Custard Cream Pancakes Ingredients: - 300ml (10 fl oz) milk (for custard) - 3 egg yolks - 60g (2 oz) caster sugar (for custard) - 50g (1.8 oz) cornflour (cornstarch) - 1 vanilla bean - 180g (6.3 oz) cake flour - 1.5g (1/4 tsp) baking powder - 1.5g (1/4 tsp) salt - 30g (1 oz) caster sugar (for batter) - 200ml (8 fl oz) milk (for batter) - 40g (1.4 oz) butter, melted and cooled - 2 whole eggs (for batter) - Spray oil for cooking Method: 1. Make the custard: Pour the milk into a saucepan and heat it over medium heat without letting it boil. 2. In a mixing bowl, whisk together the egg yolks and caster sugar until light yellow and slightly airy. Gradually whisk in the cornflour until smooth. 3. Split the vanilla bean in half lengthwise, scrape out the seeds with the back of a knife, and add the seeds to the hot milk. Whisk well. 4. Slowly pour the hot milk into the egg yolk mixture, whisking continuously to prevent curdling. Once combined, return the mixture to the saucepan. Cook over medium heat, stirring constantly, until the custard thickens. Transfer the custard to a bowl, cover with cling film (making sure it touches the surface), and refrigerate to cool completely, about 35-40 minutes. 5. Make the pancake batter: In a bowl, combine the cake flour, baking powder, salt, and caster sugar. Whisk thoroughly and make a well in the centre. 6. In another bowl, whisk together the milk, melted butter, and eggs. Pour the wet ingredients into the dry ingredients, whisking until almost smooth. Be careful not to overmix. 7. Cook the pancakes: Lightly grease a pan with spray oil and heat over medium. If using a pan with egg moulds, fill the moulds halfway with batter, using a small tool like a cocktail muddler to push the batter up the sides to form a hollow centre. For a regular pan, cook the pancakes until golden on both sides. 8. Fill each pancake with the chilled custard and top with another pancake. Dusting with icing sugar is optional, as the custard already adds a delightful sweetness. #breakfast #shortsvideo #shorts #pancakes

In this video I do something I have never done before and that is to drive an EV (BEV, battery electric vehicle) more specifically a Tesla Model 3. In the video I share my genuine and honest first impressions, my frustrations with the touchscreen, charging attempts and cornering experience. I have to say that the driving was a lot more enjoyable than I imagined. Different but not that different. Some things, mostly related to the user interface were definitely not as enjoyable and were even frustrating. The goal of the video was to share honest and genuine feelings and impressions through the eyes of a petrolhead so that other petrolheads can get a relatable second hand experience of EV driving. I also have to say that I'm ashamed the Internet almost managed to convince me into thinking that I must pick a side. Choose one over the other. Stand against EVs because I'm a petrolhead. I realized that I started to dislike these cars without ever having tried them. I started getting on a bandwagon and I think that's stupid and it does nothing other than rob me of new experiences. There's no reason to pick sides. It's just a car. We only live once so I think it's better to taste and try everything rather than argue about things. It's better to appreciate the incredible diversity of this interesting time we live in. Thanks for watching. Should we recognise all overall metaphysical accounts as speculative nonsense? Since there can be no empirical evidence for any of them, is contemporary science the only way to determine the nature of things? He is the former Managing Director of Thiel Capital in San Francisco and was formerly a Co-Founder and Principal of the Natron Group in Manhattan as well as a Visiting Research Fellow at Oxford University in the Mathematical Institute. Since completing a PhD dissertation in the Mathematics Department at Harvard in 1992 he has held research positions in Mathematics, Physics, and Economics departments (at MIT, Hebrew University, and Harvard respectively). (I already have a lot in my cupboard) = $33.60 / 8 = $4.20 per serving* Ingredients: - 1.5 kg (3.3 lbs) lamb mince - 2 brown onions, finely diced - 3 carrots, finely diced - 2 sticks of celery, finely diced - 2 corn cobs, kernels removed - 5 cloves garlic, finely diced - small bunch of rosemary, finely chopped - small bunch of thyme, finely chopped - 2 tbsp olive oil - 2 tbsp tomato paste - 12 dashes Worcestershire sauce - 3 tbsp flour - 1 litre (4 cups) chicken stock - 2 kg (4.4 lbs) potatoes, suitable for mashing (e.g., Sebago) - 100g (3.5 oz) butter - 100ml (3.5 fl oz) milk - handful of panko breadcrumbs - 30g (1 oz) Pecorino cheese, grated - salt to taste Method: 1. Heat a large heavy-based pot over medium-high heat. Add a drizzle of oil. Once hot, add one-third of the lamb mince with a pinch of salt. Cook until browned, then stir and remove from the pan. Set aside and repeat with the remaining mince. 2. Return the pan to high heat. Add onions and carrots and sauté for 2-3 minutes, stirring often. Add garlic, rosemary, thyme, and celery, and continue to stir well. Then, incorporate the tomato paste, Worcestershire sauce, and flour. Cook for another 2-3 minutes, stirring continuously. 