I just had a surgery where they removed eggs from my body. You know, the kind that can meet up with sperm to make a baby. How and when people are having kids is changing, but our bodies aren’t. As we get older, it can get harder to have kids when we want to. But doctors have found a way to remove human eggs, freeze them, then unfreeze them to use later. This can help you avoid the excess frustration and dismay that comes with shoddy practice and prolonged confusion. But playing the notes is not enough. Like an actor bring words to life, we breathe life into our pieces. And we can do this in an organized way, day in and day out, reliably. Great musicians can play wonderfully in any mood. They do not rely on emotions. Instead, they create music that affects our emotions. This is a trained skill, not an inborn talent. Playing classical guitar is a long-term study. It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. In het Gebed Zonder End, een steeg parallel aan de Nes en Oudezijds Voorburgwal, vind je sinds 1987 muziekcafé-restaurant Kapitein Zeppos. Naar eigen zeggen ‘het best bewaarde geheim in het oude centrum van Amsterdam' en een ‘vakantie in eigen land’. En dat snap je direct zodra je een stap in de groene steeg en kleurrijke zaak zet. Al die jaren wordt het al gerund door dezelfde familie: oprichter Bob van Buren, zijn partner Claire, hun dochter Bella (die tegenwoordig voornamelijk druk is met haar werk als DJ dus wanneer het kán hier voor de gezelligheid is) en sinds een aantal jaar ook Roos, de vriendin van Bella. Zo knapten ze de grauwe steeg op tot groene oase, kwam oud-burgemeester Ed van Thijn zelf nog een lampje ophangen, vroeg Freddy Heineken persoonlijk waarom ze geen Heineken schonken, zat onze koning Willem-Alexander – destijds nog Prins Pils – hier met zijn dispuut aan de bar en stond goede vriend en oud-burgemeester Eberhard van der Laan op het podium te zingen op één van hun chantants. Een begrip in Amsterdam als je ‘t ons vraagt, alhoewel zeker nog niet elke Amsterdammer de plek kent. Crispy Chilli Beef Ingredients - 500g beef, thinly sliced (sirloin, minute steak, or rump work well) - 2 tbsp light soy sauce - 0.5 tsp MSG - 0.5 tbsp sugar - 1 egg - 1 brown onion, sliced - 1 red capsicum (bell pepper), sliced - 3 spring onions, green parts sliced thinly - small bunch of coriander, chopped - 4 cloves garlic, finely grated - thumb-sized piece of ginger, finely grated - 3 bird’s eye chillies, finely sliced - 1 tsp sesame oil - 2 tbsp tomato ketchup - 1 tbsp dark soy sauce - 1 tbsp black vinegar - 200g cornflour (cornstarch) - 1 tsp ground white pepper - salt, to taste - oil for frying Method 1. Add the beef, light soy sauce, MSG, sugar, and egg to a bowl. Mix well and leave to marinate for 45 minutes. 2. To make the sauce, mix the ginger, garlic, chillies, sesame oil, ketchup, dark soy sauce, and black vinegar in a bowl. Set aside. 3. In another bowl, add the cornflour and season with salt and white pepper. Add the marinated beef, ensuring it is evenly coated in the cornflour. 4. Fry the beef in oil (or tallow) at 180°C (350°F) for 4-5 minutes until golden brown and crispy. Drain well and set aside. 5. In a wok over high heat, add some oil. When hot, add the onions and capsicum, and fry for 2-3 minutes until they start to soften. 6. Add the fried beef to the wok and toss briefly. Then add the sauce prepared earlier and toss well to coat. 7. Finish with the spring onion greens and coriander, toss well, and serve with steamed rice.

Why don’t we have cryosleep yet? You know, freezing people and waking them up later. Turns out, the problem is WATER. Our bodies are filled with water. But when water freezes, it expands and forms sharp crystals. If we froze you right now, those ice crystals would shred ya to bits from the inside! To freeze you without shredding you, we’d need to replace most of that water with special antifreeze - and cool it all down quickly and evenly, turning that antifreeze mixture solid in a process called “vitrification," end effectively pausing your body in time. But unfortunately, you’re the wrong shape. Right now you’d either end up full of warm toxic antifreeze, or full of frozen deadly crystals. The math just doesn't work yet.
