Beef Tallow Fudge Ingredients: - 400g (14 oz) sugar - 150ml (5 fl oz) milk - 25g (0.88 oz) cocoa powder - 25g (0.88 oz) golden syrup - 1/2 tsp salt, plus extra for garnish - 60g (2.1 oz) beef tallow Method: 1. In a pot, combine the sugar, milk, cocoa powder, golden syrup, and 1/2 tsp of salt. Cook this mixture over medium heat until it reaches 115°C (239°F). Once it reaches this temperature, remove the pot from the heat. 2. Add the beef tallow and let the mixture sit undisturbed for 10 minutes. 3. After 10 minutes, beat the mixture well until it's smooth and thickened. Then, pour it into a tray lined with parchment paper and press to the desired thickness. Sprinkle a little bit of salt over the top for garnish. 4. Allow the fudge to cool in the fridge until it sets. 5. The Mars Perseverance Rover MADE OXYGEN on Mars. It’s actually been doing it for years, but it just officially completed its mission, proving we can make oxygen reliably and long term. And that, as you might have guessed, will be crucial for any future astronaut missions. This device works by intaking some of Mars’ atmosphere, which is 96% carbon dioxide, and separating one oxygen atom from each carbon dioxide molecule through an electrochemical process. Then, it releases the remaining carbon monoxide molecule back into the atmosphere. Since landing on Mars in 2021, the device, named MOXIE, has generated enough oxygen to support a small dog for about 10 hours. It's a demonstration that this type of technology can work and NASA plans on designing a larger system. Overall, this mission was a success and I’m excited to think we’re one step closer to going to Mars. This video is part of our show Huge If True. Coxinha Ingredients: - 1 carrot, sliced - 2 yellow onions - 5 cloves of garlic, diced - salt, to taste - 1 whole small to medium chicken - 1 tbsp paprika - 1 tsp black pepper - 2 tbsp olive oil - 100g (3.5 oz) cream cheese - a small handful of parsley, finely sliced - 500ml (2 cups) milk - 650g (about 4 1/2 cups) flour - 50g (about 3 1/2 tbsp) butter - 200g (about 2 cups) bread crumbs - 2 eggs, beaten - oil for frying Method: 1. Begin by poaching the chicken. In a large pot, add 3L (about 12.7 cups) of cold water, the sliced carrot, 1 diced onion, 2 garlic cloves, the whole chicken, and a generous pinch of salt. Set the heat to medium and poach the chicken slowly for 1 hour. 2. Once the chicken is cooled, remove it from the poaching liquid (keep the liquid) and let it cool for 10 minutes before removing all the meat from the chicken. 3. In a large frying pan, heat the olive oil over medium-high heat. Add the other diced onion and remaining garlic, cooking for 3-4 minutes until the onions have softened. Then add the shredded chicken and a cup of the poaching liquid. 4. Season the chicken mixture with salt, pepper, and paprika. Stir in the cream cheese and parsley, mix well, then remove from the heat and refrigerate to cool. 5. To make the dough, combine the milk, butter, and 500ml (2 cups) of the reserved poaching liquid in a pan over medium-high heat. Once the liquid simmers and the butter melts, whisk in 600g (about 4 1/4 cups) of flour. 6. Once the flour has absorbed the liquid, transfer the dough to an oiled surface. While it's still hot, knead for 4-5 minutes or until smooth. 7. To shape the Coxinhas, start by cutting off golf ball-sized pieces of dough and rolling them into a circle. Flatten each ball into a disk, spoon 2-3 tablespoons of the chicken mixture onto it, then bring the dough edges together at the top, forming a cone shape resembling a chicken leg. 8. Set up a crumbing station: season some flour, prepare the beaten eggs, and place the bread crumbs in separate dishes. Coat each Coxinha in seasoned flour, dip in the beaten egg, and then roll in bread crumbs. 9. Fry the Coxinhas in oil (peanut or other suitable frying oil) at 170°C (338°F) for 8-9 minutes or until golden brown and hot in the center. 10. You can listen to Eat a Peach on @audible_au - start your 30-day free trial via the link in my bio #audible #samosas #familymeal #recipe #shorts Samosas Recipe Ingredients - 250g (8.8 oz) flour - 60g (2.1 oz) ghee, at room temperature - 60ml (2 fl oz) water - salt, to taste - 500g (1.1 lb) diced, cooked potatoes - 150g (5.3 oz) frozen peas - a small handful of coriander, chopped - 1 green chilli, diced - 3 cloves garlic, grated - a small piece of ginger, grated - 1 yellow onion, diced - 1 tsp coriander powder - 1 tsp garam masala - 1 tsp chilli powder - 1 tsp cumin - ½ tsp turmeric - juice of ½ a lemon - oil for frying Method 1. In a bowl, combine 250g flour and a pinch of salt. Add 60g ghee and use your fingers to rub it into the flour until you achieve a sandy consistency. Gradually add 60ml water, mixing until the dough comes together and sticks together. 2. Turn the dough out onto a clean surface and knead for 3-4 minutes, or until it becomes smooth. Place the dough back in the bowl, cover, and let it rest at room temperature for 30 minutes. 3. In a large frying pan over medium-high heat, add a bit of oil and the spices (coriander powder, garam masala, chilli powder, cumin, and turmeric). Toast for 1 minute. Add the diced onion, mix well, and cook for a further 5 minutes. Then add the diced green chilli, grated ginger, and grated garlic. Cook for another minute. 4. Add the cooked potatoes, frozen peas, and chopped coriander to the pan. Mix well. Season with salt to taste. Transfer the mixture to a tray and place in the fridge to cool completely. 5. Divide the dough into 8 equal portions. Roll each portion into a circle and cut in half to create two semicircles. Fold each semicircle in half, joining the two straight edges together and crimping along the edge. 6. Fill the open side of each semicircle with the cooled potato filling. Crimp the open edge closed securely. 7. Heat oil in a deep fryer or large pan to 170°C (338°F). Fry the samosas until golden brown, which should take about 8-10 minutes. Let them cool slightly before serving. Serve your samosas with some Cucumber Mint Raita and enjoy!
