Mullet and Mandarin Kosho Gyoza Ingredients - 400g (14.1 oz) mullet fillet, diced - thumb-sized piece of ginger, finely grated - 2 cloves of garlic, finely grated - 2 spring onions, white part only, finely diced - 1 tbsp soy sauce - 1 tbsp rice wine vinegar - ½ tsp ground white pepper - ½ tsp salt - 1 tbsp Mandarin Kosho (recipe available on my website) - 1 tbsp cornflour (cornstarch) - 1 packet gyoza wrappers - 1 tbsp cornflour - 1 tbsp flour - 1 tbsp neutral-flavoured oil Method 1. To prepare the gyoza filling, place the diced mullet, ginger, garlic, spring onions, soy sauce, rice wine vinegar, ground white pepper, salt, Mandarin Kosho, and 1 tablespoon of cornflour into a bowl. Mix well until all ingredients are fully combined. 2. Take just under a tablespoon of the filling and place it in the centre of a gyoza wrapper. Fold the gyoza wrapper in half to form a half-moon shape. Using your index finger and thumb, create 7-8 crimps along the edge to seal the gyoza tightly. 3. Arrange your gyozas on a tray dusted with cornflour. 4. To make the slurry, mix 1 tablespoon of cornflour with 1 tablespoon of flour, then add about 4 tablespoons of water and stir until smooth. 5. In a pan (with a lid), heat 1 tablespoon of neutral oil over medium heat. 6. Add the gyozas to the pan, ensuring they develop a golden colour on the bottom. Once they are golden, pour in the slurry and quickly cover with the lid. 7. Steam the gyozas for 3-4 minutes, then carefully turn them out onto a plate. 8. Serve with additional soy sauce and, optionally, some chilli crisp for dipping.

"In Mdou Moctar, it is not out of the ordinary for well-laid plans to collapse at the last-minute. For example, this happens a lot with flights being canceled. Maybe one of us doesn't get a visa to travel somewhere in time. Maybe all of us don't. Maybe someone at the embassy in Niger puts the visa sticker on page #1 – you know, that important page that has all your personal information like your name or birthday. As a result, we've all gotten good at reacting and maneuvering, and adapting an initial plan into something … even better! When we got to Agadez winter of 2023, the first thing we did was drive around all together and scope out locations. We walked up a small building that overlooked the famous Agadez mosque and said ‘Alright, we're gonna film here as the sun comes up.' Another idea was to film under a well known bridge that connects the road from Agadez to Arlit – 'Let's set up a generator and play here! The kids will love it.' Those were two examples that didn't end up happening because it was either not allowed or we overslept. That's where the creative part comes in. On our way to film at a location out in the bush, Mdou suddenly stops the car to talk to a guy walking a couple camels. They exchanged numbers. Unbeknownst to me, Mdou was plotting to get 50 camels to show up at the king of Agadez's palace where the famous Agadez mosque is. This was an idea we had discussed, but much like some of our other concepts, I just kinda said 'cool' and assumed it would fall through. On our last day together in Agadez, we showed up to the Sultan’s palace, set up, and then waited around for a few hours. Was the show gonna happen? Maybe a few hours later, 15-20 men riding camels showed up. I didn't count because I was so shocked Mdou was able to pull it off – calling this random guy we met in the desert with some camels, who then made some calls to get a bunch of Tuaregs (the youngest was probably 5 years old) to ride out from their village 3-5 hours away to be there for this special performance! Holy shit. When we started playing, Tuaregs dressed in traditional Agadez clothing armed with hand drums started dancing and drumming. There were even a couple friends of ours who showed up with some swords and performed a traditional dance together as we played. This was all totally unplanned. Tres Leches Cake with Bay Leaf Milks and Raspberry Sauce Ingredients - 250g (8.8 oz) plain flour (all-purpose flour) - 1 tsp baking powder - ½ tsp salt - 5 large eggs - 250g (8.8 oz) sugar - 120ml (4 fl oz) milk - 2 tsp vanilla extract - butter for greasing - 1 can sweetened condensed milk - 1 can evaporated milk - 150ml (5.3 fl oz) milk - 3 bay leaves - 500ml (17.6 fl oz) whipping cream - 2 tbsp icing sugar - 500g (17.6 oz) raspberries - 50g (1.8 oz) sugar - 1 cinnamon stick Method 1. Preheat the oven to 180°C (350°F). 2. In a bowl, combine the flour, baking powder, and salt. Set aside. 