Stuffed Zucchini Serves: 2 as a main Prep time: 40min Cook time: 1 hour Ingredients - 1 cup basmati rice, washed and soaked in water for 30 mins - 250g lamb mince - 1 shallot, finely diced - 50g soft butter - 0.5 tsp allspice - 0.5 tsp ground cumin - 0.5 tsp ground coriander - 1 tsp salt - fresh black pepper - 2 tbsp olive oil - zest of a lemon - small bunch parsley, finely sliced - 1 tomato, cut into 5 and seeds removed - 1 tin diced tomatoes - 3 cloves garlic - 6 zucchinis Method 1. In a large bowl, mix the lamb mince, drained and soaked rice, butter, spices, lemon zest, olive oil, parsley and season with salt and pepper. 2. Take the zucchinis and cut the tops off, then scoop out the middle with an apple corer. 3. Stuff each zucchini with the lamb and rice mix and fill the top with a piece of tomato. 4. In a large pot add the diced tomatoes with the garlic and season with salt, bring to a light simmer 5. Place the stuffed zucchini into the tomato sauce and simmer on low heat for 1 hour. 6. Remove and serve with some of the cooked tomatoes and some yogurt on top.

Are AI referees ruining sports? Or making them better? Subscribe to if you appreciate optimistic tech journalism. If you’re watching the 2023 US Open, you’re seeing automated referee calls. After years of controversy about human accuracy, tennis has used a system called Hawkeye to not only check human calls… but now to replace human referees. And this robot ref revolution isn’t just happening in tennis. It’s taking over the sports world. Soccer, basketball, baseball, they are all using machines to improve the calls being made on the field. The World Cup in particular has invested in these tools, from VAR (video assistant referee) to semi-automated offside and goal-line technology. The stakes are high. The difference between a right or wrong call can be a championship, or millions of dollars in prizes, endorsements, ticket sales. For the most part, fans like tech that makes calls more objective. HOWEVER… there is a big chunk of sports fans who would strongly disagree, who think that robot refs are ruining the game. Thing is, this tech isn’t going back in the bottle! Serves: 4 Prep time: 30min Cook time: 40min Ingredients - 2 carrots, diced - 1 stick celery, diced - 1 onion, diced - 3 cloves garlic, crushed - 2 sprigs rosemary - 1 whole chicken, cut into 8 pieces - 3 tbsp olive oil - 300ml red wine - 700g jar tomato passata - fresh parsley to garnish - crusty bread to serve Method 1. Season the chicken pieces with salt and then heat the olive oil in a large pan. Fry the chicken pieces until golden brown. 2. In the same pan, add the onions, garlic, carrots, rosemary, celery and onions and cover with a lid and cook for 5 minutes. 3. Add red wine and let it reduce for 5 minutes then add tomato passata and season with salt and pepper. 4. Cover and simmer for 30 minutes or until chicken is cooked through. 5. Serve hot with crusty bread and garnish with fresh parsley.
