The grandchildren and great-grandchildren of the disappeared are digging up the bones of the past, literally. Who doesn’t love a cheese jaffle (or toastie) but what makes it even better is a cheese jaffle with a layer of crispy pecorino and mozzarella on the outside! Inside-Out Five Cheese Toastie Ingredients - 200g (7 oz) mozzarella, grated - 100g (3½ oz) Parmesan, grated - 100g (3½ oz) goat’s cheese - 100g (3½ oz) blue cheese - 100g (3½ oz) Manchego cheese - 2 spring onions, finely diced - 8 slices sandwich loaf bread Method 1. In a bowl, mix 100g (3½ oz) grated mozzarella with 50g (1¾ oz) grated Parmesan. Set this aside for the outside coating. 2. In a second bowl, combine the remaining mozzarella and Parmesan with the goat’s cheese, blue cheese, Manchego, and diced spring onions. Mix well to create the filling. 3. Preheat your toastie maker or sandwich press. Sprinkle a small handful of the reserved mozzarella-Parmesan mixture directly onto the hot surface of the toastie maker. 4. Place a slice of bread on top of the sprinkled cheese, pressing it lightly. Add a generous amount of the five-cheese filling onto the bread. Top with another slice of bread. 5. Sprinkle more of the reserved mozzarella-Parmesan mixture on top of the bread, then close the toastie maker. 6. Cook for 7–8 minutes, or until the bread is golden brown, crispy, and the cheese is melted to perfection. 7. Carefully remove the toastie, let it cool for a moment, then enjoy!

I understand that this approach is, in some sense, inappropriate at revealing structure in mandelbrot sets for negative real exponents, since divergence towards infinity is not expected. I have no reason to suspect it would behave either for, as example, complex exponents with negative real part. If you pay attention during the X-Set tour, you can generally see a difference in behavior on the left and right side of the screen, and I figure this is the reason, since the left side corresponds to negative real values. There are alternative strategies for dealing with things like this, such as using the Lyapunov exponent to check for chaotic or periodic behavior, but I opted to go with the simpler and more familiar approach to rendering. After all, I didn't want to taint the positive-real-part results with an approach designed for the negatives. Another fun little quirk that I ran into here- the standard approach to anti-aliasing the color involves determining the distance that a point gets from the bailout radius after achieving bailout. This method requires knowledge of exponent- you expect greater "jumps" as the exponent gets bigger. On the flipside though, as the exponent approaches 1 from above, this approach produces noisy behavior (and below 1 it simply doesn't work.) So, if you pay close attention, you will notice I smoothly transition between gradation and non-gradation up to the parameterized value which I'm plotting in the video :) I am also wondering what's up with the stripey behavior for some cross-sections of the X-Set. I unfortunately have not gotten around to investigating, but my best guess is that it has something to do with branch cuts on the complex natural logarithm (as used to compute complex exponentiation.) You know the left-pointing "needle" of the mandelbrot set? During all my transitions between the X-Set and Mandelbrot set, for example at 00:42, try and find the shape in the X-Set that transforms into the needle. Notice anything interesting? :) If you have any references about this set, let me know!