3. Add the cooked lamb back to the pan along with the chicken stock. Season with salt, if needed, and simmer on medium-low heat for 20-30 minutes. Add the corn kernels in the last two minutes and stir through. 4. While the meat simmers, place peeled potatoes in cold, salted water and bring to a boil. Cook until fork-tender, about 25-30 minutes. Mash the potatoes using a masher or ricer, then mix in the butter and milk until well absorbed. 5. Preheat the oven to 180°C (350°F). Transfer the cooked meat mixture to an oven-safe dish approximately 30 x 25 cm (12 x 10 inches). Top with mashed potatoes, creating peaks for crispy edges. Sprinkle with Pecorino cheese and panko breadcrumbs. 6. Bake for 35-40 minutes, or until golden brown and crispy on top. Lamb Pithivier Ingredients: - 2 lamb necks - 2 tbsp olive oil - 2 carrots, cut in half - 2 shallots, peeled and halved - 2 sticks of celery, cut in half - 4 cloves of garlic, peeled - 2 sprigs of rosemary - 200 ml (6.75 fl oz) white wine - 1 litre (4 cups) chicken stock - small bunch of mint, finely chopped - 4 sheets of puff pastry - 1 egg, beaten - salt to taste Method: 1. Season the lamb necks with salt and brown on all sides in a large Dutch oven or pressure cooker. Once they have a good colour, remove from the pan and set aside. 2. Add a drizzle of olive oil to the pan. Add the halved carrots and shallots with a pinch of salt. Sauté until they start to colour, then add the celery, garlic, and rosemary. Continue to sauté for 2-3 more minutes before adding the white wine to deglaze the pan. Be cautious with additional seasoning, as the braising liquid will be reduced later and can become too salty. 3. Return the browned lamb to the pan, add the chicken stock, and cover. If using a pressure cooker, cook on high pressure for 1 hour. If using a Dutch oven, place it in an oven preheated to 160°C (320°F) and braise for 2.5-3 hours, or until the meat is tender and falls off the bone. 4. Once cooked, remove the meat and carrots from the braising liquid. Shred the meat and dice the carrots, placing them in a bowl. Place the braising liquid over high heat and reduce until thick. Season to taste. 5. Pour some of the reduced jus over the shredded meat, stirring to ensure it is moist but not wet. Allow the mixture to cool completely in the refrigerator. 6. Preheat the oven to 180°C (350°F). Take a sheet of puff pastry and cut it into a 12cm x 12cm (about 5 inches) square. Place a quarter of the lamb mixture in the centre and shape into a dome. Cover with another square of pastry, sealing the edges and trimming off any excess to create a 1cm border. 7. Brush the Pithivier with beaten egg, score the top with a decorative pattern, and make a small hole in the centre. Bake for 25-30 minutes, or until golden brown all over.

In this video, I share with you a classic essay of Japanese literature from 1200 that still speaks to us with compassion today. When the world around you is collapsing and you are gripped by fear of its demise, four responses are available to you, or at least so modern psychology says: fight, fawn, freeze, or flight. But the world has been collapsing for a long time now, and, despite our ingrained fears, we might yet recover, in the burning archive of world literature, some wiser responses to the suffering of the world. Kamo no Chōmei’s essay Hōjōki ("An Account of a Ten-Foot-Square Hut") is one such case. You may be surprised at the way this text from 800 years ago speaks to us compassionately today. Specifically, my journey trying to learn this new instrument as quickly as possible in the percussive style of Adam Ben Ezra. Adam is known for drumming on his double bass while playing the bass lines, and melody... All at the SAME TIME! If it sounds crazy, its because it is. Highly recommend you check out his videos and songs like "Flamenco", "Can't Stop Running", and "BALAGUSTO". The challenge was this: Learn how to play in this style in 12 weeks (3 months) and at the end, have a meeting with Adam to show him my progress on the instrument, and hopefully... Not get roasted by one of the biggest legends of bass their ever was. Throughout this process I spoke with double bass experts like Jason heath who showed me all about proper double bass technique: How to hold the double bass, how to pluck it, how relax when playing, and much more behind the ergonomics of upright bass. I also spoke with Scott Mulvahill, another percussive double bass legend who has pioneered his own way of drumming on the bass. Scott showed me how he conceptualizes this kind of music through a linear grid, as well as techniques behind how to slap, tap and drum on the bass. Composing music on the double bass that includes all these elements can be tough, but it was something I wanted to do in my short time with the instrument. Approaching the bass through the context of a 16th note grid really helped me to get a better understanding of how this style of music came together. Solo bass has always been a fascination of mine because of how difficult it is to pull off convincingly. I have a new found respect for jazz bass, as well as contrabass in the classical world. Ya'll make it look easy, and I'm jealous! I hope to continue this journey with the double bass even though the 3 months is now up. It was a fantastic experience.
