Dit keer kregen we een kijkje binnen in het hofje en hofhuis van Noortje (85) op de Rozengracht. Noortje was jarenlang violiste en werkte onder andere voor het concertgebouw, net als haar man, Theo Olof, die concertmeester was. Ze woonden samen in een bovenhuis op steenworp afstand van ‘t concertgebouw. Wat betreft hun werk een ideale plek, maar naarmate Noortjes man ouder werd, kreeg hij moeite met alle trappen waarop ze besloten naar Amstelveen te verhuizen. Na het overlijden van haar man, wilde Noortje graag weer terug naar de stad en schreef zich in voor een hofje. Twee jaar later, toen ze dit eigenlijk een beetje vergeten was, kreeg ze telefoon: er was een hofhuisje vrijgekomen! Het hofje werd in 1737 gebouwd, bestaat uit 21 woningen en heeft zelfs nog een regentenkamer. Nu wordt die vooral gebruikt om sinterklaas of Kerstmis te vieren. 🎄 Hoe Noortje het vindt om daar te wonen? “Een reuze bof”, en daar zijn alle bewoners het unaniem over eens. Ze geniet van alles wat er in de buurt is, haalt vaak een ‘Turkse pannenkoek’ bij Effendy, en kan met de tram voor de deur binnen no-time overal in de stad zijn. Pan fried barramundi with romesco and kipfler potatoes Romesco Ingredients: - 2 bullhorn peppers (or capsicum/bell peppers) - 2 plum tomatoes, halved - 4 garlic cloves, lightly crushed - olive oil - salt - 60g (2 oz) almonds - 2 pieces of stale bread - 1 tbsp smoked paprika - 2 tbsp sherry vinegar Method 1. Preheat your oven to 200°C (400°F). Place the peppers, tomatoes, and garlic in an oven dish. Drizzle with olive oil and season with salt. Roast for 25–30 minutes until the vegetables are softened and beginning to colour. 2. Remove the dish from the oven and transfer the roasted peppers to a bowl. Cover the bowl with a plate and let the peppers steam for 10 minutes. 3. Add the roasted tomatoes and peeled garlic to a blender. 4. Toast the almonds and torn pieces of bread in a dry pan over medium heat for 5–6 minutes, stirring frequently. Add them to the blender. 5. Peel the skin from the peppers, remove the seeds and stems, and add the flesh to the blender. Include the smoked paprika, sherry vinegar, a pinch of salt, and 3 tablespoons of olive oil. 6. Blend the mixture for a couple of minutes until smooth-ish. A little texture is desirable. If the sauce seems too thick, add some of the liquid released from the peppers during roasting. 7. Taste and adjust the seasoning as needed. Your Romesco sauce is now ready to serve! Romesco is fantastic with fried fish, grilled meats, or as a dip for pre-dinner snacks like crusty bread or raw vegetables.

Duizenden mensen in Nederland hebben te maken met geluidsoverlast door windmolens. Ze maken zich zorgen over de gezondheidseffecten. Het aantal windmolens in Nederland nam de afgelopen jaren flink toe. Sommige mensen die vlak bij een windmolen wonen lijden door het lawaai aan slapeloosheid en hebben als gevolg daarvan allerlei gezondheidsklachten. Wat is er bekend over de gezondheidsschade die overlast door windmolenlawaai kan veroorzaken? Een gezaghebbende wetenschapper in Nederland op dit gebied is Jan de Laat, verbonden aan het Leids Universitair Medisch Centrum (LUMC). Eerder dit jaar trad hij op als expert in de Tweede Kamer, daar zei De Laat er het volgende over: “De gezondheidsklachten betreffen vooral slaapstoornissen, maar ook duizeligheid, misselijkheid en hoofdpijn. “Vervolgens komen ook andere zaken aan de orde, zoals concentratieverlies, ten gevolge van die slaapstoornissen, maar ook hoge bloeddruk, hartslag, problemen, bronchitis, rusteloosheid, angst en soms ook depressie.” De Laat pleit voor een geluidslimiet van windmolens van maximaal 35 decibel. Dat is fors lager dan de huidige norm van 47 decibel. Een klacht indienen over windmolenlawaai heeft weinig zin. Het geluid blijkt namelijk binnen de vastgestelde normen te vallen. Zembla onderzoekt: op basis waarvan zijn de geluidsnormen vastgesteld? En worden omwonenden wel gehoord door de overheid? Wie overlast heeft van lawaai van een industrieterrein, kan een klacht indienen bij de gemeente. Die stuurt dan een expert langs om te controleren of de geluidsnorm inderdaad wordt overschreden. Als dat het geval is, wordt de veroorzaker door de gemeente gesommeerd het probleem op te lossen. Maar voor windmolens geldt sinds 2011 een aparte geluidsnorm, ontdekt Zembla. Daarbij wordt het gemiddelde berekend van al het geluid dat windmolens in een jaar tijd produceren. Met andere woorden: als een windmolen bij harde wind, lange tijd te veel lawaai maakt, maar bij windstilte veel minder, dan kan de molen gemiddeld toch onder de norm blijven. Zo kunnen omwonenden maandenlang overlast ervaren, zonder dat de windmolenexploitant door de overheid daarop aangesproken kan worden. Hoe is deze nieuwe geluidsnorm tot stand gekomen? In 2009 besluiten Europese landen