Bún bò Huế Ingredients - 3 beef short ribs - 2 kg (4.4 lbs) beef bones - 1 pork knuckle - 2 pigs' trotters - 6 sticks lemongrass, cut into 5 cm (2-inch) pieces - 1 piece ginger, thickly sliced - 1 brown onion, peeled - 5 shallots, peeled - 180 ml (¾ cup) fish sauce - 1 tbsp fermented shrimp paste - 3 pieces rock sugar - 1 tsp salt - 1 tbsp chicken bouillon - 5 tbsp peanut oil - 1 tbsp annatto seeds - 2 tbsp ground chilli (use less if you prefer it milder) - 1 head garlic, peeled and finely diced - 2 shallots, finely diced - 3 sticks lemongrass, finely diced - 1 packet Bun Bo Hue noodles (round rice noodles) - 1 packet bean sprouts - 1 bunch coriander - 1 bunch Vietnamese mint (rau răm) - 4 limes Method 1. Add the beef and pork bones to a large pot and cover with cold water. Bring to a simmer and cook for 20 minutes, skimming off any scum that rises to the surface. 2. While the bones are simmering, heat the peanut oil in a saucepan over medium-low heat. Add the annatto seeds and ground chilli, stirring frequently for 7–8 minutes, until the oil turns a deep red. Strain the oil, discarding the seeds, and set aside. 3. Drain and discard the water from the bones. Rinse the bones thoroughly, clean the pot, and add the bones back in. Cover with fresh water. 4. Add the lemongrass sticks, ginger, whole onion, whole peeled shallots, fish sauce, fermented shrimp paste, rock sugar, salt, and chicken bouillon to the pot. Bring to a simmer. 5. In a separate pan, heat the reserved annatto oil over medium heat. Add the diced shallots, lemongrass, and garlic, sautéing for 4–5 minutes. Once fragrant, transfer this mixture to the pot with the bones and other aromatics. 6. Simmer the broth for 6 hours. After 3 hours, remove the pork knuckle and beef ribs from the pot. These will be sliced and served with the noodles. If you prefer your meat with a bit more chew, remove it after 1.5 hours instead. 7. Cook the noodles according to the packet instructions (they usually take 20–25 minutes). Once cooked, drain them well and rinse under cold water to prevent overcooking. 8. When ready to serve, briefly blanch some noodles in boiling water to reheat them. Place the noodles in a large bowl, top with slices of the cooked meat, and ladle over the hot, spicy broth. Garnish with coriander, Vietnamese mint, bean sprouts, and a wedge of lime. #cooking #food #recipe #noodles #rice

Why Are Universities Studying Slavery and Their Pasts? n this DeVane Lecture Series course, Professor David Blight examines the impact of slavery and racism on American institutions, past, present, and future.  This course works from an assumption that racial slavery was a central theme of the history of the Americas, and its many endings and legacies live with us still.  The course will pose the question “can it happen here?”  In the 1930s, the “it” was fascism.  The “it” in this case is intended to mean not only slavery and its myriad forms of enduring inequalities, but also the very existence of a pluralistic, democratic, multi-ethnic government and society rooted in the rule of law and living under a common constitution.  There have been many pivot or hinge points in American history when the nature and existence of the American experiment, as well as human freedom and rights were on the line. The course will specifically examine slavery and Yale, the Civil War, and the many legacies of that period – political, constitutional, racial, economic, and commemorative – as they have shaped American life and polity ever since. That terrifying moment right before I open the case, recorded for your enjoyment. I usually hate brand new acoustic guitars, but I couldn't believe how this sounded without any breaking in. There's a limited run in progress, but do you think we should put the JGM11 into full production? The JGM11 has three main differences from the JGM10: 1. Wood - The 11 has solid mahogany back and sides, rather than pau ferro. The mahogany gives a warmer, rounder tone, as opposed to the darker, more throaty pau ferro. Mahogany is also lighter, so the guitar is less weighty. 2. Tuners - The JGM11 comes with a pair of Bill Keith locking detuners on the 1st and 2nd strings, pre-installed and ready for glissando fun. 3. Finish - It's not black. But you'll also have noticed the stunning minimalist Passionflower inlaid on the neck, using only different woods. More details for guitar nerds: The JGM11 has a AAA-grade spruce top which has been thermo-aged, giving it richer tonal character and a toasty honey colour. It has ebony bridge and fretboard and super-long-lasting stainless steel frets, for clarity and volume especially when using tapping and other modern fingerstyle techniques. I love the minimalist “mobius circles” rosette, which matches the unique JGM asymmetrical ergonomic body shape. The depth of the mahogany's lustre is brought out by a water-clear gloss finish, and matches the mahogany neck with its two flame-maple stripes, for extra stability and just yet-more gorgeousness. The JGM11 pickup system is the same as the JGM10 and JGM5: A triple-source system designed by Fishman, only available in the JGM series, featuring a magnetic pickup, an internal body-sensor, and a condenser mic. With your choice of simple blended mono, blended stereo, or separate three-way outputs. And it's just amazing to see those legendary Keith Tuners ready-fitted on a guitar!
