Serves: 1 Prep time: 2.5 min Cook time: 2.5 min Ingredients - 1.5 tbsp peanut butter - 0.5 tbsp fish sauce - 0.5 tsp sesame oil - 0.5 tsp black vinegar - 1 tsp chilli chrisp - 1 clove garlic, finely grated - 1 spring onion, sliced thin - 1 packet udon noodles Method 1. Place a pot of water on to boil. 2. In a bowl, mix everything apart from the noodles and the green part of the spring onions. 3. Cook the noodles in the boiling water for 2 minutes before adding to the bowl with the sauce. 4. Mix well and garnish with the spring onions greens. Enjoy!

Serves: 12 as a side Prep time: 20 min Cook time: 40 min Ingredients - 1 cup flour - 1 cup milk - 1 cup eggs - pinch salt - 300g beef tallow Method 1. Mix together the flour, milk and eggs in a bowl until it's well combined. 2. Rest the batter in the fridge for at least 2 hour or overnight. 3. Place a muffin tin on a tray into a 210c (410f) oven and fill 1/3 of each cup with the tallow/fat. 4. Place back in the oven for 10-15 min until the fat just starts to smoke, carefully remove the tray from the oven and onto the bench. 5. Pour the batter into the centre of each muffin cup until it’s full then carefully place the tray back into the oven. 6. Bake for 20-25 min or until puffed up and golden brown. 7. Remove the tray from the oven carefully as sometimes the fat pools in the centre. 8. Serve with lashing of gravy with your next Sunday roast.

It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. Bijna 20 jaar geleden stampte Edson dit samen met Guillaume 'Gee' Schmidt uit de grond. Wat ooit begon als een exclusieve sneakerzaak is inmiddels een wereldbekend merk dat naast sneakers ook kleding maakt en samenwerkingen heeft met de grootste op aarde – zoals Nike. Om het succes te meten hoef je alleen maar een rondje de stad door, want je ziet overal wel Patta-shirts en tassen tegen.   Maar Patta is meer dan dat, het is een community. Zo is er naast het Patta running team onlangs ook een wielrenteam opgezet en bestaat sinds een aantal jaar de Patta Academy, waarmee kansvolle jongeren worden klaargestoomd voor het ondernemerschap.   Edson: “Heel veel mensen geven ons liefde, maar je kan niet alleen maar nemen. Je moet ook teruggeven. We willen mensen ook gewoon laten denken, als Patta zijnde. Daarom hebben we Patta Academy opgericht.”  WAXWELL – GASTHUISMOLENSTEEG 8   Door naar Edsons favoriete “platenboer” Waxwell, waar ze volgens hem een fantastische collectie hebben en hij al flink wat euro’s heeft uitgegeven.   “Het zijn gewoon staples. Daarom moeten dit soort winkels blijven bestaan. Daarom is het voor mij heel belangrijk om hier naartoe te komen. Zodat andere mensen het kunnen zien en dat ze denken hey: ik liep hier altijd langs, laat ik een keer naar binnen gaan.”  RAPHA – WOLVENSTRAAT 10  We lopen door naar de Wolvenstraat want daar zit Rapha, de hoofdsponsor van het Patta Cycling team en waarmee Patta een collectie heeft uitgebracht, die je uiteraard hier in de zaak vindt. Daarnaast is er ook koffie en staat er sport op – wielrennen natuurlijk.   In maart 2023 werd het Patta cycling team opgericht, met onder andere de hoop deze overwegend-witte sport eindelijk wat meer divers te maken. Edson: “Dat je er zegmaar een soort Amsterdam van kan maken. Van dit. Dat je veel diversiteit hebt. En dat is de kracht. Hij neemt ons mee naar Foodware, een take-away spot met een paar plekken om te zitten en waar Edson al 18 jaar komt. ‘T is van een vriend van hem, maar dat is zeker niet de enige reden dat hij hier komt: het is gewoon echt goed eten. Perfect om even te zitten maar ook ideaal om als drukke stadsbewoner een gezonde en lekkere maaltijd af te halen.   AMSTERDAM  Zoals je in de video ziet zijn Edson en Amsterdam onlosmakelijk verbonden: de liefde straalt er vanaf. Zelf zegt hij daarover: “Amsterdam betekent heel veel voor me. Ben hier geboren en getogen. Je kent heel veel plekken. Natuurlijk het centrum voornamelijk omdat ik hier heel veel kom. Nieuwe avonturen ontdekken, ‘s nachts dronken lopen van hier, naar daar. Het heeft me grootgebracht, het heeft me gemaakt tot wie we nu zijn. Amsterdam is zo mooi. We examine the significance of a kilo pohaku, or "stone mirror" -- a small volcanic stone disk used for viewing reflections -- discovered deep inside the ancient Makauwahi Cave on the island of Kaua'i. This extremely rare specimen encapsulates the great mystery of Hawaiian archaeology, which relies on reconstruction from rare stone, bone, and shell objects, and also the threats facing the historical sites and artifacts of ancient Hawaii in a time of natural disaster and rapid development. Serves: 6-8 as a side Prep time: 20min Cook time: 40min Ingredients - 1 red cabbage, cut into 8 wedges - 3 tbsp olive oil - salt to taste - 1 tbsp miso - 3 tbsp softened butter Method 1. To roast the cabbage, drizzle oil on a baking tray then place the cabbage wedges on top, drizzle more olive oil and season with salt. 2. Roast the cabbage in a 220°c over (430°F) for 35-40 minutes, you are looking for a good dark colour. 3. To make the miso butter, simply mix the miso with the softened butter. 4. Scoop the miso butter on top of your roasted cabbage and enjoy!
