Two years ago, I approached the Railway Station Museum in Miami, Manitoba with an ambitious proposal: to excavate, move, and display a Nuclear Detonation and Fallout Reporting System (NDFRS) Fallout Reporting Post (FRP) on the Museum grounds to replicate the one that used to stand there in the early 1960s. To my surprise, the Museum - and the entire town - immediately jumped on board. On November 14, 2023, after more than a year of planning and obtaining permits, we finally succeeded in excavating an FRP at Moose Lake, Manitoba, and transporting it to Miami. The plan is to fully restore the shelter, modify it for easier public access, and display it with all the proper equipment it would have held if NDFRS had reached active status. This is an exciting milestone, and I can't wait to see how the rest of the project pans out! Cherry and Salted Chocolate Trifle Ingredients - 1 x salted chocolate sponge (recipe below) - cherry jam (recipe below) - chocolate custard (recipe below) - Maldon Sea Salt - 500ml (about 2 cups) cream - 1 tsp vanilla extract - 2 tbsp icing sugar - 500g (about 1.1 lbs) fresh cherries for garnish - 30g (about 1 oz) dark chocolate for garnish Method 1. To assemble the trifle, start by whipping the cream with the icing sugar and vanilla extract, then transfer the whipped cream into a piping bag. 2. In a clean, large trifle dish, start with half of the chocolate sponge. Next, add your cherry jam, and sprinkle on some Maldon Sea Salt. 3. Add chocolate custard and smooth out flat. Follow with the second half of the chocolate sponge and top with whipped cream. 4. Garnish with fresh cherries, grated dark chocolate, and a final sprinkle of Maldon Sea Salt. Salted Chocolate Sponge Ingredients - 4 large eggs - 150g (about 2/3 cup) caster sugar - 1/2 tsp Maldon sea salt - 90g (about 3/4 cup) cake flour - 25g (about 3 tbsp) cocoa powder - 1.5 tsp baking powder Method 1. Preheat the oven to 2. Whisk the eggs well, add sugar and salt, and whisk until light in colour and aerated. 3. Sift flour and cocoa powder into the egg mixture and fold through carefully. 4. Line a baking sheet with baking paper and pour in the batter. Bake for 20 minutes or until a skewer comes out clean. 5. Allow it to cool on a rack for 2 hours before use. Chocolate Custard Ingredients - 250ml (about 1 cup) milk - 300ml (about 1 1/4 cups) thickened cream - 1 vanilla bean, halved lengthways - 4 egg yolks - 10g (about 2 tsp) cornflour - 70g (about 1/3 cup) caster sugar - 100g dark chocolate Method 1. Heat milk, cream, and vanilla bean seeds in a saucepan (do not boil). 2. Whisk egg yolks, sugar, and cornflour until sugar dissolves and yolks lighten. 3. Gradually pour hot milk into yolks, then return the mixture to the pot. Cook over medium heat, stirring, until custard thickens. 4. Remove from heat, add chocolate, and stir until absorbed. 5. Cool completely in the fridge before use. Cherry Jam Ingredients - 1kg (about 2.2 lbs) frozen cherries - juice of 1 lemon - 120g (about 1/2 cup) caster sugar - 10g (about 2 tsp) cornflour Method 1. Cook cherries, sugar, and lemon juice on medium-high heat. 2. Cook for 12-15 minutes, then mix cornflour with 20ml (about 4 tsp) water and add to the jam. Cook for another 5 minutes. 3. Now both the reciprocating piston engine and the jet engine are internal combustion engines. They combust fuel within the confines of the engine. And they both do intake, compression, combustion and exhaust. in the reciprocating piston engine these events occur one after the other. The air and fuel comes in, we then compress this mixture, after that it’s combusted and then exhausted. But in the jet engine all of these intake, compression, combustion and exhaust occur constantly and simultaneously with each other. Although they seem modern, the jet engine and the piston engine actually rely on two of the most ancient mechanical devices known to man. The piston engine relies on a crankshaft and crankshafts have been used as early as the 2nd century AD in the Roman empire. Inside the piston engine the crankshaft converts the reciprocating motion of the piston into rotation which is then ultimately used to turn a propeller or the wheels of a vehicle. But the jet engine at it’s core has something even more ancient. And that something is a turbine. Now turbines are present all around us and they’re powered by all sorts of fluids. Wind in the case of wind turbines. Steam in the case of thermoelectric power plants. Water in the case of hydroelectric power plants. Exhaust gasses in the case of turbochargers present in cars and trucks. The big difference between ancient turbines like windmills and watermills and modern turbines like turbochargers or jet engines is that we have realized that we can create much more power if we increase the energy of the fluid that’s being fed into the turbine. To better understand and appreciate the Jet Engine (turbojet in this case) we will split and analyze it in segments. We begin with the intake. The two main parts of the intake are the cone and the inlet guide. The cone serves the purpose of reducing drag and helping the air to