Chicharrón and Guacamole Ingredients - 1kg (2.2 lb) pork belly with skin on - 1 white onion - 4 cloves garlic - 20 peppercorns - 2 bay leaves - salt - 2 kg (4.4 lb) pork lard - 4 avocados - 1 jalapeño pepper, finely diced - small bunch coriander, finely sliced - 1 lime Method 1. Start by slicing the pork belly into roughly 1cm (0.4 inch) thick pieces. Place the slices in a large pot and cover with water. 2. Add half a white onion, 4 crushed garlic cloves, bay leaves, peppercorns, and a big pinch of salt to the water. Slowly simmer for 30 minutes. 3. Remove the pork from the water and place it on a wire rack to dry slightly for 10 minutes. 4. In a clean pot, add the pork lard and bring it up to temperature. Add the pork belly to the lard as it heats. Slowly cook the pork belly in the pork lard for 1 hour at 95°C (203°F). 5. After 1 hour, remove the pork belly from the lard and increase the temperature to 160-170°C (320-338°F). 6. Once the pork lard reaches the higher temperature, place the pork back into the lard for 5-6 minutes until it's golden brown and crispy. 7. Remove the chicharrón from the hot lard and place it on a wire rack, seasoning with salt immediately. (You can keep the pork lard and use it for other recipes. Cool it down and store it in your fridge until ready to use.) Guacamole 1. While the pork is cooking in the lard for the first time, prepare the guacamole. In a bowl, add the avocados, half a finely diced white onion, finely sliced coriander, the juice of a lime, and a big pinch of salt. Mix well, but keep some texture in the avocado. 2. Nationalistische bewegingen worden in rap tempo uit de grond gestampt. Het populisme geeft het leven van de kiezer weer betekenis, nu die na magere jaren het vertrouwen in de politiek is verloren. Als helden van de moderne tijd trekken populisten ten strijde tegen het kwaad: de corrupte elite, die maar niet wil luisteren, en daarnaast alles en iedereen die het in hun ogen voorzien heeft op nationale waarden. Het verhaal is glashelder: ‘ik zie, ik hoor je, en ik zal voor je vechten.’ Schrijver en journalist Casper Thomas maakt zich zorgen. Het populisme zaagt in heel Europa aan de stoelpoten van de liberale democratie: eenmaal gekozen, transformeren populistische politici haast ongemerkt in autoritaire leiders. Leiders als de Hongaarse premier Viktor Orban streven absolute macht na, die ze zo lang mogelijk willen uitoefenen. Red Lobster was America’s largest casual dining seafood chain, with almost 600 locations across the United States and Canada. Its bankruptcy was announced earlier this week. The bankruptcy declaration insinuates that the chains equity owner who was also their biggest seafood supplier might have decided that their equity stake in the business was worthless, but that they could extract some extra value from the company before it declared bankruptcy by selling them a lot of extra shrimp, leading to the uneconomical "Endless Shrimp" deal at Red Lobster. The Standard Model sets out the current framework. But many argue that all is not well in the particle physics zoo. A central prediction was the existence of supersymmetry particles, but none have been found. At the same time, huge experiments have failed to find the particles that account for dark matter and dark energy, which make up 95% of the universe. Moreover, it is not even clear what a particle is, since some have no dimension and others no mass. Yet physics is rife with proposals for new 'particles'. While there are positive spin-offs from the technology created to carry out particle experiments, has the theory itself run out of road? Would we be better describing reality as the product of quantum fields, information, or mathematics, rather than particles? Korean Rice Bowls Ingredients - 400g (14 oz) jasmine rice - 500g (1.1 lb) beef, cut into strips (ribeye recommended) - 1 tbsp sugar - 3 tsp sesame oil - 2 tbsp soy sauce - 2 cloves garlic, finely grated - 2 tbsp gochujang - 1 cucumber - 1 tbsp sesame seeds - 1 carrot, sliced into matchsticks - 200g (7 oz) mushrooms, sliced - 200g (7 oz) baby spinach - Oil for cooking - 4 eggs - Salt Method 1. Wash the rice three times and place it in a rice cooker or pot. Cook for about 25 minutes or until done. 2. While the rice is cooking, slice the beef and set it aside. In a bowl, make the marinade by mixing 1 tablespoon of sugar, 1 teaspoon of sesame oil, 2 tablespoons of soy sauce, 2 finely grated garlic cloves, and 2 tablespoons of gochujang. Mix well. 3. Marinate the beef with half of the sauce, reserving the rest for later. 4. Prepare the vegetables by slicing the carrots and cucumber. Marinate the cucumber with 1 teaspoon of sesame oil, a pinch of salt, and 1 teaspoon of sesame seeds. Mix well and set aside. 5. Heat a wok or large frying pan over high heat. Add some cooking oil and stir-fry the mushrooms with a pinch of salt for 1-2 minutes until just cooked. Remove from the wok and repeat with the carrots. Once the carrots are cooked, remove from the wok. 6. In a clean wok with a little oil, add the baby spinach along with 1 teaspoon of sesame seeds and 1 teaspoon of sesame oil. Stir-fry quickly until just tender. Remove and set aside. 7. In a clean wok, add some cooking oil and the marinated beef. Stir-fry for 3-4 minutes or until just cooked. Remove and set aside. 8. Fry the eggs in the wok until they have crispy edges and runny yolks. 9. To assemble, place the cooked rice in the bottom of a bowl. Add the marinated cucumber, cooked carrots, mushrooms, spinach, and beef on top. Drizzle with the reserved gochujang sauce, and finally, place a fried egg on top.
