Chicken Piccata Ingredients - 800g (1.76 lb) boneless, skinless chicken breasts, butterflied to create thinner pieces - 40g (1.41 oz) parmesan, finely grated - 125g (4.41 oz) flour - 1/2 tsp freshly cracked black pepper - 1¾ tsp sea salt - 60ml (2.03 fl oz) extra-virgin olive oil - 1 shallot, finely chopped - 3-4 cloves garlic, minced - 300ml (10.14 fl oz) chicken stock - zest and juice from 1 lemon - 2 tbsp capers, drained - 100g (3.53 oz) butter - flat leaf parsley, chopped - lemon slices to garnish Method 1. On a plate or shallow bowl, mix together the flour, cheese, salt, and pepper, then coat the chicken in the flour mixture well. Dust off any excess and set aside. 2. In a large frypan or shallow pot over medium-high heat, add the oil and then the floured chicken, cook for 3-4 minutes each side to get some colour on the chicken. Once you have some colour, remove from the pan and set aside. 3. Turn the pan down to medium-low and add the sliced shallot, cook for 2 minutes before adding the garlic (if the pan dries up, don't be afraid to add some more olive oil). Cook the garlic for 2 minutes before adding the stock and lemon zest and juice. 4. Let it reduce by 1/3 before you add the capers and the chicken back to the pan, followed by the butter. Stir well until the butter is incorporated into the sauce. 5. Onion bhaji Ingredients - 4 onions, thinly sliced - 1 green chilli, diced - small knob of ginger, grated - 1 tsp chilli powder - 1 tsp ground caraway - ½ tsp salt - ½ tsp turmeric - 5 tbsp chickpea flour (gram flour or besan) - oil for frying Method 1. Add the onions, chilli, ginger, spices, salt, and chickpea flour to a bowl. Then add around 4 tablespoons (¼ cup) water to the bowl and mix. If you think it's too dry, add the water 1 tablespoon at a time to the bowl and mix. You don't want a super wet batter. 2. Heat the oil to 160°C (320°F) and then roll your bhaji into golf ball sized balls and carefully drop them into the hot oil. Fry for 4-5 minutes or until golden brown and cooked through. 3. Serve with the tamarind and green chutneys. Tamarind chutney Ingredients - 1 tbsp brown sugar - 4 tbsp Tamarind puree - juice of 1/2 a lemon - 1 tsp chilli powder - 1 tsp coriander powder - 1/2 tsp salt - small piece of ginger, finely grated Method 1. Add everything to a small pot and bring to a light simmer. Once the sugar has dissolved, it's good to go. Green herb chutney Ingredients - 1 small bunch coriander roots and leaves (washed well) - 1 small bunch mint - 1 green chilli - ½ tsp salt - juice of ½ a lemon - 2 tbsp water Method 1. According to Dalio, his main interest, over the last twenty years is to lead others toward “meaningful lives” and “meaningful relationships” through the application of his principles. He has written a number of books and given a Ted Talk on this topic. Rob Copeland is a journalist at the New York Times and was previously the longtime hedge fund beat reporter at The Wall Street Journal. In his new book “The Fund” he smashes through some of the mystique built up around Ray Dalio in recent years. He argues that very little of Dalio’s success is due to his widely promoted “Principles” and can be better explained by his ability to befriend influential people and impress them with his broad knowledge of the world, his skill at getting good publicity, and his early investment success. Rob interviewed hundreds of Bridgewater employees in order to write this unauthorized biography that shows Ray Dalio in a very different light.