smoothly enter the engine. The inlet guide directs and evens out the air entering the engine and also serves the purpose of protecting the engine from large foreign objects. Once the air is in the engine the first thing it meets is the compressor section. As the name implies this section has the task of compressing the air. It consists of rotors and stators. Again, as the name implies the rotors rotate whereas the stators are stationary. The rotors suck in and push the air against the stators and force it into an ever smaller space. This compresses the air which increases its pressure and temperature. Or in other words it’s potential energy. As you can see the compressor section consists of multiple rotors and stators with decreasing blade size. This tells us that the air inside a jet engine is compressed in stages. The air enters the compressor section at atmospheric pressure which is 14.7 psi, by the time it exists the compressor section that air will have a pressure of around 70 psi. This is a very significant pressure increase and if we tried to achieve this amount of compression with a single rotor and stator and a dramatic reduction in space we would likely encounter compressor stall which is a disruption in the airflow that can reduce power if it’s mild or even damage the compressor if a complete disruption disruption of the airflow occurs, at that point it is referred to as a compressor surge. Compressing the air in stages and incrementally increasing it’s pressure is more efficient and it helps prevent compressor stall. This compressed air now heads towards the combustor. Here fuel is administered and mixed with air. The fuel also carries its own potential energy. The air and fuel mixture is then ignited most often using some form of sparking device. The mixture combusts which causes it to rapidly expand greatly increasing the temperature and pressure. We now have an absolutely massive amount of energy heading towards the turbine. The turbine captures or harnesses this energy which causes it to rotate at an increasing speed. Now the turbine is connected via a common shaft with the compressor wheel. This means that an increased turbine speed leads to an increased compressor speed. A faster spinning compressor sucks in ever more air which is then fed into the combustor increasing the strength of combustion which then increases the speed of the turbine. As you can see the jet engine effectively feeds itself. The faster the turbine spins the more air is sucked in and the more powerful the combustion becomes. So does this mean that there is essentially no limit to the power that a jet engine can produce? To make the dough, add the flour and salt to a bowl. Gradually add room temperature water until the dough becomes a shaggy mess. Turn it onto a floured surface and knead for 5-10 minutes until smooth, soft, and pliable. Place the dough back in the bowl, cover with a tea towel, and let it rest for 30 minutes. 2. For the filling, boil the potatoes in salted water until cooked through. Mash the potatoes using a ricer or hand masher, then add the remaining ingredients (except the ghee) and mix well. 3. Once the dough has rested, divide it into four equal pieces and roll them into tight balls. Roll each ball out into flat discs. Place an amount of potato mixture that is equal to or slightly more than the dough you started with in the centre. Bring the sides of the dough around the potato ball and close tightly. 4. Flip the ball so the seam is on the bottom and roll out until it's about the size of a small plate, trying not to break the dough or let the potato mixture escape. 5. Cheats Beef Pho Serves: 4 Prep time: 20 mins Cook time: 40 mins Ingredients - thumb-sized piece of ginger, sliced (skin on) - 2 yellow onions, cut in half - 2 cinnamon sticks - 15ml (1 tbsp) coriander seeds - 5ml (1 tsp) white peppercorns - 3 star anise - 2L (about 8.5 cups) beef stock - 1 piece of rock sugar, roughly the size of your thumb - 500g (1.1 lb) beef fillet, sliced thin against the grain - 45ml (3 tbsp) beef tallow - 30ml (2 tbsp) fish sauce (adjust to taste depending on the saltiness of the stock) - 1 packet of rice sticks, soaked in cold water for 2 to 3 hours - 200g (7 oz) bean sprouts - 1 bunch of coriander - 2 red chillies, sliced - 2 fresh limes - hoisin sauce for dipping Method 1. To make your "pho" soup, start by charring the ginger and onions over an open flame. If using electric, use a blow torch or toast in a dry pan over high heat. 2. Toast the spices in a saucepan over medium heat for 3-4 minutes until just fragrant. Then add the charred onions and ginger. 3. Next, add the beef stock along with the rock sugar. Simmer the soup for 30 minutes. In the last 5 minutes, add the beef tallow to imitate the fat beads typically found in pho. 4. Season the soup with fish sauce to taste. 5. Blanch a portion of noodles in boiling water for 2-3 minutes, drain well, then place into a hot bowl. Add the sliced beef and bean sprouts on top of the noodles. Ladle enough soup over to completely cover the noodles, ensuring it pours over the beef to slightly cook it. 6.
