Ingredients 4 Kestrel potatoes* 2 tbsp white vinegar sea salt, to season ½ cup (140g) Greek yoghurt 1 cup fresh herbs, firmly packed (tarragon, dill, mint, parsley, coriander) 1 bunch chives, chopped juice of 2 lemons 2 cloves garlic, crushed 1 tbsp baby capers, drained 1 avocado, flesh quartered 1 tbsp olive oil 250g mixed baby tomatoes, halved 250g baby cucumbers, chopped ½ red onion, finely sliced 200g fire roasted capsicum, sliced ½ cup each of mint, parsley and coriander oil for deep frying (vegetable, canola, or other neutral oil) Method Slice potatoes using a crinkle cutter to 5mm thick. Place in a bowl of cold water and soak for 10 minutes. Drain potatoes and transfer to a large saucepan of salted cold water and the vinegar (it should be around 2 litres of water). Bring to a boil over high heat, cook for 6-8 minutes, until just tender. Drain and cool on a wire rack over a tray, then transfer to the fridge to chill. Combine the yoghurt, mixed herbs, half the chives, lemon juice, garlic, capers, avocado and oil in a blender. Puree until smooth, season with salt and pepper. Combine the tomatoes, cucumber, onion, capsicum and herbs in a large bowl. Heat the oil in a deep saucepan to 200°C (390°F). Deep fry potatoes in batches for 3-4 minutes, until golden and crisp. Drain on a wire rack and season with salt. Drizzle the salad with the dressing and top with the chips. Toss until well combined then serve immediately. *Alternatively, use King Edward, Russet, Sebago, Maris Piper #shorts

In die 750 jaar dat Amsterdam bestaat zijn er heel wat ‘foodtrends’ gekomen en gegaan (en sommigen ook gebleven). Ter ere van het jubileumjaar duiken sterrenchef Dennis Huwae foodie Roger Bloem en FC Centrum de geschiedenis van de Amsterdamse eetcultuur in.🍴 Daar waar sommige mensen nu massaal in de rij staan voor een pistache cruffin of briochebroodje kaassouflé, hadden we ‘t vroeger niet zo breed. Het was roeien met die riemen die je had als Amsterdammer, en dat betekende dus inventief koken. Zo ook in de Jordaan. Nu een bijzonder populaire buurt met een vierkantemeterprijs waar je U tegen zegt, maar vroeger een echte arbeiderswijk waar mensen van weinig rond moesten komen. Iets als een simpele gehaktbal was destijds een luxeproduct. Maar daar hadden de Jordanezen een creatieve oplossing voor: ze ontwikkelden de Jordanese gehaktbal. Deze gehaktbal werd gemaakt van goedkope- en restproducten, zoals varkensvlees, oud brood en – niet te missen – garnalen. Hoewel garnalen tegenwoordig hartstikke prijzig zijn, waren ze vroeger juist goedkoop. Toen Amsterdam nog aan de Zuiderzee lag, vingen vissers hier met weinig moeite grote hoeveelheden garnalen. De Hollandse garnaal was geen delicatesse, maar gewoon goedkoop volksvoedsel. Het verhaal gaat dat Jordanese huisvrouwen, om een centje bij te verdienen, garnalen gingen pellen die werden aangevoerd door Volendamse vissers. De garnalen die tijdens het pellen beschadigd raakten, mochten ze mee naar huis nemen. Hiermee vulden ze het schaarse vlees aan en ontstond een gehaktbal kenmerkend voor de buurt, met een unieke smaak en karakter. Inmiddels is de Jordanese gehaktbal bijna nergens meer te vinden. De legendarische Slagerij Louman had ‘m tot een tijdje terug nog in de schappen liggen, maar de garnalen zijn tegenwoordig zo duur, dat de gemiddelde Amsterdammer toch liever gaat voor een goedkoper ‘normaal’ balletje gehakt. Maarrr we waren benieuwd en hadden geluk: voor deze ene keer mochten we deze bijzondere bal komen maken en proeven bij Slagerij Louman. Wat denk jij? Woodblock printmaker Dave Bull and British Museum scientist Capucine Korenberg have been working together on a project to create woodblock prints from a series of unpublished drawings by the Ukiyo-e School Japanese artist Hokusai. The drawings come from a book by Hokusai; 'The Great Picture Book of Everything' (Banmotsu ehon daizen zu 万物絵本大全図). The method of creating such a book involved creating drawings that would ultimately be destroyed by carving through them as you created the woodblocks need to mass-produce a run of books. However, as this book was never published, the drawings survive.The question of whether these particular drawings were ever intended to be carved though, or whether they were actually reference drawings has never been answered.