3. Weigh out the sugar and set it aside. Separate the eggs into yolks and whites. Whisk the egg whites, gradually adding half the sugar, until you form a meringue. In a separate bowl, whisk the egg yolks with the remaining sugar until they become pale yellow. 4. Add the 120ml of milk and vanilla extract to the yolks and whisk until combined. 5. Grease a baking dish with butter and set it aside. 6. Add the milk and egg yolk mixture to the flour mixture and mix just until there are no large dry spots. Then gently fold in the egg whites, being careful not to overmix the batter. 7. Pour the batter into the greased baking dish and spread it to the edges. Bake in the preheated oven for 30 minutes. 8. Remove the cake from the oven and place it on a wire rack to cool. 9. While the cake is cooling, add all three milks (condensed milk, evaporated milk, and the 150ml of regular milk) to a pot with the bay leaves. Heat on low to infuse for 20 minutes, then remove from heat and allow to cool. 10. In a separate pot, add the raspberries, 50g sugar, and the cinnamon stick. Cook over medium heat for 6-7 minutes, stirring often. Then pass the mixture through a sieve to remove the seeds and set the sauce aside to cool. 11. Whip the cream with the icing sugar until you have a thick whipped cream. Spread it evenly over the cake, then place the cake in the fridge for 2-3 hours to allow the cream to set. 13. Sicilian Pizza Serves: 8 Prep time: 48 hours Cook time: 30 min Ingredients - 550g (19.4 oz) 00 flour - 280g (9.9 oz) bread flour (high protein) - 25g (0.9 oz) salt - 2.5g (0.09 oz) dry active yeast - 8g (0.28 oz) sugar - 20ml (0.7 fl oz) olive oil - 600g (21.2 oz) cold water - 1 can whole plum tomatoes - ½ tbsp dried oregano - ½ bunch basil - 2 balls mozzarella - additional salt - more olive oil for cooking Method 1. Add 500g (17.6 oz) of water and the yeast to the bowl of a stand mixer with the dough hook attached. Mix for 2-3 minutes. 2. Add both flours and mix on medium speed for 5 minutes. Then cover with a tea towel and let it rest for 5 minutes. 3. Turn the mixer to high and mix for 2 minutes before adding the remaining 100g (3.5 oz) of water in 3 batches, making sure each batch is fully absorbed before adding the next. 4. Once all the water is absorbed, add the salt and olive oil, and mix for another 2 minutes or until the salt is completely dissolved. 5. Place the dough into a greased airtight container and refrigerate for 48 hours. 6. On the day of baking, grease the tray you'll be using with olive oil. A roasting dish works well, ideally something with some weight. Remove the dough from the fridge and place it on the bench. Cut it into a shape roughly the size of the dish (any extra dough can be used for flatbreads). 7. Place the dough into the oiled tray and stretch it until it almost reaches the edges. Cover with a tea towel and let it rest for 5 minutes before stretching it again until it reaches the edges. 8. Cover the dough again and allow it to prove for 1 hour or until it has nearly doubled in thickness. 9. Preheat the oven to 250°C (480°F). If you have a pizza stone or steel, place it in the oven to heat (don’t worry if you don’t have one). 10. To make the sauce, add the tinned tomatoes to a pot and crush them with your hands. Add the oregano, 3-4 torn basil leaves, and a pinch of salt. Turn the heat to medium and cook for 25 minutes, stirring often. Once cooked, leave to cool. 11. Slice the mozzarella and lay it onto a paper towel. Cover with more paper towels and place another tray on top with something to weigh it down. Leave for 20 minutes to drain excess water from the cheese. 12. Once the dough has proven, drizzle more olive oil around the outside edges and place it in the preheated oven for 12-15 minutes or until the pizza has a good colour on the top and bottom. 13. Remove the pizza from the oven and leave it to cool for 15 minutes. 14. Next, add the sliced mozzarella to the top of the pizza, followed by the tomato sauce. A lapping tool is used to polish the inside of a cylinder. It uses some kind of abrasive. The advantage is that it will produce a very good surface finish which is very round and parallel. Perfect for engine cylinders. I show how I made one and how I used it to finish the bore on my Stuart Models Number 9 Steam Engine build. Techniques include: turning between centers, taper turning, lapping, diamond CBN tool inserts, and precision sawing. My lathes are a Myford ML7 and a Myford Super 7.
