Marmalade Glazed Ham Servings: 12 or more Preparation Time: 30 minutes Cooking Time: 1.5 hours Ingredients: - 1 ham on the bone - 1 jar of breakfast marmalade - 2 tbsp (30ml) Dijon mustard - 4 tbsp (60ml) hot honey Method: 1. Begin by removing the skin from the ham. You can do this either with a knife or by peeling it off with your fingers. 2. Score the ham in both directions, creating a diamond pattern. Be sure to cut just through the fat layer. 3. Preheat your oven to 160°C (320°F) on the fan-forced setting. 4. In a small saucepan, combine the breakfast marmalade, Dijon mustard, and hot honey. Warm the mixture over medium heat, stirring continuously, to create a homogeneous sauce. The aim here is not to boil it, but simply to blend the ingredients well. 5. Pour approximately half of the glaze over the ham, spreading it evenly. 6. Place the ham in the oven and bake for 40 minutes. Then, reapply more glaze every 10-15 minutes for another 50 minutes, totalling 1.5 hours of cooking time. 7. Pasanjeok Ingredients - 500g (1.1 lbs) beef sirloin, sliced into finger-sized strips - 3 tbsp finely chopped spring onion greens - 2 tbsp soy sauce - 1 tbsp sesame oil - 1 tbsp sugar - 4 cloves garlic, finely grated - 1 bunch spring onions, white ends kept whole, same length as the beef - 3 carrots, cut into batons (same size as the beef and onions) - 1 cup flour - 4 eggs, beaten - 3 tbsp peanut oil for frying - 2 tbsp soy sauce (for the dipping sauce) - 1 tbsp rice wine vinegar - 1 tsp toasted sesame seeds Method 1. Begin by marinating the beef. In a bowl, combine the beef, finely chopped spring onion greens, 2 tablespoons soy sauce, sesame oil, and sugar. Mix well and let it marinate. 2. Assemble the skewers using wooden sticks. Start with 1 piece of spring onion, followed by a piece of carrot, and then a piece of beef. Repeat the sequence so you have 2 pieces of each ingredient on each skewer. Set aside. 3. Prepare the dipping sauce by mixing 2 tablespoons soy sauce, 1 tablespoon rice wine vinegar, and 1 teaspoon toasted sesame seeds in a small bowl. 4. To cook the Pasanjeok, heat a large cast-iron pan over medium-high heat and add 1 tablespoon of peanut oil. Lightly season the skewers with salt, then coat them in flour, followed by dipping them into the beaten eggs. 5. Once coated in egg, place them in the hot frying pan. Fry for about 3-4 minutes on each side or until golden and cooked through. 6. Welke Amsterdammer kent ‘t niet? Eetsalon Van Dobben op de Korte Reguliersdwarsstraat is een begrip. Ook vandaag de dag staat de in 1945 opgerichte broodjeszaak nog elke dag rammetje vol. Het geheim? De verse broodjes tegen een redelijke prijs, de glazen melk, het onveranderde interieur, geen poespas en vooral ook de Amsterdamse gezelligheid. Die Amsterdamse gezelligheid is onder andere te danken aan het team dat in de zaak staat. Zo spraken wij Truus, Lydia, Gisella, Stephanie en Tessa, die stuk voor stuk jarenlang bij Van Dobben werken, sommigen zelfs al meer dan 40 jaar. Hoewel ze geen familie zijn, voelt het inmiddels wel zo. En zo voelt het ook een beetje wanneer je de zaak binnenstapt: alsof je even gezellig een broodje bij familie gaat eten. Lekker makkelijk en zonder al te veel poespas. Het publiek dat hier binnenwandelt varieert enorm. Zo komt hier naar eigen zeggen ‘van putjesschepper tot advocaat’. En dat dat klopt, weet je zeker als je hier ooit langer dan een half uur binnen bent geweest. Daarnaast komt ook menig BN’er hier. Ingredients: - 1 x Panettone, sliced into 2cm (about 0.8 inch) half moons - 2 eggs - 250ml (about 1 cup) milk - 3 tbsp brown sugar - 1/4 tsp grated nutmeg - 1 tsp cinnamon - 800g (about 1.76 lbs) fresh berries (e.g., blueberries and raspberries) - 3 tbsp caster sugar - 300ml (about 1.25 cups) whipping cream - 1 vanilla pod - 1 tbsp icing sugar - 3 tbsp unsalted butter Method: 1. In a bowl, whisk together the eggs, milk, brown sugar, nutmeg, and cinnamon until well combined. 2. In a separate bowl, mix the fresh berries with the caster sugar and set aside at room temperature for about 25 minutes to macerate. 3. In another bowl, combine the whipping cream, vanilla pod (split and seeds scraped), and icing sugar. Whisk until the mixture forms soft peaks. 4. Heat a large frying pan over medium-high heat. Melt about 1 tablespoon of butter in the pan. Dip each panettone slice into the egg mixture, ensuring both sides are well coated (but don't leave them in too long). Fry for 3-4 minutes on each side, or until golden brown. 5. Before serving, give the berry mixture a final stir, lightly mashing about a third of the berries to release their juices. 6. To plate, place a piece of the cooked panettone on a plate. Top with a generous spoonful of the berry mixture, ensuring some of the berry liquid is included, and add a dollop of the whipped cream. 7. Gingerbread Tree (recipe inspired by puddle) Ingredients: - 150g (5.3 oz) soft unsalted butter - 180g (6.3 oz) dark brown sugar - 1 egg - 150g (5.3 oz) honey - 500g (1.1 lbs) flour - 1 tsp baking powder - 1 tsp bicarbonate of soda - 3 tbsp ground ginger - 1 egg white (or water, if preferred) - 240g (8.5 oz) icing sugar Method: 1. Whisk the butter and brown sugar together until smooth. 2. Add the egg and honey, continuing to whisk. 3. Sift in the flour, baking powder, bicarbonate of soda, and ground ginger. Fold these into the wet mixture. 4. Knead the dough until smooth, then cover and refrigerate for 1 hour. 5. Preheat the oven to 180°C (356°F). 6. Roll out the dough to about 0.5cm thick. Cut out cookies using star-shaped cutters. 7. Bake the cookies for 7-10 minutes on lined baking trays. 8. Cool the cookies completely on a wire rack. 9. Mix the egg white (or water) with icing sugar to make icing. 10. Assemble the tree, starting with the largest cookie and using icing between each layer. 11.
