his music – with its unmistakable sensuality and lyrical charm – seems perfectly suited to the instrument. At the height of Puccini's success, many simplified guitar arrangements of his operatic melodies appeared on the market, aimed at amateur musicians who wished to relive at home the emotions experienced at the theatre. These versions, while charming, were conceived for ease of play rather than expressive depth. With “Piccolo Valzer”, we catch a more personal side of Puccini. This piano miniature, composed in 1894, was later transformed into Musetta's famous aria, "Quando men vo" from “La Bohème”. Puccini premiered it during a naval ceremony, but according to biographer Mosco Carner, the initial idea may have come to him while drifting in his own boat on Massaciuccoli Lake – gently rocked by the waves, as the score's rare instruction “con ondulazione” suggests. Although E major – the piece's original key – works well on the guitar, I chose to transpose it to A major to better explore the instrument's upper register and preserve clarity between the voices. Red eye gravy Gyudon Serves: 4 Prep time: 15 mins + marinating eggs Cook time: 25 mins Ingredients 4 eggs 250ml water 40ml black vinegar 100ml soy sauce + ¼ cup (60ml) extra 1 tbsp caster sugar ¾ cup (180ml) dashi 237ml can Boss Iced Long Black + extra for basting ¼ cup (60ml) soy sauce 1 tbsp brown sugar 1 tbsp sake 2 tbsp mirin 3 garlic cloves, grated thumbsize piece fresh ginger, grated 1 brown onion, thinly sliced 500g flat iron steak, thinly sliced 4 cups cooked sushi rice pickled red ginger, sliced spring onions, toasted sesame seeds to serve Method Boil eggs in a large saucepan for 6 minutes 30 seconds, then immediately plunge into iced-water for 5 minutes. Whisk water, vinegar, soy and sugar in a clean jar or glass container. Peel the eggs and submerge them in the liquid, seal, then refrigerate overnight*. Heat dashi in a medium saucepan over medium heat. Add coffee, extra soy sauce, coffee, brown sugar, sake, mirin, garlic and ginger. Bring to a simmer and cook until reduced by half, about 10 minutes. Add onions, cook for 4 minutes, stirring occasionally. Add beef and stir through, cook for 3 minutes, until just cooked. Spoon rice into serving bowls, then top with beef and broth, garnish with some pickled ginger, spring onions and sesame seeds, then halve a soy marinated egg and place on the side. *The longer the eggs marinate for the more they will absorb the flavours of the soy mixture.
