Ingredients - 2x steaks of your choice, I'm using a Ebony Angus ribeye here - 2 shallots, finely diced - 1 tbsp black peppercorns - 1 tbsp pink peppercorns - salt - 1 tbsp oil - 50g butter - 100ml brandy - 250ml beef stock - 1 tbsp green peppercorns - 100ml cream - french fries to serve Method 1. Start by seasoning your steak on both sides with salt. 2. Next, you want to pound the black and pink peppercorns in a mortar and pestle. I like to leave them nice and coarse. 3. Press the ground peppercorns onto one side of the raw steak. 4. In a cast iron skillet over medium-high heat, drizzle with some oil and once it just starts to smoke, add your steaks to the pan with the peppercorn crust side facing up. 5. Now, unlike other steaks where I flip them regularly, with this method I only like to flip them once so you can keep the peppercorn crust intact as much as possible. 6. Once you have a good crust on the bottom side, flip onto the peppercorn side and continue to cook for 2-3 minutes. Then, add the butter to your pan and baste until your desired temperature. 7. Once the steaks are cooked to your liking, remove from the pan and place onto a wire rack to rest. 8. Turn the heat down to medium-low, add the shallots to the pan and sauté for 1-2 minutes. 9. Now deglaze your plan with the brandy, before adding the beef stock and green peppercorns. 10. Reduce the beef stock by one third, then finish the sauce with your heavy cream. 11. Serve your peppercorn sauce over your steak next to a mountain of french fries to soak up all that deliciousness. Enjoy!

Ingredients - 2 eggplants, diced large - 1 red pepper, diced - 1 onion, diced - 2 sticks celery, diced - 2 tomatoes, seeds removed and diced - 20(ish) sicilian olives, pips removed and torn in half - 1 small handful capers, rinsed - 4 tbsp olive oil - 2 tbsp red wine vinegar - 2 tsp tomato paste - 1/4 cup toasted pine nuts - salt Method 1. Start by tossing the eggplant in a good pinch of salt and leaving it in a colander for 20 minutes to draw some of the moisture out. 2. In a large fry pan over medium-high heat, add some oil and cook the eggplant in batches so you don’t overcrowd the pan. Cook until you have nice colour on all sides, remove and set aside. 3. Next, add the red pepper to the pan and cook for 2-3 minutes before adding the tomatoes. Cook for a further 3 minutes before adding the red wine vinegar. Once the vinegar has almost evaporated, remove the peppers and tomatoes and set aside with the eggplant. 4. Add the onion and celery to the pan and saute for 3 minutes before adding the rest of the cooked veg back to the pan along with the tomato paste. 5. Mix well, then add the capers, olives and pine nuts before tossing one last time. 6. Serve with some crusty bread and grilled fish if you wish.

Are mystical type, or 'metaphysical experiences' induced by psychedelics 'real,' or are they hallucinations? This question is now becoming urgent in psychiatry as psychedelic therapy is worldwide gaining acceptance as a potent way to improve mental health, from depression and anxiety to ADHD and autism. From a physicalist perspective, this raises an ethical dilemma: what if patients ascribe positive outcomes to a change in metaphysical beliefs? For instance, that after a psychedelic trip they become convinced that there is life after death, or a mind at large? And what if—as studies show—exactly this metaphysical shift makes them feel better? Did the psychedelic therapist then provide a 'comforting delusion' to cure patients? As Jussi Jylkkä, PhD, argues, solving the 'comforting delusion objection' from a physicalist framework is incoherent. In a video essay style, Hans Busstra tries to comprehend the current debate and, by sharing Jylkkä's insights, to serve an 'idealist dish' on the metaphysical menu for interpreting the psychedelic experience. The core idea set forth is: psychedelics induce a 'model collapse' and, when argued consequently, this undermines a physicalist metaphysics. Ingredients - 1 packet rice cake for topokki, soaked in cold water for 30 mins - 3 spring onion, cut into 3cm pieces - 300g fish cakes, cut into triangles - 4 hard boiled eggs - 2 tbsp gochujang - 2 tbsp corn syrup (or glucose) - 1 tbsp sugar - 2 tbsp fine gochugaru - 1 tsp black pepper - 1L beef stock Method 1. In a small bowl, mix the gochujang, corn syrup, sugar, gochugaru and black pepper into a paste. 2. In a large frypan, add the rice cakes, onions, eggs and fish cakes. 3. Next, add the red paste and beef stock and turn the heat on to medium. 4. Stir well, mixing frequently over the heat until the sauce thickens and it sticks to the rice cakes well. 5. Serve and enjoy!

