Midden in de Jordaan, in de Willemstraat, begint de dag vroeg bij Jan-Willem en Ongkie van JWO Lekkernijen. Hun delicatessenwinkel, al sinds 2000 een begrip in de buurt, draait om vroeg opstaan en aanpakken. Om 6 uur zijn ze al in de weer: broodjes afbakken, jus persen en de winkel gezellig maken voor de dag. “Hier is het altijd een werkhuis, altijd schoonmaken, altijd opruimen.” Maar ze zouden het niet anders willen. Zodra de eerste klanten binnenkomen en de geur van vers brood de straat langzaam vult, weten ze weer waarom ze het doen. Een nieuwe dag in de Jordaan kan beginnen. Kort daarna druppelen de eerste personeelsleden binnen. De koffiemachine draait op volle toeren om de vaste ‘koffieploeg’ (vaste klanten uit de buurt) te voorzien van hun eerste kopje van de dag. De eerste broodjes gaan over de toonbank, en de Willemstraat komt langzaam tot leven. Jan-Willem en Ongkie werken al 28 jaar samen. Ze begonnen met een kaaswinkel in Watergraafsmeer, wat ze hartstikke leuk vonden, maar toch misten ze een beetje uitdaging. Toen kwam dit pand op hun pad, toen Louman Comestibles, wat hier voorheen zat, kon worden overgenomen. Na zo’n 1,5 jaar in de zaak te werken, hadden verbouwing, Jan-Willem en Ongkie naar eigen zeggen ‘hun eigen smoel aan de winkel gegeven’, en veranderden ze de naam in JWO Delicatessen. Wat ze precies verkopen? Alles wat ze zelf lekker vinden: van wijn tot versgeperst sap (Ongkie studeerde ooit diëtiek), broodjes tot aan zelf geïmporteerde Italiaanse delicatessen, en nog veel meer. En dat werkt. Van ‘s ochtends vroeg tot einde middag lopen hier klanten de winkel in en uit om een broodje of iets lekkers voor bij de borrel te halen. Maar voordat de winkel een succes werd, moesten de twee zich wel echt even bewijzen, vertelt Jan-Willem. Ze kwamen niet uit de Jordaan, zijn een mannelijk stel en – zoals je ziet – niet op hun mondje gevallen. It had taken me 25 years of experimenting to achieve, with guitars full of pickups, wires, batteries. Thankfully, Fishman delivered. I've been using the Fishman Rare Earth Mic Blend for many years as the backbone of my sound. It combines a magnetic humbucker for clarity, power and warmth, and a condenser microphone for natural air and realism, and percussive response. But they added a new element for me, called the PowerTap, which is a sensor mounted to the wood which delivers that third dimension, including endlessly deep rich bass but - miraculously - with no feedback.  And those 3 elements - magnetic, mic and sensor - can be mixed with two blend-wheels hidden within easy reach inside your guitar. Or you can split the 3 elements, and connect them to separate channels on your amp, mixer or interface, and process them all separately with whatever EQ and effects you like. Het leerlingenvervoer in Nederland is al jarenlang een groot probleem, vooral voor kinderen die naar het speciaal onderwijs gaan. Veel leerlingen komen te laat op school of worden helemaal niet opgehaald. Daarnaast kampen zij met lange reistijden en constante wisselingen van chauffeurs. Uit recent onderzoek, uitgevoerd in opdracht van het ministerie van Onderwijs, Cultuur en Wetenschap, blijkt dat maar liefst 18% van de kinderen door deze problemen te laat op school arriveert. Elijah Delsink, voorzitter van de Leerlingen Belang Voortgezet Speciaal Onderwijs, ontvangt jaarlijks meer dan 1500 klachten over leerlingenvervoer. Eén incident betrof een chauffeur die vergat dat er nog een kind in de bus zat en naar de garage terugreed om te lunchen. In de regio Utrecht liep de situatie dit jaar volledig uit de hand. Door juridische procedures dreigde het leerlingenvervoer daar tijdelijk volledig stil te vallen. Als noodoplossing werden grote touringcars ingezet, waarin meer dan twintig kinderen tegelijk moesten reizen. Deze oplossing bleek echter allesbehalve ideaal en bracht problemen met zich mee voor zowel de kinderen als hun ouders. De problemen in het leerlingenvervoer worden vaak toegeschreven aan chauffeurstekorten of veeleisende ouders. Zembla onderzoekt een andere mogelijke oorzaak, namelijk de aanbesteding. Dit systeem, waarbij gemeenten om de paar jaar het vervoer opnieuw moeten aanbesteden, leidt tot instabiliteit en een neerwaartse spiraal in kwaliteit. Deskundigen geven aan dat er een race naar de bodem gaande is. Fred Teeven, voorzitter van de vervoerdersbranchevereniging KNV, bevestigt dit: “Je kunt niet voor de allerlaagste prijs het maximale resultaat krijgen. Dat moet iedereen zich realiseren.” Ook de Kinderombudsman, Margrite Kalverboer, maakt zich ernstige zorgen over de situatie. Ze benadrukt dat kwetsbare kinderen worden gedupeerd door het falende systeem en dat het leerlingenvervoer niet kan worden verbeterd binnen de huidige structuur. Volgens haar stellen we de verkeerde prioriteiten, omdat kostenreductie belangrijker lijkt te zijn dan het welzijn van het kind. In een brief aan staatssecretaris Mariëlle Paul pleit ze ervoor om het leerlingenvervoer te beschouwen als een vorm van zorg, in plaats van als een logistiek probleem. Gunkanmaki “Battleship Sushi” Ingredients - 400g (2 cups) sushi rice (1 pound) - 80ml (5 tbsp) sushi rice seasoning - 300g (10½ ounces) sashimi-grade seafood (e.g., kingfish, salmon, yellowfin tuna) - 4 sheets nori - pinch of Shichimi Togarashi - wasabi paste - soy sauce for dipping - finger lime for garnish (optional) Method 1. Place the sushi rice in a pot or rice cooker. Rinse 3–4 times until the water runs almost clear. 2. Drain any excess water and add the same volume of water as rice (e.g., 2 cups of rice = 2 cups of water). 3. Cook the rice in a rice cooker (one cycle) or in a pot over low heat with the lid on, until the water evaporates. 4. Once cooked, transfer the rice to a large bowl and gently break it up with a spoon. 5. Pour over the sushi rice seasoning and mix until evenly coated. Cover the rice with a tea towel and set aside. 6. Finely dice the sashimi-grade seafood or your chosen fillings using a sharp knife, ensuring not to mash them. 7. Optional: Include fillings like crab or salmon roe, which are harder to roll into traditional maki. 8. Season the fillings with Shichimi Togarashi or your preferred seasoning, mix well, and set aside. 9. Cut the nori sheets into 2cm (¾ inch) wide strips. 10. Wet your hands, take a small amount of sushi rice, and shape it into an oval or rugby ball shape. 11. Place a small amount of wasabi on top of the rice ball. 12. Wrap a strip of nori around the outside of the rice, using a little water to seal the ends. 13. Fill the gunkanmaki with your prepared fish or fillings. 14.
