Mango Sticky Rice Serves: 4 Prep time: 24 hours Cook time: 40min Ingredients - 2 cups (400g) glutinous rice - 260ml (1 cup) coconut milk, divided - 1 pandan leaf - 120g (½ cup) sugar - 5g (1 tsp) sea salt or kosher salt, divided - 2 ripe mangoes - 1 tbsp sesame seeds Method 1. Rinse the rice twice in cold water, then cover it with fresh water and place it in the fridge overnight to soak. 2. The next day, drain the rice and transfer it to a piece of cheesecloth. Place the wrapped rice in a steaming basket over boiling water, cover, and steam for 35-40 minutes until the rice is tender but not overcooked. Begin checking for doneness after 30 minutes. 3. While the rice is steaming, prepare the sweet coconut sauce to mix through the cooked rice. In a saucepan, combine 160ml (⅔ cup) of the coconut milk, 120g (½ cup) sugar, 2g (½ tsp) salt, and the pandan leaf. Bring to a light simmer, stirring until the sugar dissolves, then lower the heat and allow the pandan leaf to steep. 4. For the second sauce, add the remaining 100ml (⅓ cup) coconut milk to a small saucepan with the remaining 3g (½ tsp) salt. Warm over medium heat, stirring until the salt dissolves, then remove from heat. 5. In a dry pan, toast the sesame seeds over medium heat until golden, then set aside to cool. 6. Once the rice is cooked, transfer it to a bowl. Gradually add the sweetened coconut milk in thirds, gently folding it into the rice. Add only as much coconut milk as the rice can absorb, being careful not to break the grains. Cover and let the rice rest for 20 minutes. 7. To serve, slice the mango cheeks. Place a generous spoonful of sticky rice onto a plate alongside the mango. Sprinkle with toasted sesame seeds, and serve the unsweetened coconut milk on the side to drizzle over just before eating.

I decided to learn and record the newly-discovered 'Waltz' attributed to Chopin. The media and some scholars are trumpeting this as a landmark discovery of an unknown work of Chopin, but I gather there's still plenty of healthy skepticism among pianists and scholars. While there is consensus that the notated piece is in Chopin's hand, Chopin's name and the title of piece seem to have been added by someone else. It's not even certain that was conceived as a waltz. The work is not signed by Chopin, and it is possible this is the product of a compositional exercise between Chopin and a student. It is also possible that Chopin transcribed somebody else's piece by ear out of curiosity, or for some other unknown purpose. Other oddities have been noted: the triple-forte that is out-of-proportion for such a short work, added fingerings that Chopin used only sparingly, and the 16th-beamed triplets in bars 10, 16, and 19 that should be 8th-triplets. Even if it is probable that the piece is an original work by Chopin that he simply chose not to develop and tossed aside, it might be wise to withhold judgement until more scholars have examined the evidence and a consensus is reached on the question of its authenticity! For now, the verdict is still out. Having said that, it is indisputably a charming work, and – now that I've gotten in my fingers and lived with it for a few hours – I can say definitively that it is at least "Chopinesque." ;) (My current favorite hypothesis is that this is, in fact, "a Chopin," but that it was an inside-joke of some kind composed for a friend that wasn't intended to be taken entirely seriously – that would help explain the triple-forte, and perhaps the fingerings too.) Active as performer, musicologist, and educator, he has distinguished himself in all these fields. As a performer, he has won numerous prizes in International competitions (most notably the Alirio Diaz competition in Rome, the Indianapolis Matinée Musicale Competition, and the National Prize for the Arts in Italy). He is leading concert activities that have brought him to perform in many countries through Europe, America, Africa and Asia, and in prestigious venues such as the Kennedy Center in Washington, D.C. His music has also been featured by broadcasting companies such as RAI (National Italian Television), National Public Radio of Armenia, National Polish Radio, and Radio Nacional Argentina. Sandro Cappelletto, music critic of the Italian newspaper “La Stampa”, selected him among the most promising musicians of the new generation, and wrote: “Fierens well captures contrasts, sudden changes of writing, returning a rich sound, now bitter, now sweet, in a phrase and a ‘breath’ of the time of execution already very aware.” Carlo Fierens started the study of the guitar with his father Guillermo, an acclaimed international concertist. He later studied in Trento with Norma Lutzemberger while completing musicological studies in the University of Pavia. He carried on his education in the USA, achieving an Artist Diploma at the University of Denver with Ricardo Iznaola and Jonathan Leathwood, and at the Jacobs School of Music (Indiana University) under the tutelage of Ernesto Bitetti, obtaining a Doctorate in Music. He is professor of guitar at the “A. Scontrino” conservatory in Trapani, Italy.
