I get asked to make this dish all the time and for good reason - the chicken is so tender and delicious! So I went and picked up a Jumbuck Paramount Spit Roaster from @bunningswarehouse to make my version of a chicken shawarma at home. Now a shawarma is usually cooked vertically but it’s still just as tasty cooking it horizontally. Check out the recipe below. Chicken Shawarma Ingredients - 1 kg (2.2 lbs) chicken thighs, skin off - 3 lemons - 1 tbsp cumin powder - 1 tbsp coriander powder - 1 tbsp smoked paprika - 1 tsp black pepper - salt to taste - 125g (4.4 oz) yoghurt - 14 cloves of garlic - 150ml (5 fl oz) peanut oil (or any neutral-flavoured oil) - 1 red onion, sliced and soaked in water - 3 tomatoes, thinly sliced - 1/4 head iceberg lettuce, thinly sliced - flatbread (e.g., Lebanese bread) Method 1. Marinate the chicken: In a bowl, combine chicken, cumin, coriander, paprika, 1 tsp salt, black pepper, yoghurt, 3 grated garlic cloves, and the juice of one lemon. Mix well. Refrigerate for 2-24 hours. 2. Cook the chicken: Light the charcoal. Skewer the marinated chicken and place it on the spit to cook. Grill until it's nicely coloured on the outside and cooked through, approximately 45 minutes. Shave off the cooked outer layer, allowing the layer underneath to get some colour before shaving more. 3. Prepare the Toum (garlic sauce): In a blender, combine the remaining garlic cloves with a pinch of salt and the juice of the remaining lemons. Blend for 1 minute. Gradually stream in the oil to emulsify into a smooth sauce. 4. Assemble and serve: Heat the flatbread over the grill. Spread some Toum on the bread, then add chicken, lettuce, tomato, and onion. The Swiss are at the forefront of the world when it comes to #referendums. Up to four times a year, they can vote "yes" or "no" on very specific issues in #Switzerland. And many are quite proud of their right of co-determination. But are referendums really that good and even better for #democracy? We took a closer look. In the video we promised additional information about the various referendums in Switzerland: There are two types: popular initiatives and referendums. Referendums can block something. As a Swiss citizen, you can initiate what’s called an optional referendum yourself if you are against a law. Basically, you need to collect up to 50,000 signatures against in 100 days, after which there is a referendum. Depending on whether a simple majority votes ‘YES’ for the law or ‘NO’, the law either comes into force or not. In contrast to referendums, popular initiatives can address new issues. As a Swiss citizen, you can submit your own proposals to amend or extend the Swiss federal constitution. For a popular initiative, you need 100,000 signatures within 18 months for it to be put to a vote. This requires a majority of the people and, in addition, a majority of the cantons. If the initiative is successful, the constitution is amended. Peruvian Ceviche Ingredients: - 1 large sweet potato, thinly sliced - 2 tbsp(30ml) olive oil - 500g (1.1 lbs) fresh white-fleshed fish (like snapper), diced into large chunks - 3 limes - salt, to taste - 1/2 red onion, thinly sliced - 1 Habanero pepper, seeds removed and finely diced - small handful of coriander (cilantro), finely chopped - small knob of ginger, finely grated - 1 tbsp (15ml) Aji Amarillo (Peruvian yellow pepper paste) or a vinegar-based hot sauce as a substitute Method: 1. Begin by roasting the sweet potato slices. Preheat your oven to 180°C (356°F). Lay the sweet potato slices on a baking tray, drizzle with olive oil, and season with salt. Roast in the oven for about 20 minutes or until cooked through. 2. In a mixing bowl, combine the diced fish with the juice of the limes and a pinch of salt. Mix well and let it sit for 5 minutes to marinate. 3. Then add the red onion, Habanero, coriander, ginger, and Aji Amarillo paste to the fish. Mix everything together thoroughly. 4. To serve, place the ceviche alongside the cooked sweet potatoes. Brussels sprouts, shredded kale and almond salad Ingredients: - 6 shallots, thinly sliced - 100g (about 3.5 oz) flaked almonds - 6 tbsp (3 fl oz) olive oil - 500g (about 1.1 lbs) Brussels sprouts, sliced very thin - ½ bunch kale, finely sliced - 2 tbsp miso - juice of 1 lemon - salt, to taste Method: 1. In a large frying pan over medium heat, toast the almonds. Once toasted, remove them from the pan and set aside. 2. In the same pan, add 2 tablespoons of olive oil and sauté the shallots with a pinch of salt until they are soft and fragrant and have some colour. 3. Place the thinly sliced Brussels sprouts and kale in ice water to wash well, then drain thoroughly. 4. To make the dressing, combine 4 tablespoons of olive oil, miso, lemon juice, and a pinch of salt in a jar. Shake well to blend the ingredients. 5. In a large bowl, add the drained Brussels sprouts, kale, half of the almonds, half of the shallots, and the dressing. Toss everything together until well mixed. 6. This can help you avoid the excess frustration and dismay that comes with shoddy practice and prolonged confusion. But playing the notes is not enough. Like an actor bring words to life, we breathe life into our pieces. And we can do this in an organized way, day in and day out, reliably. Great musicians can play wonderfully in any mood. They do not rely on emotions. Instead, they create music that affects our emotions. This is a trained skill, not an inborn talent. Playing classical guitar is a long-term study. It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. Caprese salad Ingredients - 1/2 bunch basil - 200ml (6.8 fl oz) olive oil - 4 large ripe tomatoes - 3 balls of mozzarella - balsamic vinegar - sea salt Method Even though it's not classic, I'm a big fan of basil oil instead of EVOO on a Caprese salad. Either way, it's delicious. But if you are going to use EVOO instead of basil oil, make sure you are using a good quality one. 1. To make the basil oil, simply add two big handfuls of picked basil leaves into a jar and blend with the olive oil. (Note: you can get away with just olive oil for this and not use EVOO, but by all means, if you want to go for it) 2. Once blended, pour into a small pot and bring to a light simmer for 5 minutes, pass through a coffee filter, and leave to cool. This will last about 3 weeks in the fridge. 3. Assemble the salad: slice the tomatoes and mozzarella. Alternate a slice of tomato, a slice of mozzarella, and a basil leaf, repeating until all ingredients are used. In 1972, Polaroid released an iconic product that finally realized founder Edwin Land's ultimate vision for instant, hassle-free photography: the SX-70. The first camera designed to use completely automatic integral film, the SX-70 would set the template for instant analog photography until the present day. But while the 1970s were a high water mark for Polaroid, they were also the beginning of the end, as a series of financial blunders and a rapidly changing market conspired to take down the innovative giant by the end of the millennium.
