Lamb Machboos (Kuwait style) Ingredients - 1 brown onion, diced - olive oil - salt and freshly ground black pepper - 1 tbsp black peppercorns - 5 cloves - 6 green cardamom pods - 2 bay leaves - 1 cinnamon stick - 4 lamb shanks - 80g (about 2.8 oz) raisins - 100g (about 3.5 oz) yellow split peas - 2 red onions, diced - 1 tsp sugar - 0.5 tsp ground cloves - 0.5 tsp ground cinnamon - 800g (about 1.76 lb) basmati rice - 1 tbsp vinegar - a small pinch of saffron - 0.5 tsp ground turmeric - 0.5 tsp ground ginger - 0.5 tsp ground cumin Method 1. Heat 3 tablespoons of olive oil in a pressure cooker or large Dutch oven over medium-high heat. Add the diced brown onion with a generous pinch of salt and sauté for 2-3 minutes. Then add the cloves, green cardamom pods, bay leaves, and cinnamon stick. 2. Place the lamb shanks in the pot, season with salt, and mix well. Cover with cold water, secure the pressure cooker lid, and cook for 40 minutes on high. If using a Dutch oven, bring to a light simmer and cook the lamb shanks for 2.5-3 hours. 3. While the lamb is cooking, soak the raisins in hot water for 5-10 minutes. In a separate pot, cover the yellow split peas with water, add a pinch of salt, and simmer until tender, about 15-20 minutes. 4. In a frying pan, heat 2 tablespoons of olive oil over medium-high heat. Add the diced red onions with a generous pinch of salt and freshly ground black pepper. Sauté for 6-7 minutes until caramelised. Add the drained raisins and cooked yellow split peas. Season with ground cinnamon, ground cloves, and sugar. Mix well and set aside. 5. Place the basmati rice in a bowl with 1 tablespoon of vinegar and cover with water to soak for 20 minutes. Bloom the saffron in warm water with a few drops of lemon juice. 6. Once the lamb is almost ready, remove from the pressure cooker and place on an oven tray, reserving the lamb stock for the rice. Pour half of the saffron water evenly over the lamb shanks, then season with turmeric, ground ginger, ground cumin, and a pinch of cinnamon mixed together. Bake in a preheated oven at 200°C (392°F) for 15 minutes. 7. Drain and rinse the soaked rice. Add to the pressure cooker and cover with the reserved lamb stock, ensuring the liquid is one knuckle depth above the rice. If needed, add more water to achieve this. 8. Cook the rice in the pressure cooker on high. Once pressure builds and it starts whistling, cook for 3 minutes. Then release the steam and allow it to depressurize naturally. When safe, open the lid and pour the remaining saffron water over the rice, tossing well. 9. If you don’t know what I’m talking about, a bunch of explicit, fake images that looked like Taylor Swift went viral on X/Twitter and got millions of views before they got taken down. Despite how much people talk about political deepfakes, the VAST majority of deepfakes are for exactly what you might think. 98%! And 99% of those are of women. I've been covering this issue as a journalist for several years, and I spoke to Kristen Bell about it a few years ago. It's far past time to fix this problem. The problem is, there are also all kinds of rules about how people can use your face - for art or journalism for example. It’s had to legislate, but it’s getting more important, as AI generated video like Sora gets better. So, Congress is trying to figure out what to do about it. Here's what they're suggesting... It’s a tricky problem and sometimes it’s hard to feel optimistic. But this is how new laws get made! We’re supposed to see a need and figure it out. Chopped Italian Sandwich Ingredients - 1/4 head iceberg lettuce - 2 slices leg ham - 12 slices pepperoni - 6 slices salami - 8 cherry tomatoes - 1/4 red onion, thinly sliced - 1-2 pickled peppers - 50g (1.76 oz) Provolone cheese - 1 tsp dried oregano - 3 tbsp mayonnaise - 1 tbsp red wine vinegar - 1 tbsp olive oil - 2 sub rolls Method 1. Place the lettuce, ham, pepperoni, salami, tomatoes, red onions, pickled peppers, and Provolone cheese on your chopping board. Chop until everything is roughly the same size, approximately 1cm x 1cm (about 0.4 inches x 0.4 inches). 2. Add the oregano, mayonnaise, vinegar, and oil to the chopped ingredients and mix well. 3. Cut open the rolls and hollow out the centre. Fill them to the maximum with the chopped mixture. 