om een inhaalslag te maken met de verduurzaming van hun energievoorziening. Jacqueline Cramer, minister van Volkshuisvesting, Ruimtelijke Ordening en Milieubeheer (VROM) tussen 2007 en 2010, stelt als doel om in 2020 twintig procent van de energievoorziening uit groene energie te halen. Het is een grote ambitie en daar moeten veel windturbines voor worden geplaatst. Maar veel van de geplande windprojecten komen maar moeizaam van de grond. In de Nederlandse klimaatakkoorden uit die tijd wordt herhaaldelijk gesproken over het ‘wegnemen van belemmeringen’ in de wet- en regelgeving. Om het proces van verduurzaming te versnellen besluit minister Cramer de geluidsregels voor windmolens aan te passen. Cramer stelt een jaargemiddelde norm voor van 47 decibel overdag en 41 decibel 's nachts. Het geluid van windmolens mag gemiddeld over een jaar niet boven deze norm uitkomen. Die nieuwe regels worden ingevoerd in 2011. Maar, eerst worden de regels voorgelegd aan de inspectie van VROM om te toetsen wat het in de praktijk gaat betekenen. De inspecteurs van VROM schrijven dat de regeling burgers 'onvoldoende' beschermt tegen 'geluidsoverlast' en waarschuwen voor ‘slaapverstoring door piekbelasting’. 'Overtredingen' op de geluidsnormen kunnen volgens de inspecteurs 'straffeloos' worden begaan. Het uiterst kritische rapport wordt echter nooit met de Tweede Kamer gedeeld. Zembla kreeg het via een beroep op de Wet open overheid (Woo) in handen. Store in a dropper bottle.) - Cocoa Powder to finish * Note on biscuits: Our default biscuits for this recipe have been the Vicenzovo Savoiardi Lady Fingers. We’d recommend trying to find something similar to these - there are plenty of near-identical biscuits from other brands. If you are using a different style of biscuit, you will need to do some maths to figure out your dose of coffee/biscuit. Our recipe is built around biscuits that weigh 8g each - if you’re working with 12g/biscuit, do the maths to compensate for the extra weight with extra coffee. Instructions - Brew 8 double shots of espresso. - You need 480g of coffee liquid total. This will be split into two equal portions of 240g for each layer. - Allow to cool completely before using. - Add 9 drops of saline solution to the cooled coffee liquid. - Add all egg yolks to a ziplock bag and cook, using a sous vide circulator, at 60C for 30 minutes then cool completely. If you cannot use a sous vide, you can either use them raw or you can mix with the sugar and heat in a bain marie to 70C, then quickly cool. - Mix the sugar and egg yolk using a hand mixer, or stand mixer, at a relatively low speed for 4 to 5 minutes. You should see the mixture increase in volume and begin to notably thicken. - Add the mascarpone in thirds, each time incorporating on lower speeds for 30 to 60 seconds. It doesn't need to be flawlessly mixed. - Begin the assembly. Prepare your chosen tray. This recipe presumes you will do it in two stages. - Pour 240g of the coffee mixture in a suitable bowl. Take half the Savoiardi. Dunk the Savoiardi only on the non-sugared side. Then turn upside down and place in the tray. Repeat with all biscuits. You should have a little coffee left over. Starting with the last biscuits you dunked, use a pastry brush to add all the remaining coffee to the biscuits in the layer. - Carefully put half of the mascarpone mixture on top of the biscuits. - Add the remaining 240g of coffee to the bowl. Repeat the dunking of the remaining biscuits. - Add the remaining mascarpone cream. - Refrigerate for at least 8 hours, ideally 24. - Before serving dust with cocoa powder. - Serve and enjoy! Andy’s Classic Gravy recipe Ingredients - 3 tbsp beef fat (or neutral-flavoured oil) - 1 carrot, sliced - 1 stick of celery, sliced - 3 shallots, sliced - 5 cloves garlic, crushed - 300g beef trimmings - 2 tbsp tomato paste - 300ml red wine - 2 sprigs rosemary - 3 tbsp flour - 1L beef stock Method 1. In a large saucepan over medium-high heat, add the beef fat (or oil). Once hot, add the beef trimmings with a pinch of salt and sauté until well browned. 2. Add the shallots and carrots, and continue to sauté for another 3-4 minutes, or until the vegetables develop good colour. Then add the red wine, celery, garlic, tomato paste, and rosemary, reducing the liquid by about three times. 3. Stir in the flour, making sure to coat all the ingredients evenly. Cook for a couple of minutes to remove the raw taste of the flour, ensuring no dry spots remain. 4. Add the beef stock, stirring well, and bring the pot to a light simmer. Continue to cook and reduce until the gravy reaches your desired thickness. Once the consistency is right, season with salt and strain the gravy through a fine sieve. 5. You can either serve the gravy hot immediately or cool it down and reheat it when your roast beef is ready.
