The Honjo Masamune is the most renowned and legendary samurai sword in Japanese history. Bronvermelding: Het onderzoek van het kalvertransport van Ierland naar Nederland is gedaan en op video vastgelegd door drie dierenwelzijnsorganisaties: L214, Ethical Farming Ireland en Eyes on Animals. We eten zelden kalfsvlees. Toch importeert Nederland honderdduizenden kalveren per jaar. Die import heeft een keerzijde: ernstige dierenmishandeling. Nederlanders eten bijna geen kalfsvlees, maar zo’n 1,3 kilo per persoon per jaar. In vergelijking met rundvlees (15 kilo), pluimveevlees (22 kilo) en varkensvlees (36 kilo) niet echt veel. Toch is Nederland de grootste kalfsvleesproducent van Europa. Het Nederlandse familiebedrijf VanDrie Group mag zich met een omzet van zo’n 2,8 miljard euro per jaar wereldmarktleider in de kalverindustrie noemen. Om groot te blijven, importeert VanDrie samen met andere kalverbedrijven honderdduizenden kalveren uit het buitenland. Hier worden de kalveren vetgemest, geslacht en vervolgens geëxporteerd naar landen in Midden- en Zuid-Europa en China waar het kalfsvlees wordt gezien als een delicatesse. Meer dan 95 procent van het kalfsvlees gaat naar het buitenland. Nederland heeft er eigenlijk nauwelijks wat aan. We eten nauwelijks kalfsvlees en blijven achter met de mest. Bovendien maken onderzoekers zich zorgen over de import van gevaarlijke virussen en bacteriën die samen met de kalveren naar ons land komen. En al jaren komen er misstanden tijdens de kalvertransporten aan het licht, zoals dierenmishandeling en andere overtredingen van Europese regels. De import van kalveren is al jaren omstreden. In 2019 luidden experts in Zembla al de noodklok over de dierenmishandeling en de import. Na onderzoek destijds constateerden we al dat het slecht gesteld is met het dierenwelzijn van de kalveren. Zo worden de kalveren op een ijzerarm dieet gehouden om ervoor te zorgen dat de consument blank kalfsvlees op hun bord krijgt. In de zomer van 2023 doken we opnieuw in de jaarlijks terugkerende misstanden tijdens de kalvertransporten. We kregen undercoverbeelden in handen van drie dierenwelzijnsorganisaties die het hele transport van Ierland naar Nederland hadden onderzocht en stiekem hadden vastgelegd met een camera. Op de beelden is te zien hoe de kalveren gruwelijk worden mishandeld. De kalveren worden aan hun staart getrokken, geschopt en geslagen met stokken. Dierenmishandeling is in strijd met de Europese regels, toch komt de dierenmishandeling al jaren aan het licht via dit soort beelden. Verschillende Nederlandse ministers, zoals Piet Adema en Carola Schouten, beloven ook al jaren om de dierenmishandeling aan te pakken en de sector te verbeteren. Ze pleitten zelfs voor een importstop van kalveren. Maar we ontdekken dat hun plannen keer op keer in een la belanden. Een oplossing om de sector op het gebied van dierenwelzijn te verbeteren is nog altijd niet in zicht. Dierenbeschermingsorganisatie Dier & Recht ziet dat er de afgelopen jaren niks terecht is gekomen van de politieke beloftes. Daarom stappen ze naar de rechter. Ze starten een rechtszaak tegen de VanDrie Group en eisen dat er een einde komt aan de langeafstandstransporten van de kalveren. Let op: deze video bevat heftige beelden. Kijkwijzer: 12 jaar. Haggis, Neeps and Tatties Ingredients: - 1 haggis - 3 medium-large neeps (swede), peeled and diced - 4 medium-large mashing potatoes, peeled and diced - 1 onion, finely diced - 100g (3.5 oz) butter - salt, to taste - 50ml (1.7 fl oz) whisky - 1L (2.1 pints) chicken stock - 120ml (4 fl oz) milk - 40ml (1.4 fl oz) cream - parsley, to garnish Method: 1. Place the potatoes in a pot with a big pinch of salt and cover with cold water. Bring to a boil and cook until soft. Drain well and leave in the pot uncovered to steam for 10 minutes. 2. Repeat the same process with the swede: add to a pot with a big pinch of salt, cover with cold water, bring to a boil, and cook until soft. Drain well and leave in the pot uncovered to steam for 10 minutes. 3. In a frying pan over medium heat, melt 40g (1.4 oz) butter. Once melted, add the onions with a pinch of salt. Sauté for 5-6 minutes or until translucent. Add the whisky and flambé. Once the whisky has reduced, add the chicken stock and reduce by half. Finish the sauce with the cream just before serving. 4. Heat the haggis by boiling in water for 30 minutes. 5. Once the potatoes are nice and dry, add 30g (1 oz) butter and the milk to the pan and mash. Then, add the remaining butter to the swede and also mash. 6. To serve, place some of each mash on the plate along with the haggis. Finish with the whisky cream sauce and garnish with parsley.

Een deel van de opbrengst van deze koekjes gaat namelijk naar de Stichting ‘Hart voor je stad’, die onder andere activiteiten en projecten gericht op het verbinden van de mensen in Amsterdam als doel heeft. Door de centrale locatie aan de Oudezijds Voorburgwal, kwamen Résalieke en Ineke in contact met het iets verderop gelegen Majoor Bosshardthuis, waar Majoor Alida Bosshardt vroeger daklozen, prostituees en drugsverslaafden opving. Daar ontstond het idee om een nieuw koekje uit te brengen, dat ook als doel die verbinding zal hebben: het Bosshardtje. Could we seek to avoid discrimination by not referencing physical characteristics on dating apps, and designing algorithms to avoid societal prejudices? Lángos 🫓  Ingredients: - 3 cloves garlic, finely grated - 50ml (about 1.7 fl oz) olive oil - 500g (about 1.1 lbs) flour - 7g (¼ oz) dry yeast - 8g (about ¼ oz) sugar - 12g (about ½ oz) salt - oil, for frying - sour cream, to serve - gouda cheese, to serve Method: 1. To make the garlic oil: In a jar, combine the olive oil, grated garlic, and 50ml (1.7 fl oz) water. Secure the lid and shake well. Refrigerate for 1-3 hours to infuse the flavours. 2. In a bowl, combine 350ml (about 12 fl oz) warm water with the yeast and sugar. Stir until the yeast and sugar are completely dissolved. 3. In a separate bowl, mix the flour and salt. Create a well in the center and pour in the yeast mixture. Mix thoroughly until it forms a dough. Knead for 6-8 minutes, or until smooth. Cover with a tea towel and leave to rest in a warm place for 30 minutes. 4. After resting, add the garlic oil to the dough. Using your fingers, lift and fold the dough from the bottom to evenly distribute the oil. 5. Cut the dough into 6 even balls. Turn each one in your hands to create a smooth, round ball. Place them on a plate, ready for cooking. 6. Heat the oil to 170°C (about 338°F). Take each dough ball and stretch it into a flat, round shape, making sure the edges are thicker than the middle. Carefully lay each piece into the hot oil and fry for 4-5 minutes on each side until golden brown and cooked through. Remove from the oil and place onto a rack to drain. 7.