4. A new blood test for Alzheimer’s is showing great early results. Here’s why this matters for everybody. Right now, the two gold standard for diagnosing Alzheimers - the most common type of dementia - are scanning your brain or testing fluid from your spine through a spinal tap, which are either expensive or invasive. And that’s a problem, because it’s contributing to the estimated 41 million cases of dementia that go undiagnosed across the globe. This new blood test would be much cheaper and simpler - a game changer. It works by looking for a protein that is a strong indicator of Alzheimer’s. In a study, it performed similarly to the spinal tap method with a reported 95% accuracy at detecting the disease. This is huge, because a lot of the treatments for Alzheimer’s rely on early detection. And with so many cases, it’s likely this could help someone you know now or in the future. In this video, we will explore how jet engines have evolved to become much more powerful and much more efficient. Now this engine is called a turbojet and by modern standards, this is very much obsolete. This right here is a turbofan, or more specifically a low by-pass turbofan, and an engine like this is nowadays most commonly found on fighter jets and other military aircraft. As you can see, even upon first glance, the engine is pretty different from our turbojet. Now the first, and most important difference is that in a turbojet, all the thrust generated by the engine comes from the exhaust stream, or the jet of expanding gasses coming out of the back. In other words, all the air that comes through the front of the engine ends up inside the core which houses all the key mechanical components of the engine. But in a turbofan, this is not the case. Not all the air ends up in the core, some of the air is bypassed around the core and never contacts the internal parts of the engine. So why would we bypass some of the air around the engine? Well to understand that we must remember that jet engines are also called reaction engines. Essentially they move incredible masses of air. This movement creates a force. And as we know for every force there is a reaction force in the opposite direction. This reaction force moves the engine and because the engine is attached to the aircraft the entire aircraft moves. This tells us that to travel faster and/or to move a larger heavier aircraft we must move greater masses of air. To move a greater mass of air we can either move more air or we can move the air faster. A turbofan engine exploits the first concept and that is to move more air. Now we have two kinds of turbofans, a high bypass and a low by-pass turbofan. When a civilian like you or me flies in a commercial aircraft we are propelled through the sky by a high by-pass turbofan. A high bypass turbofan takes the concept of moving more air to the extreme because at the very front of the engine, we will find a giant fan. This is where the name comes from, turbofan. We have a giant fan and gas turbines at the back which harness the energy of the combustion and thus power the fan. Now because the fan is so large it is capable of moving absolutely incredible amounts of air and about 80% of the thrust of the engine actually comes from the fan and only around 20% comes from the exhaust jet coming out of the back of the engine. Because most of the thrust comes from the fan it means that we don’t have to burn ridiculous amounts of fuel to move the aircraft. Modern fans are designed to be extremely efficient at cruising speeds and altitudes of commercial aircraft. The added benefit of the is that the bypassed air creates a sheath of air around the exhaust jet and this greatly reduces the noise pollution created by modern commercial aircraft. But unfortunately moving more air has its limits. You can’t make infinitely large fans because the greater the size of the fan the greater the difference in speed between the blade root and the blade tip, because the tip covers a much greater distance than the root. In other words, an overly large fan will inevitably achieve supersonic speeds at the blade tips and this leads to inadequate and inefficient operation. This is where low bypass turbofan engines like this one come in. Their bypass ratio is around 0.5 to 1 compared to the bypass ratio of commercial turbofans which is usually 9:1 and above. A bypass ratio of 9:1 tells us that for every kilogram of air going through the engine core 9 kilograms of air go around it.
