Ingredients - 1 kg minced beef, 80/20 lean to fat. I like to use beef rib meat but any beef will work, just make sure it has the 80/20 ratio (if it doesn’t have enough fat, you can add more to it) - 70g bread crumbs - 200ml milk - 50g grated parmesan - 1.5 tsp salt - fresh ground black pepper - 2 tbsp finely cut parsley Sauce - 700g jar passata sauce - 6 cloves garlic crushed - small bunch basil - salt to taste - spaghetti and parmesan to serve Method 1. Place the bread crumbs, milk, salt and pepper into the mixer and turn on low until all the bread crumbs have soaked up the milk. 2. Next, add the mince and mix for 2-3 minutes using the paddle attachment. Then add the grated cheese and mix again until it’s evenly dispersed. 3. Line an oven tray with paper and drizzle with olive oil. Roll the meatballs to the size you desire, place them on the tray and drizzle with more olive oil. 4. Place into a 200c oven for 15 minutes. 5. While they are cooking, heat a large pan and pour in some olive oil and garlic. Once fragrant, add the tomato passata and 1/2 of the basil. Simmer for 5 minutes before adding the meatballs to the sauce followed by the pasta. 6. Garnish with basil and more parmesan. 7. Enjoy!

I really hope that Freaky Eaters was fake... Freaky Eaters is a show that "helps" to solve people's strange eating behaviour. The show only lasted two seasons, and I think I know why. I'm not sure if the entire show is fake, or if they really only cared about the TV ratings, but some of their "therapy" techniques are dubious. Ingredients - 255g flour - 170g eggs Method 1. Mix the flour and eggs in the bowl lift mixer until a dough forms using the paddle attachment. 2. Knead the dough for a few minutes using the dough hook until it becomes smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes. 3. Using KitchenAid’s pasta attachment, roll out your pasta a few times starting at the thickest setting and drop it down by one setting each time until you get to number 3. 4. Then change to the spaghetti roller attachment and feed your dough through it. 5. Once it’s cut, dust it lightly in flour and store it in the fridge uncovered until you’re ready to cook it.

Like an actor bring words to life, we breathe life into our pieces. And we can do this in an organized way, day in and day out, reliably. Great musicians can play wonderfully in any mood. They do not rely on emotions. Instead, they create music that affects our emotions. This is a trained skill, not an inborn talent. Playing classical guitar is a long-term study. It's something we do in our homes as part of our days. We play for ourselves, for the quality it adds to life. We may enjoy playing guitar for others, but most of the time we are alone with our work. There are methods and formulas for great practice. We can use our time well so that see more progress. We can fix the problems and erase the mistakes. And we can enjoy conquering the plentiful challenges that classical guitar music offers. If you plan to play classical guitar for any length of time, it is worth it to get help. Ingredients - 4 lamb shanks - 100ml extra virgin olive oil - 2 tomatoes, chopped - 2 sprigs rosemary - 1 head garlic, halved - 1 large onion, chopped - 1 large carrot, chopped - 1 fennel bulb, tops only, chopped (I roast the bottom for a garnish) - 250ml red wine - 1L beef stock - 1 bay leaf - salt to taste - flat leaf parsley - 1 tbsp cornflour to thicken the sauce - mash to serve Method 1. Preheat the oven to 150°C. 2. Heat oil in a large frying pan over medium-high heat. Season the lamb shanks then cook until browned on all sides. Remove from the pan and set aside. 3. Add onion and carrot to the same pan and cook until vegetables are developing colour. Remove from the pan and add the rest of the veg followed by the red wine and cook until it has reduced by half. 4. Return lamb shanks to the pan, add beef stock and bay leaf. Bring to a boil. 5. Transfer everything to an ovenproof casserole dish. Cover and bake in a preheated oven for 3 hours or until the lamb shanks are tender. 6. Once cooked, let the shanks rest in the liquid for 20 minutes before removing and setting aside. 7. Pass the cooking liquid through a sieve and reduce until the salt levels are spot on. Then thicken the sauce by dissolving the corn flour in a small amount of water and whisking it into the sauce. Bring back to a simmer and cook for 5 minutes. 8. When ready to serve, simply pop the shanks back into a 180°C oven for 8-10 minutes or until piping hot. 9. Serve on mash potato and garnish with some roasted fennel and parsley. 10. Enjoy!
