Burrito Bowl Ingredients - 100g (about 3.5 oz) black beans, soaked overnight in water in the fridge - salt, to taste - 1 small brown onion - 2 bay leaves - 8 white corn tortillas - oil for frying - 4 boneless, skinless chicken thighs - 1 tbsp ground coriander - 1 tbsp ground cumin - 1 tbsp paprika - 1 tsp chilli flakes - peanut oil for cooking - 3 corn cobs - 4 tomatoes, diced - 1 small white onion, diced - a small bunch of coriander, finely chopped - 5 limes - 2 avocados - 1 small red onion, finely diced - 800g (about 1.76 lbs) cooked rice Method 1. Drain the beans and place them in a pot. Cover with fresh water, add the brown onion (whole), bay leaves, and a big pinch of salt. Cook on medium heat until tender, about 1 hour in a normal pot or 15 minutes in a pressure cooker. Alternatively, use a tin of cooked black beans for convenience. 2. To make the tortilla chips, cut each tortilla into 6 wedges. Fry in oil at 160°C (320°F) until golden brown. Remove from the oil, drain on a tray, and season with salt immediately. Alternatively, you can use pre-made corn chips. 3. For the chicken, combine 1 tablespoon each of ground coriander, cumin, paprika, and 1 teaspoon of chilli flakes with a big pinch of salt and a couple of tablespoons of peanut oil. Coat the chicken and grill for 8-10 minutes until cooked through and nicely coloured. Let it rest for 3-4 minutes before slicing. 4. Prepare the corn buy grilling the corn cobs (husks removed) over high heat for 10-12 minutes until soft and charred. Let cool slightly, then slice the kernels off the cob. 5. To make Pico de Gallo, combine diced tomatoes, diced white onion, half of the chopped coriander, a big pinch of salt, chilli flakes (to taste), and the juice and zest of 3 limes. Mix well and set aside. 6. Prepare the guacamole by mashing the avocados with the finely diced red onion, season with salt, a pinch of chilli flakes, and mix until reaching the desired consistency. 7. Season the rice by stirring in the remaining chopped coriander, juice and zest of 1 lime, and a pinch of salt into the cooked rice. 8. To assemble your bowl, start with a base of seasoned rice. Add the cooked ingredients on top, arranging them nicely over the rice, and serve some tortilla chips on the side. Tip: For meal prepping, keep all the ingredients separate until ready to serve or pack for lunch. Medicijntekorten zijn een groot probleem. Wat is de oorzaak van het geneesmiddelentekort en welke rol speelt China? Het medicijntekort was nog nooit zo hoog als in 2023: apothekersorganisatie KNMP meldde onlangs dat 2292 keer een medicijn minstens twee weken niet beschikbaar was: een recordtekort. In 2022 – ook al een jaar met grote tekorten – was 1514 keer een geneesmiddel minstens twee weken niet beschikbaar. De gevolgen van de medicijntekorten zijn ernstig: patiënten ondervinden bijwerkingen omdat ze overgezet moeten worden op een ander medicijn, soms meerdere doseringen moeten overslaan of zelfs gedwongen zijn hun behandeling te staken. KNMP houdt ook een lijst bij van geneesmiddelen waar een tekort aan is. Het gaat onder andere om verschillende soorten antibiotica en medicijnen voor epilepsie. Het gaat dus niet goed met de beschikbaarheid van geneesmiddelen, maar wat is de oorzaak van de medicijntekorten? China is een belangrijke leverancier geworden van grondstoffen voor medicijnen. Veel grondstoffen worden daar geproduceerd vanwege lagere productiekosten en minder strenge regelgeving op het gebied van milieu. De Grondstoffen en medicijnen worden door een steeds kleinere groep fabrieken gemaakt in China en andere landen in Azië. Het productieproces van medicijnen is hierdoor kwetsbaar en niet flexibel. Eén productiefoutje in één fabriek kan bijvoorbeeld zorgen voor een wereldwijd tekort. Deskundigen maken zich al jaren zorgen over de afhankelijkheid van China. Tijdens de coronacrisis werd nog eens bevestigd hoe kwetsbaar het systeem is, toen transporten grotendeels stil kwamen te liggen. Ook kunnen geopolitieke spanningen een rol gaan spelen bij het medicijntekort. China zou de afhankelijkheid van andere landen kunnen gebruiken als machtsmidddel. Dat is al eens eerder gebeurd. Zo dreigde China in 2020 te zullen stoppen met het exporteren van medische producten naar de VS toen president Trump het coronavirus stelselmatig 'the Chinese virus' noemde. Na dit dreigement stopte Trump hiermee. Wat heeft onze overheid de afgelopen jaren eigenlijk gedaan tegen medicijntekorten? We hebben in Nederland een kleine medicijnvoorraad. Er is minder ruimte voor nodig en er wordt minder verspild, omdat medicijnen niet over datum raken. Maar door die kleine voorraad is het ook moeilijker om tekorten op te vangen. Daarom kwam oud-minister Bruno Bruins in 2019 met een plan voor een ijzeren voorraad. Die ijzeren voorraad werd pas in 2023 ingevoerd, maar heeft nog weinig effect. Groothandels lopen volgens het ministerie van Volksgezondheid nog aan tegen het praktisch uitvoerbaar maken van het aanleggen van een voorraad. Onderzoek door Jos van Dongen en Annette Schätzle. They report that the China Aerospace Science and Industry Corporation, CASIC for short, has made “a significant breakthrough” with its latest test. There are no further documents to support this supposed breakthrough. But while I don’t have much trust in the Chinese government, I have a huge lot of respect for Chinese scientists and engineers, which is what makes me think it’ll probably be mostly correct. There is a private lunar lander on its way to the moon! And if it lands, it would be the first lander made by a private company to touch down in one piece. BUUUT... three other private companies have tried and failed in the last 5 years, so the stakes are high. The lander is called “Odysseus,” and the company that makes it is “Intuitive Machines.” It was launched on a SpaceX rocket on Thursday and it’s on a 6 day mission to the moon. If a private company can land on the moon, particularly if they can do it at a lower cost than NASA can, that would blow the doors open on what we can do in space. We’ll know if it lands soon!! I’ve never used this technique before to cook steak, so I think it’s time to test it out. We’re going to cook a steak in a Matador Gas Searer from @bunnings and see how it turns out in terms of texture and flavour. Why use a gas searer? The high temperature allows you to get a nice crust on the outside of your steak while keeping an optimal internal temperature. You can cook different types and thicknesses of steak while still achieving restaurant quality steak.