Dumplings are the perfect sharing food AND you can prep them ahead of time, so they make a great option for friends and family events. Here are three recipes to impress your mates - Crab and Pork Soup Dumplings, Pork and Prawn (shrimp) Siu Mai and a not-so-traditional Pumpkin and Miso Potsticker. Enjoy! Pork and Prawn (shrimp) Siu Mai - 500g pork mince - 200g prawn meat diced - 1 tbsp minced ginger - 0.5 tsp MSG - 0.5 tsp ground white pepper - 1 tsp corn flour - 1 tsp sugar - 1 tbsp Chinese cooking wine - 1.5 tbsp soy sauce - 1 tsp sesame oil - 1 packet of wonton wrappers - orange fish roe Method 1. Mix all the filling ingredients together except the wonton wrappers and fish roe. 2. Fill the wonton wrappers with your mix and wrap the sides up leaving the top open to get the Siu Mai shape (shown in video). 3. Steam for 8 minutes and then garnish with the orange fish roe. Pork and Crab soup dumplings Xiao Long Bao Soup - 2 pig trotters - 2kg pork bones - 2kg chicken wings - 2 spring onions whites - thumb size piece ginger, sliced - 3 tbsp soy sauce Dumplings - 500g pork mince - 170g picked crab meat - 1 spring onion, finely diced - 0.5 tsp MSG - 0.5 tsp ground white pepper - 0.5 tsp corn flour - 1 tsp sugar - 1 tbsp Chinese cooking wine - 1.5 tbsp soy sauce - 0.5 tsp sesame oil - 1 cup of diced pork soup - 1 packet of round dumpling wrappers Method 1. To make the soup, add the pig trotters and pork bones to a pot. Cover with water and bring to a simmer. After 10 minutes, drain and rinse the bones before placing them back into a pot and covering them with water again. Bring back to a low simmer for 2.5 hours and then add the ginger and spring onions. 2. Then in a separate pot, add the chicken wings, cover with water and bring to a simmer for 10 minutes. Drain and rinse the chicken wings, then add them to the larger pot with the pork bones. 3. Simmer this lightly for another 3 hours. 4. Once it's cooked, pass it through a fine sieve and pour it into an oven tray, season with the soy sauce and let it cool in the fridge overnight. Dumplings 1. Add all the ingredients for the dumplings, apart from the jellied soup, to a bowl and mix well. 2. Once mixed, lightly store in the diced jelly soup. 3. Roll the dumplings and then steam over boiling water for 9 minutes. Pumpkin and Miso Potsticker - 1/2 butternut pumpkin, diced - 1 tbsp miso - 1 tbsp saki - 1 tbsp soy sauce (for pumpkin) - Oil for the roasting tray - 3 tbsp pumpkin seeds - 1 bunch chives, sliced (not too fine) - 0.5 tsp ground white pepper - 1 tbsp soy sauce (for mix) - 1 tsp sesame oil (or pumpkin seed oil) - 0.5 tsp Shichimi Togarashi - 1 packet gyoza wrappers Method 1. Turn the oven on to 180c. In a small bowl, mix the miso, saki and 1 tbsp soy sauce. 2. Dress the pumpkin in the miso mix and place it onto an oven tray and drizzle with oil. 3. Roast for 20-25 minutes or until the pumpkin is soft, then let it cool for 15 minutes. 4. Add the cooked pumpkin to a bowl along with the other seasonings and spices and mix well. 5. Fill the gyoza wrappers and fold them (shown in video). Store in the fridge uncovered until you are ready to cook them. 6. To cook the potstickers, place a pan over medium-high heat and add some oil to the pan (I used peanut) place the potstickers in the pan and cook until golden brown on the bottom. 7. Cover with a lid and then lift the corner and carefully pour in about 2-3 tablespoons of water and quickly place the lid back on. 8. Steam for 4-5 minutes, then remove the lid and you're good to go!