Natuurplassen in Nederland worden volgestort met bagger en licht vervuilde grond. Omwonenden signaleren plastic en nog meer milieuvervuiling, wat met het bagger meekomt. Onthullende documenten laten zien dat men het niet zo nauw neemt met de regels en voorschriften bij het storten van bagger in natuurplassen. In de bagger en grond zitten soms ook giftige stoffen. Al sinds 2009 worden in Nederland voormalige zandwinputten volgestort met bagger en licht vervuilde grond. Tussen 2009 en 2019 is er minstens 100 miljoen kubieke meter in plassen terechtgekomen. Het storten van vervuilde grond en bagger in diepe plassen werd niet alleen gezien als een oplossing voor een baggeroverschot, maar ook als verbetering van de biodiversiteit in diepe plassen. Een win-winsituatie, zo lijkt het. Zembla deed samen met Spit en Follow the Money onderzoek en ontdekte dat de praktijk anders uitpakt. Verondiepen, zo wordt het volstorten van diepe plassen, genoemd, lijkt inmiddels een verdienmodel geworden. Zo zijn er veel meer verondiepingsprojecten bedacht, dan er bagger is. We importeren zelfs bagger uit buitenland. Ook komt er jarenlang veel afval mee in de vorm van plastic of piepschuim. We spreken onder andere met een groep vrienden uit het Gelderse dorpje Dreumel. Zij maken zich zorgen over wat er in de nabijgelegen plas Over de Maas verdwijnt. Hier wordt al sinds de jaren 80’ schoon zand gewonnen voor de bouw van woningen en de aanleg van wegen. De plas is daardoor 25 meter diep geworden. Om te verondiepen wordt maar liefst 11 miljoen ton licht verontreinigde grond en bagger in dit water gestort.  We ontdekken ook dat in bagger veel meer vervuilende stoffen zitten dan officieel is toegestaan. Zo wordt bagger met asbest en arseen gestort in de Meeslouwerplas (een natuurplas). Toezicht en handhaving schieten tekort.   Onderzoekers van het Nederlands Instituut voor Ecologie concluderen ook nog eens na grootschalig onderzoek naar de natuurwaarden in diepe plassen, dat “het argument dat verondiepen leidt tot een betere ecologische kwaliteit geen stand houdt”. Blue Cheese Tater Tots with bacon jam Ingredients - 4 russet potatoes, peeled and diced - 3 tbsp cornflour (cornstarch) - 1 small wheel of blue cheese - salt, to taste - neutral oil for frying (e.g., vegetable or sunflower oil) - bacon jam, to serve Method 1. Place the diced potatoes into a large pot of cold, salted water. Bring to a boil over high heat, then reduce to medium heat and simmer for 25–30 minutes, stirring occasionally, until the potatoes are tender. 2. Drain the potatoes well and allow them to steam dry for 5–10 minutes. 3. Mash the potatoes using a ricer or potato masher until smooth. 4. Mix the mashed potatoes with the cornflour and a pinch of salt, forming a firm, pliable dough. 5. Divide the dough into 18 equal portions. Flatten each portion into a disc, place a piece of blue cheese in the centre, and wrap the dough around the cheese, sealing it completely. 6. Heat 2–3 tablespoons of neutral oil in a large frying pan over medium-high heat. Fry the stuffed tater tots for 3–4 minutes per side, or until golden brown and the cheese begins to melt inside. 7. Serve warm, topped with a dollop of bacon jam. Enjoy! Bacon Jam Ingredients - 3 tbsp olive oil - 2 brown onions, finely diced - 400g (14 oz) streaky bacon, finely diced - 4 cloves garlic, minced - 8 sprigs fresh thyme, leaves picked and finely chopped - 1 bay leaf - 2 tbsp brown sugar - 2 tbsp sweet soy sauce (kecap manis) - 1 tbsp balsamic reduction - 100ml (3½ fl oz) cold water - salt, to taste Method 1. Heat a large frying pan over medium-high heat and add the olive oil. 2. Add the diced onions and a small pinch of salt. Sauté for 3–4 minutes until the onions become translucent, taking care not to let them brown. 3. Stir in the diced bacon and cook for 4–5 minutes, allowing the fat to render out. 4. Carefully remove any excess fat from the pan, leaving just enough to coat the ingredients for added flavour. 5. Add the minced garlic and stir well. Pour in the cold water and use a flat wooden spoon to deglaze the pan, scraping up the browned bits (fond) stuck to the bottom. 6. Add the chopped thyme and bay leaf, then cook, stirring occasionally, until the water has almost completely evaporated. 7. Stir in the brown sugar, sweet soy sauce, and balsamic reduction. Mix thoroughly and taste for seasoning, adding more salt if needed. 8. Continue to cook for 15–20 minutes, stirring occasionally, until the mixture reaches a thick, jam-like consistency. 9. Remove from heat and allow the bacon jam to cool completely. Transfer to an airtight container and store in the refrigerator for up to one week. #shorts
